The food was amazing. Amazing. We had coconut waffles, omelette, hash browns, and a beet kale quinoa salad.
Drinks were so so. The reaper was undrinkable so I sent it back for a bloody Mary. It was ok but not great.
Service was horrifically slow. It took us a long time to get waited on and then it took a long time to get coffee and we had to ask for refills, which of course took a long time. We also saw a table come in and be told there was a 20 minute wait. The table they were eventually seated at was open the entire time. Maybe they were down on weight staff and were staggering tables.
Sitting on the patio by the ocean is so incredibly beautiful and the food was so good we would definitely go back. Just don't be in a hurry!
We chose to sit outside. Initially, our waitress had other tables outside, but we quickly became her only table outside and the rest were inside. . She basically forgot we were there. We had eaten our appetizer and sat there for 15 minutes before she came back for us to order our meal. Someone else brought our food 30 minutes later and we had to ask him for a bread basket. The next time we saw her was when we got the check. Not what you’d expect from such an expensive restaurant.
Food is fabulous. Service staff management is lacking during the pandemic. They could do MUCH better setting tables attractively and delivering food hot. The pandemic is NO EXCUSE for these details.
Breakfast early Sun morning in Jan 2021 was very good. Beautiful view. Easy parking. Food great. Service was slow and marginal. Server looked like she slept in her clothes and rolled out of bed. Surprisingly for this upscale beach resort. Restaurant service at Coste resort nearby is much better but food at Cobalt is superior. I would come back.

The staff did a nice job. We ate outside thus the noise level was low and like the location and that they have valet parking. Also they didl stamp my parking ticket at lunch. Definitely will be back for Valentines Day.

Hidden gem in Vero Beach, Great dinner with my husband and friend of ours to celebrate 2021. Server, Johnathan, was attentive but not intrusive. Calamari and oysters for appetizers, salmon and seafood medley for dinners. Cooked perfectly to our tastes. Will return.

Price Fix for New Year’s was overpriced and choices on menu were beefless. Cocktails were outstanding. Starters very good. Salads very good. Main dish lacked wow factor and dessert was substandard.
It was New Years Eve and we did not know that they were just offering an Prixe Fixe.
It was $165/person. You had to choose one item in each catargory - appetizer, salads, soup, a main entree. The dessert was predetermined. The choices were rather eclectic - certainly not a menu that was of universal appeal. The service was good as well as the atmosphere but the food left me cold.

Having eaten at Cobalt many times as a single or with my wife, we were pleased with food quality, service, and especially ambiance....BUT not tonight! We started with a great mixed green salad, but things went downhill quickly thereafter. Not only was service s.l.o.w, but medium rare filets came out medium. We both were hungry and chose not to send the steaks back. Chefs should know that medium rare means medium rare. It's my impression that either the steaks were overcooked or the food runner was slow to bring the food to our table. Did I say slow earlier...the order for a second glass of wine came as I was finishing my steak. While we saw staff running throughout the evening, it's my impression that Management did not staff appropriately for the beginning of season--either they were short staffed or had the wrong servers...will be difficult to come back during season...

We enjoyed the Christmas brunch food, but I hate to say the service was terrible. The server admitted he forgot our drink orders and he disappeared for long periods during our meal. Otherwise, the food was ok — just ok. We were told upon being seated (1:00 in the afternoon) that they had run out of quail, and there was no other fowl (such as turkey) on the menu. After our main course (snapper en papillot for me, apple hoecakes for my husband), the server said dessert was not included in the prix fixe brunch because we did not order the egg course. Honestly, I don’t want to have to argue with a server to get dessert. Frankly the poor service ruined our experience. I will think twice before booking there again for a special occasion.
We had a lovely Christmas Eve dinner at Cobalt. Blake took amazing care of us! We can’t wait to try brunch!

In this time of social disting and the COVID-19 virus...online table booking on their outside deck, was a very pleasant experience...great food, with great service...a 5 star overall experience...I will be back many more times...

None of our orders for a table of EIGHT were prepared properly or according to any simple requests (like medium steak). The service was terrible. We have dined there three other times and it seems like Cobalt has been slowly going down hill. No silverware or side plates on the table. Measles were over one hour delayed and the presentation was cafeteria-like.
This restaurant needs to improve quickly. No one wants to dine at a place that trains it’s staff to apologize every time they stand at the table.
Went to dinner Friday night we stayed at the hotel for a weekend away, started out ok but the entrees took way too long then they cut my filet in half for some reason and way overcooked it, a $50 steak it WAS NOT! We also ordered room service from cobalt three times as it’s the restaurant that supplies in room dining and every time something was wrong, value was not there at all, burnt toast, forgot items all three times and served in styrofoam boxes with the cheapest plastic forks and knives available. At least splurge for the better plastics if it’s going to cost $25 a person for a couple eggs and a coffee. Very dissatisfied because the Kimpton hotel is a very nice place and for a resort and spa that you pay $400-500 a night the food offering should match it. And please don’t blame it on COVID because covid safety shouldn’t cause you to skimp on silverware or customer service. Had reservations for Cobalt the second night too and cancelled, went to a great place 8 minutes away called Trattorio Dario, highly recommend and half the price.

Food was very tasty but the prices seemed to be for the ambiance. I had seafood risotto which was very good but loaded with cream and the seafood in it was below average quality, seemed more like a $15 dish rather than a $38 dish. My wife had the filet with a side a mushrooms. Mushrooms were delish but same thing as the risotto, should have been an $8 rather than $16. Just nothing overly special about it. Service was amazing and the cocktails were absolutely perfect. Best martini I’ve had in a while. Overall would recommend.

All three of us enjoyed the setting outdoors. We had the tuna salad, the zuchini and the flatbread all were excellent. I also had the butternut bisque which was excellent.

The ambience was very nice and the sever performed well. However , the food was not good at all in the sense that it was over cooked, such as the Filet Mingnon that we ordered. The dessert was not prepared well and the coffee was cold and had to be sent back.
We celebrated my wife's birthday at Cobalt. At first I reserved indoor seating. However, after we arrived and were seated indoors we immediately realized we made a mistake and requested to move to the outdoor terrace. What a difference! It was a beautiful evening. We were a little disappointed in our request for our favorite wines. Basically, we requested a sweet wine like a Moscato, a white Zin or a sweet Reisling. None of which was available. We settled for something else which we did not enjoy as much as we could have. The food was good, but not exceptional. We will return, but maybe only for drinks and dessert.

Very disappointing experience at Cobalt. Had an extremely overpriced appetizer ($135) that was close to tasteless and didn’t seem fresh. Had to ask for butter and dipping sauces to go with. The service was mediocre at best.. Main courses were ok but not what one would expect from this type of restaurant. Covid can only be blamed for so much these days... Would not recommend this restaurant!!
Don’t usually leave reviews, but very disappointed with food—I am a Quality professional and if u charged premium price make sure to deliver premium quality..Risotto was “salty” replaced by overcook Salmon, vinegrette in salad was too overpowering, Calamari was mostly head from squid....they have Brunch for breakfast, but I’d rather eat at McDonalds...at least I know what to expect from my $10 bill versus $190 bill from dinner. So disappointed!
The service was outstanding. We wanted to be seated outside but there was a table of four who just wouldn't leave. They had already finished eating when we arrived and were still there when we left. The staff found another table but the wind was so strong they moved us to a more protected table as soon as they were able to. At the table of four who simply wouldn't leave one woman was so loud she almost totally wiped out the tranquility of the beautiful, crashing ocean waves. The burgers were very good but the fish tacos were not impressive. The fish inside the taco was cold and there was more sauce that fish. The burger and fish tacos were served with a side of fries with no other, healthier option. The cocktail was expensive and week. I would suggest ordering wine, beer or straight up. I can't say enough about the service - from the greeting at the entrance, to their efforts to accommodate our preference for outdoor seating, and attention the service was outstanding. In these difficult times, it is important for people to remember that more restaurant patrons need to be considerate of others. Take your time to enjoy your meal but then move on so that others can be served and so that the serve staff can have an opportunity to bring in more revenue. Also, we must all remember that those around us deserve to have a peaceful meal without unnecessary sound pollution from the hollering woman at the next table.
Four of us ate here on a Wednesday evening. A little pricey but worth it. Smallish crowd, so it was intimate with not too much noise. Two of us had the Skirt steak, one was excellent the other was a little fatty but very tasty. Another had the House salad, and roasted brussel sprouts. And the last had the Sea food Risotto. All excellent. Premium food. Just checked the menu and the food selections have changed. They try to mix it up to keep it fresh and provide foods that are in season. We will go back!
