Our team at Dark Roux. led by Chef Ryan Trahan, General Manager Aaron Brinkman, and Mixologist Paige Tait strives to provide its patrons with creative, simple southern foods and beverages that are carefully crafted and thoughtfully presented in a modern Acadian style setting. We draw inspiration from classic European/French traditions and refinement, Southern culture, American ingenuity, and the vast bounty that Louisiana has to offer.
