Chef Emerson Frisbie began Clandestine Culinary in August of 2021 as an intimate chef tasting curated experience . Chef Frisbie draws inspiration from his time in James Beard and Michelin kitchens while continuing to grow his own knowledge of ingredients, cuisines and techniques. Clandestine offers chef tasting menus in a casual setting at Palm Beach Meats, located at 4812 S. Dixie Highway in West Palm Beach. Each seating is limited to 20 guests at a time. Supplemental wine or non-alcoholic beverage pairings curated by a level 2 Sommolier Brett Hart are available to enhance the experience . As a degustation style menu, we purchase and produce proportionately for each seating. We politely decline substitutions due to the nature of the concept. However, omissions may be made to accommodate allergies and dietary restrictions.

    This is a very special dining experience. Small intimate groups of people enjoying fine dining and amazing wine pairings. They are clear to their guests that this is not a restaurant. They don’t want to be a restaurant. Think of it as a dining experience in someone’s home. The Elk dish was our favorite, but each course provided something special. You have the opportunity to interact with the chef, sommelier and other special guests that they rotate to learn about the food and wine. You might find it odd to dine in a butcher shop, but their double use of the facility is a great concept. We really enjoyed the food, wine and company. We will return!

    One of the most amazing dining experiences of my life. Every single dish & wine was so amazing and different- food I would never have expected to eat but now it is my favorite. The chef and sommelier described everything in detail and were absolute pleasures to be around. The pricetag is high but for a special occasion (my partner and I were celebrating our two year anniversary) it’s totally worth it! Lots of the parts of the dishes were locally sourced. I also saw a table that looked like they got the non-alcoholic drink pairing, and they really looked like carefully curated cocktails with each course. I didn’t try any of them obviously but if you don’t drink it looked like a great addition to the meal. 10/10 I will recommend this experience to literally everyone. See pictures!!

    Unparalleled, insanely unique experience with out of this world food. They take food to an art form. The experience does go from 7-11pm so plan for an entire evening of amazement. The wine pairing is also well worth the investment

    Chef Emerson is a culinary force to be reckoned with. His food is creative and diverse without being unapproachable or unnecessarily over the top, not to mention insanely delicious and visually stunning! This natural wine and snack pairing was so interesting and boundary-pushing! Lauren was so fun and descriptive as she walked us through the wines and what made them so unique. Natural wine isn’t for everyone but she guided the group so effortlessly! If you have the opportunity definitely take advantage of these one-of-a-kind pop-up dinners, you won’t be disappointed!

    Clandestine was a wonderful treat! The staff was on point. Presentation was 5 stars! Quality of food-5 stars. Brett, the sommelier, was knowledgeable and friendly, taking time to explain and describe the wines served. We loved the first wine - the Salat Cava. I felt that the quality of the other wines did not rise to the level of the food. Biggest treat of the night was to see two old friends - the San Pedro's- that we'd lost touch with years ago and it was great to catch up and share their pride in their son's involvement with Palm Beach Meats and Clandestine. The cherry on top was to see that PBM carries creamed honey locally made by our dear friends, Sierra and Al; if you haven't enjoyed their creamed honey on an English muffin or anything else, you are missing out!

    always superb food..Has never been a disappointment..We also love the atmosphere, cozy and unpretentious. Emerson and James are talented and creative.Every dish presented is photo worthy..The wine pairing with sommelier Brett is also a great experience.. KEEP UP THE GREAT WORK...!!

    Took my wife here for a birthday dinner. We arrived and were greeted by friendly staff. We enjoyed an incredible tasting menu, small plates paired with wine. The chefs came out to the dining area with each plate and explained the ingredients and process involved in preparation of each dish. The wait staff was incredible. Everything was delicious and would definitely go back.

    The best dinner I have ever had! Held in Palm Beach Meats after closing time, in the most intimate setting with only 5 tables, Clandestine puts on an exhibition of mastering the culinary arts. Two amazing chefs who are highly experienced in working in michelin star restaurants, explain every thoughtful dish. A must experience!

    This was a remarkable experience. The food was excellent. The wine pairing was very well done. This is the type of original concept focused on the food a wine that is not common for South Florida. Excellent dinner!

    Saturday’s dinner was phenomenal. My wife and I had a great time and really loved all the food. The risotto was delicious and the wagyu was out of this world. Every dish was well thought out. Chef Emerson and Chef James are bringing something to Palm Beach that i have been waiting years for! The wine chosen by Brett was also a great pairing. Loved the reds and whites wines. Can’t wait to go back.

    It was a quaint party of 10 due to last minute cancellation. I was grateful that my husband and I had a table for 2 and not a communal table as I had seen in previous reviews. The tables were decorated nicely, it felt very romantic. Each course was beautifully presented, with amazing flavor profiles. The squash risotto was my favorite, if I had to choose. My only critique, would be the wine pours were much smaller than anticipated. This is of course no reflection on the food. My husband and I have been to other establishments with tasting menus where they offer more than one tasting of the wines being pared. That said, we actually liked some of the wine so much that we purchased it to take home. Overall, it was an amazing experience and we enjoyed talking with both of the Chefs after the service was over. We will return

    An intimate dinner with friends. We were overwhelmed by the attention to detail in each dish. Everything was clearly given such thoughtful consideration. We all agreed that this is by far one of the most memorable meals and overall dining experiences that we have ever had the honor of being a part of. We were continuously bewildered by each course. The chefs came out to explain the courses but also educated their guests about ingredients and techniques. The service was spot on. Everyone was attentive but not hovering. I have only ever experienced food, service and such story telling in a meal like this once at a Michelin stared restaurant a few years ago. This is truly a hidden gem.

    There's eating at a restaurant, and there's experiencing a chef or team's heart and artistry; Clandestine is the latter. The three of us trusted Chefs Emerson Frisbie and James Cruz with our palates, as this was a pre-fixed menu, and left feeling like we bought tickets to a different time! First off, it was intimate: low lights, lit candles, beautiful cutlery, and soft tunes. Each course was unique to us and quite mindblowing. While everything was delicious, my favorites were sweetbreads with guava demi, the mushrooms (pay extra for the alba white truffles) paired with a broth (that crunch!), and that tender wagyu Palm Beach Meats is famous for bringing to the area. Austin and Farrens provided excellent service! They kept our water and wine glasses full and quickly answered questions we had about the white wines and truffles. So, I'm sure there's a question of value: Is the EXPERIENCE worth the price tag? YES! Chefs Emerson and James are changing the currents here in Palm Beach County, and you definitely want to be one of the tides that powered them!

    if you are looking for a place that stands above the rest look no further. in a small quiet beach community known as west palm beach; Clandestine is single handedly putting the community on the map as a culinary destination. Los Angeles had Chef Ludo's Trois Mec, But West Palm Beach has Chef Frisbee's and Cruz's Clandestine!!! THIS PLACE DOES FOOD EXCEPTIONALLY WELL!!! if your a foodie or just a person looking for an unforgettable night in an intimate setting paired with world renown wines (or mocktails) then this is the place for you!!!

    This was an absolute sh_t show. Start with the accolade: chefs were awesome and the morsel size pieces we got were fabulous. That was the good. The bad: everything else....greeting us, they sat us at a community table. And we waited. And waited. The wine pairing was to start with the first appetizer. No other drink was offered. When the wine came, I'm going to guess they were $30 bottles at Total Wine. The pours were very small. Unless they ran out before they got to you, in which case they'll "make it up to you on the next round". I suspect the bottles they poured were ones they couldn't sell. They didn't have enough open bottles to make a standard pour. The "mocktails", I'm told, were full of sugar. This was a disaster, from top to bottom. But at least it was "only" $175/person.

We have brought in a new Sommolier recently and will be significantly improving our wine program. In addition, we have hired a new front of house team all of whom have fine dining experience.     My mother and I loved this experience!! It is so much more than a dinner. We celebrated my mother's birthday and we had such a great time. The food was fabulous and the atmosphere was perfect. It felt very comfortable and not up tight. Some people had tables just for their party, but we were at a longer table and shared with another group. We laughed and joked with the people at our table. It was great. Each dish was absolute perfection. It was especially special when the Chefs introduced each dish and shared a little about the history of the ingredients, the process, and their thoughts that went into its creation. We also had the wine pairing which was a journey all on its own. Not only did the wine pair perfectly with the dishes, but the sommelier, Brett, also traveled us through the making and life of cabernet sauvignon as if it were a person with an interesting geneological tasting. I would recommend trying this experience and can't wait to return to try their next menu.
