Inside Hyatt Aurora. The menu was limited due to a convention at the hotel—we we’re participating in the convention. Food ranged from pretty good to great, mediocre wine wine list, extensive cocktail bar. Service was hands down fantastic. Kudos to Sara, Kristen, and Danny for ensuring awesome service even when they were extraordinarily busy.
Out of half of the beer menu without warning. We just kept ordering and kept being told that they were old of that one. Food was okay, but fish was over cooked. Applied tax to an exempt business card and were told that they couldn't do anything. Finally figured it out after some pressure from us. Service was not friendly or helpful.
Menu flexibility provided a good choice for our dinner selection.
This is a hotel restaurant. Open table should say so. However, pleasant staff. Food was excellent. Good, broad selection. Good wine list.

Had a wonderful dinner before an event with a friend! Our waitress was very attentive and knowledgeable about the menu. My filet was cooked perfectly and tender. My friend ordered trout. She said it was the best she had ever had!
Out of two entrées, two were delivered to the table incorrectly and had to be sent back. They had forgotten to put chicken in the chicken dish and the medium rare burger was well done. Food tasted good but made for a long dinner. They did comp the two alcohol drinks we had
Staff was extremely nice. Ambiance was very nice also. However despite the diverse menus, I was somewhat disappointed with the chef and timing of the dishes ordered. The appetizer ( roasted cauliflower) was too salty. My special, lamb chop dish, was served too cold, as though it had been sitting out too long ...quality of the meat was tough. I would go back again because the hotel is very close to the medical school campus.

One of the few restaurants in the surrounding area that is nice enough to bring a client to for a business meeting. I frequent this restaurant at least once a month. Floor to ceiling windows offer lots of natural light and in the summer they have a wall of windows that slide open. Menu can be a little heavy for lunch but they do have a few lighter options - I prefer the beet salad and add chicken.
Good happy hour specials too, I think $4 - $5 glasses of wine and reasonably priced apps.
The service was great.
The short ribs were thinner than bacon, chewy and boney.... not meaty.
The drinks were watered down but the staff was quick to rectify.
On November 9th the air conditioning was on 'full tilt'. It was uncomfortable cold!
We were the only people in the entire restaurant area. My girlfriend ordered a soda and the waitress had to be reminded to bring it more than once, it finally arrived after our food. They forgot the garlic bread that came with our soup. When reminded we ended up with grilled bread. They put so much rosemary on the fries they were barely edible. Best part of the meal was the artichoke dip.
The restaurant is fairly new and not very known as yet. The food was well prepared and a fine cocktail and wine list. For a "hotel" restaurant I would definitely recommend it.

My friends and I had a wonderful going-away meal at Borealis. The server was incredibly knowledgeable about the menu and the food was all of the highest quality. I highly recommend any of the fish dishes and the brownie dessert. Definitely a good place to go for a nice meal!
This is the restaurant in a new Hyatt hotel. It has only been open for a few months, and it is beautiful! The hotel hasn't necessarily been "found" yet, outside of convention goers. That means that they may be busy during the week, but Friday and Saturday are quiet days. Since we were one of only a handful of tables, our server has enough time to engage in pleasant chatting (not too much) and could be very attentive (but not overbearing). It was a lovely evening, and we'll be back.
The restaurant has some really amazing recipes. The chicken parpadelle is a spectacular dish well sized,flavorful,and a great deal for the quality. I also had a beautiful charcuterie, and the decor has a modern elegance that makes for an enjoyable eating experience.
Wonderful ambiance, attentive and knowledgeable staff, delicious food (including happy hour menu) and a great outdoor space! Perfect for a quiet, intimate dinner or large groups/gatherings.
