We came to celebrate three people‘s birthday. There were three people at our party. I indicated that on the reservation. Nothing was done. We also couldn’t get service. We could not get our waitress back forever and no one ever checked to see if our food was OK. But very disappointing to go for three people who happen to have birthdays at the same time and have absolutely nothing done and be ignored.

Seating is the pits here. 20 min before I reservation I got a call from the host asking if our table of 8 was still planning to come (this was after I had confirmed via text the day before.) I thought it was odd and felt like they were going to give our reservation away. When we arrived, the hostess asked if we had any disabilities. Seemed like an odd question and also unclear why she asked until she brought us to the table which was literally in the ground, like a pit, and was difficult to get into. My daughter has been a hostess at upscale restaurant so she's drilled into me the do's and don'ts of talking to a hostess. I asked for a different table and noticed there was a nice round table across from the host stand that would have accommodated us but that was just seated (table didn't even have drinks yet). I got a lot of attitude from the hostess and nothing else was available even though the restaurant was quite empty. Beyond a round table of six she would have crammed us into. When I said to her, when you seat a party on the floor like that I would appreciate a heads up, she responded sullenly, "I asked you if you had a disability in your party". A little too late once we arrived to let me know. She seemed like a grumpy staff member probably because she was solo. We stayed at the table but none of us under the age of 20 tried to get up to go to the bathroom until we were done with dinner. I felt bad for the server who had to bend over or do a lot of squats to bring our plates and take our order. The dumplings were good, but we ordered a lomo saltado dish medium, and the beef came out raw. We asked for them to cook it some more and then we got it burned to a crisp and they charged us another lomo saltado dish, which the server did remove once we let him know. The seating ruined the dining experience. The hotel should put a lazy susan in the middle of the table because getting a dish from the middle was tough since it required standing up which was impossible.

Interesting and varied dishes, something for everyone. Sauces are very tasty, and food is plated with artistry.

We were three adults and 2 children under 10 yo, but with very sophisticated palates as their mom is a gourmet cook. I believe China Chilcano introduced my daughter-in-law to ways to synergize multiple cuisines. The carefully selected blending of Peruvian, Chinese, and Japanese flavors left us in awe; the visual presentation of the dishes added another level of sensory ingestion. Hallelujah, Jose Andres...and the chefs at China Chilcano.
