Mes Amis, a Guest Chef Series welcoming our friends, colleagues, and mentors into our kitchen to collaborate with our team. Dinner will be a four course tasting menu for $215 per person with an optional $110 Wine Pairing. Arnie Marcella is the Executive Chef of COBI’s, overseeing all menu creation and kitchen operations in concert with Marsh. A graduate of the Culinary Institute of America and trained sommelier, Arnie has worked in various Michelin and James Beard recognized restaurants across New York and Bangkok, such as Jean Georges, Marea, and Corton, as well as running the kitchen of The Elm and Aldea. When it comes to the facts that actually affect your plate, Arnie is a Filipino-American from New York, addicted to Japanese food, classically trained in French and Italian Cuisine, and a devotee of Thailand. It’s this broad multiculturalism combined with a forager soul, a fine palate, a casual vibe, a knowledge of the rules and a willingness to break them, that defines today’s generation of new American chefs, of which Arnie is an enthusiastic export. As Executive Chef of COBI’S, Arnie aims to continually push the boundaries, excite diners’ curiosity and infuse his formidable pedigree into refined Southeast Asian cuisine while always maintaining a playful sensibility to his craft.
