The fillet is the best I’ve ever had. The drinks are great and the service is good. My only complaint is the noise level. Two out of the three times that we have been we basically had to yell at each other just so we could hear ourselves talk. Wasn’t a dealbreaker though everything else made up for it.

I've been to Evolution a few times. I really want to love this place but I consistently feel like the food they deliver just doesn't match up with the price point. For two mixed drinks, a shrimp cocktail, and two lobster rolls came to $147 before tip. The shrimp cocktail (6 shrimp) was VERY fishy and definitely not fresh. The lobster rolls were good but theres many places around that offer better lobster rolls at lower prices. Service was excellent! Our server Allison was very attentive. There was a minor hiccup with being served a dirty bottle of water that had things floating in it but another bottle of water was promptly provided. I'll probably go again for drinks and an app but skip on dinner.

We thoroughly enjoyed our dinner from beginning to end. We decided to try evolution as it was new and also because of the proximity to the palace theater. The first thing that separates this restaurant is the ambience. This feels like a Boston or New York-esque style ambience. We were greeted quickly and shown to our table. I think they had a nice range of options in their menus. We decided to try the short ribs poutine for an appetizer. This was by far one of the best appetizers we have had in a very long time. The gravy and the curds very much complemented each other without overpowering. My boyfriend got a glass of red wine and I got the Paloma. The Paloma was perfectly mixed very refreshing. For appetizers I got the Sunday chicken and my boyfriend got the fillet. Both proteins were cooked to perfection. The chicken skin had a nice crisp to it and brussels sprouts and carrots were great. The six hour potatoes were outstanding. I asked about “by six hours “, it’s a low slow, cook to break down the starch and made with clarified butter. The consistency was like no other. We were so stuffed we couldn’t have dessert, but the options looked wonderful. The design of the restaurant was well sought out. It was warm and elegant wherever you looked. The bathrooms were clean and modern in vibe. I also observed what seem to be a private enclosed dining room that seated up to a table of 10. Almost like it would be a chef’s special dinner room. All in all we are extremely impressed. Money very well spent. And we will definitely return.

We had Oysters and Short rib poutine for appys. We both had the Filet with 6 hr mashed potatoes/asparagus. Those potatoes are to die for!! Skipped dessert due to just too full! Loved the ambiance where we were sat away from the bar. We will be back!

Second time in, and the food and service were as outstanding as the first time! We sat at the bar this time around, so I think that’s the key to better cocktails. That was my only complaint the first time in because they were packed with ice and no booze. This time sitting at the bar, they were 100% better. All in all a great night!

We love going to Evolution. This place never disappoints! We ordered the gnocchi and the beef rib entrees. They were both outstanding. The gnocchi was the best gnocchi I have ever had. Definitely check this place out!

Tried Evolution for the first time. The restaurant is beautiful. The food is unique but good. I didn’t have any drinks, but they also looked delicious! I can’t stop thinking about the charcuterie board!!
