Estuary at the Conrad DC
I expected Estuary to just be like every other high end restaurant in DC but it was truly unique from the menu to the service. Our waitstaff, Zoe, was outstanding with her service and recommendations. She mastered the fine art of refined service while putting you at ease. Truly one of a kind. And the food! Everything we had was outstanding (ceviche, crab roll, cod, ribeye, several desserts,etc) and served so artfully. I would highly recommend this restaurant as a true food experience that anyone would enjoy. We will be telling all of our friends.
Estuary was beautiful. From the moment you walk in the ambiance is magnetic. Our waiter was very kind, though service was very slow. Food was good, but overpriced. The presentation was fun.

The food was very good and the service staff did a good job. It seems though the service staff is still in training because we saw a few hiccups as we were settling at our table but things got smother for the rest of the night. We were celebrating my wife’s birthday and that’s what I noted when I made the reservation. The restaurant brought us a mini cake and candle which was very nice but I was surprised to see the $2 charge on the bill. Not that it’s huge amount but it was something that was not communicated with me in advance and frankly doesn’t seem to be a smart business move. I have been to hundreds of restaurants and have celebrated many birthdays, anniversaries, and other occasions but cannot remember being charged extra for those. As I said the amount is so small that doesn’t make me poor or generate much revenue for the restaurant; it’s just not smart as it leaves a bad taste (no pun intended)!
Beautiful restaurant, impeccable service, delicious food, met every expectation!
The restaurant is beautiful. We were there for brunch on Sunday. Our waiter was very pleasant and helpful. Three of us ordered croque madam, and my husband ordered the estuary burger with no sauce. Our waiter inadvertently ordered 4 croque madams and no burger. He did bring my husband some pastries while he was getting the burger. Unfortunately it came with sauce because it was a hurried last minute thing. It is understandable to make errors and my husband said the burger was ok, but he doesn't like sauce so there it is. Our croque madams were good though. It was disappointing there was hardly any fish or seafood on the brunch menu! This is "estuary" so not much of anything reminiscent of an estuary or the bay or the sea. The our first visit this was not particularly memorable.
I would highly recommend this restaurant. The food was beyond delicious and our server was wonderful!
I plan to visit again as soon as I can.
This had to be the worst dining experience in a long time. It seems to me the brother Voltaggio team are more concerned with making money than executing good quality food. They seem to lack leadership in the front and back of the house. We were highly disappointed.

Beautiful room with great service. We went for lunch because Estuary is supposed to focus on seafood from the Chesapeake Bay. On the entrée side of the menu, the only seafood offering was salmon, hardly a local specialty. The other offerings were things like chicken, hamburger and pizza. Total disappointment. I made a meal out of appetizers. The whitefish Milanese and the crab roll were wonderful. The calamari was disappointing: too much crust and too little calamari and a very small portion. Cookies and cream for dessert was wonderful, though we weren't crazy about the rocks. I have looked at the dinner menu and it had a lot more seafood options on the appetizer list but only a second fish for a main course. This is a pair of great chefs with a wonderful concept that may have been lost in an effort to serve its hotel guests. The restaurant is new; I hope they will rethink this.
We were greeted by friendly hosts. The restaurant is beautiful with an open kitchen. First off we had a few small plates to share. The crab roll was my friends favorite but I personally loved the warm corn bread with the ham. Also the fish sticks. For the main I got the cod which was to die for. And my friend got the lamb which was unique and tasty. And yes we saved room for desserts of course. Cookies and cream and the cheesecake was phenomenal. Service was spot on as well. Would highly recommend and will be back soon!!!
Amazing all around. You are missing out if you have not eaten here yet. There’s something for everyone and service is impeccable, they did not miss a beat. Hilton should be so proud of themselves for adding this gorgeous property to their portfolio
Very creative cuisine at reasonable prices. Some dishes like the avocado confit are standouts and others are very good. Feedback for the chef: dishes tend to be saltier than necessary and it would be great to have a bread slice or two that could be used for dipping in the abundant oil of the avocado confit salad which was lovely. Also the cuttlefish "noodles" could be a standalone dish as they outshined the cod they were served with which was a bit tasteless.
Already a Top 10 dining experience in DC! Creative dishes. Try the delicious ceviche and the cod main course. Spacious, elegant space with matching professional, friendly service.
Truly fabulous, modern, chic environment in both The Conrad Hotel and Estuary restaurant makes for an exciting start. Was warmly greeted by numerous staff as I made my way to the 3rd floor, where the restaurant affords beautiful city views, and treated like a Birthday VIP at the restaurant. The food was inventive and tasty, particularly the squid ink masa coated calamari and lilac colored birthday carrot cake. Never had better!! A special occasion experience that warrants making every day a special day. Can't wait to return soon.
This was truly a lovely dining experience. Service was so friendly, knowledgeable, and impeccable. It really felt special. I highly recommend getting seafood and any fish here over the vegan and meat options. Remember to get dessert!!
Food was amazing! Handled food allergies very well. Knowledgeable wine service. Gorgeous setting. Challenges moving from bar to restaurant.
Wood plank salmon was very bland. Charred broccoli was only the stem - no florets. Risotto was very mushy. Black squid ink calamari was too different a texture and taste. Shrimp cocktail was very good.
Lovley restaurant with amazing food. Exquisite attention to detail. Service is working out the kinks, but for a new restaurant it shouldn't be missed.
What a treat! It's a very special restaurant--the food is adventurous, the service is attentive, and the ambiance is warm and friendly (not at all stuffy). I'm sure it will only get better.
New restaurant in the Conrad. Arrive about 10 minutes early and was immediately seated. Waitress had too many tables to handle and had a significant delay in getting drinks. Other servers stopping by to take order, so there was no communication between the staff. Once food was ordered everything went well until it was time to pay bill which too almost 20 minutes. Food tasted great and good recommendation from our server. Unique experience thats worth allowing them to figure out staffing. I will go back when in DC but not soon.
Wow. The Voltagios’ new restaurant Estuary is in the new Conrad Hotel at City Center. The hotel is eye-popping, the restaurant is also gorgeous, the food is so beautifully prepared, and every bite is a work of art. Unbelievable experience, can’t wait to go back.
Wow! The food was fantastic- creative, well-presented and delicious. The service was spot-on for most of the meal. The price was very reasonable from A to Z.
The food was creative and clever, but, at the same time, our table of four didn’t have any items that we would crave having again. The food tasted good, but it wasn’t as great as we expected. The actual restaurant is beautiful and the service was good, but there are a lot of other restaurants that are better.

The restaurant is gorgeous during the day (breakfast and lunch) but at night, especially if seated in the back room, it loses its beauty. A lighting expert needs to be brought in because the lighting is too white and too bright. It makes the place feel cold and sterile. Additionally, a flower and candle in the table could help.
As for the food, it’s far too fussy! I think they are trying too hard. Just make risotto why does it have to be sunflower risotto? The octopus was incredibly tender but the beef carpaccio was flavorless and the salmon uninspiring. Furthermore, the temperature of the red wine was insanely cold and it never warmed up.
For my money, I’ll head to the steakhouse at the Four Seasons.
Food was excellent, service pretty good but our waitress forgot about us for a little bit after we placed our order.
Also needs to be a little easier to find the hostess stand when you get off the elevators, etc....a little more signage would go a long way.
Enjoyed our dinner with excellent service - thoughtful presentation and flavors and ambiance was excellent for conversations without loud and distracting music.
I've been following the Voltaggios' for years now and having the chance to experience their joint venture was just delightful. Great service, and while not every dish stunned on every level, man was I thrilled to be there. Worth your time, absolutely.

The dishes were creative and the food was really, really good. Try the Surryano ham and cornbread.
Restaurant is small, so you have to call 1 month in advance to get a table for a party of 5. Tuna tartare was a little salty but the bread with the ricotta is beyond amazing. The cod was pretty good but they need to add more desserts to the menu.
I had the salmon and I honestly was not all that impressed . . . avocado salad was pretty good but not amazing either.

I loved this experience. The food was simply excellent. The decor was inviting and warm but modern and reflective of the DC history and charm. The service was equally as good - no "new restaurant" kinks. They are well staffed and everyone was attentive, but not overly. The first two courses came quickly and it made us a little nervous, but service slowed to a perfect pace after that. A great night out, great location, love seeing City Center from the third story. Fun evening on the town. Will certainly be back.
We ate at the restaurant the evening of April 27. The service was outstanding; the staff was one of the most professional we have encountered in a long time. We were well attended from the moment we sat down until the time we left; though the food servers describing each dish each time got a little tiresome.
For all the raving about the chef being a finalist on Top Chef, I didn't think the food was that special. We did think it was overpriced with small portions. The menu selection was surprisingly limited. We had the Maryland Crab roll, which was very good - we should have ordered two. The mozz pretending to be a tomato, while creative, wasn't that tasty. We both had the salmon, two small slices I thought were over salted without much other flavor.
We've eaten at other high end restaurants with much less fanfare with better selections and value.
Top notch service, fantastic amuse to open the experience, appetizers, entrees, and dessert were all excellent. Can’t wait to go back.

The Estuary was nothing short of incredible. The food was fun, innovative and delicious. The restaurant itself is beautiful - floor to ceiling windows with great views of the city, a large open kitchen so you can watch the chefs prepare food, comfortable seating (not too crowded with tables), and simplistic table decor.
For dinner, my date and I started with the Maryland Crab Roll - THIS IS A MUST-HAVE!! I could have eaten three of these alone they were so delicious. Pure crab, lightly dressed with a perfect amount of spice on an incredible, freshly toasted brioche roll. For my entree, I had the Cedar Plank Salmon that was melt-in-your-mouth tender. Along side the salmon came a sunflower seed risotto that was so creative and unbelievably delicious. My date had the Hanger Steak, which came with a dark, rich sauce along side - absolutely amazing. For dessert we split the Cookies & Cream, which was thick, creamy dark chocolate pudding with creme fraiche and a dark chocolate cookie. All of the food was presented beautifully. The portions were perfect - we were able to enjoy our meal without feeling overly stuffed.
The staff were all very knowledgeable of both the food and drink menu. Each and every waiter, hostess, cook and food-runner we came in contact with were truly professional.
I highly recommend the Estuary for a great date spot. We will definitely be returning!
Very happy with our evening. Our waiter Chris was top-notch, A+. Cocktails were not what we were hoping, but no trouble having them taken off the bill. Food was great. Crab roll to hanger steak, it was all great. Wine list has same deals to be sure. Can’t believe this is a hotel restaurant. Will for sure go back!
