About Booth One
Booth One is a classic Chicago restaurant being reintroduced in the heart of the Gold Coast neighborhood from Lettuce Entertain You. Drawing inspiration from the legendary restaurant at the former Ambassador East Hotel, Booth One is a contemporary American concept with a vibrant, social dining scene. Created by Chef/Partner Doug Psaltis, the menu at Booth One utilizes top quality, seasonal ingredients to showcase modern interpretations of throwback dishes. Excited to see the new iteration of a classic standard. Overall did not disappoint.
Room is a cleaner more modern update to the old classic Pump Room.
Food was very good with plenty of lower cost options.
Two slightly negative takeaways:
Please quote the price of the daily special - the special was an incredibly delicious prime rib. It ended it being a surprising almost $60... one of the priciest items on the menu. Probably would not have ordered, maybe it was good I didn’t know the price because it was that good.
Table service is still a bit sloppy. Staff was constantly bringing the wrong meals to the wrong tables or wrong diners. Little stuff that can be corrected.
Bottom line - will be back!
I have to say we were not impressed with our meal here. It is a lovely spot . Swanky and nicely decorated. The food was fine. Nothing outstanding and that was the issue. The meals and wine list are on the expensive side Almost all dishes were over $30 and the wine list was mostly over $100. At this level, we expect more and were left wanting. We love this organization’s other restaurants but they need to pick it up a notch to compete at this level.
We loved the Dover Sole and the Filet Mignon. Everythibg tasted amazing. We started with the stone crab claws. The couple we dined with shared a Caesar salad which they loved. Our wine, the Sancerre was lovely. The best of all ~ the desserts. Wow. The desserts were outstanding. The best we have had anywhere. Great Dinner! Five Stars. We will definitely come again. Loved it!
Outstanding experience. Seating allows a quiet conversation. I had the Saturday prime rib special which was tender and tasty. Sides were very good. The entire menu looked so good we wish we could have had room to try more. All topped off by a creative dessert menu. The favorite was the lemon meringue, but again, more than we could try. Nice to see Rich Melman walking around keeping an eye on things. Service from the manager to the wait staff was exceptional.
Fine dining at its best. Looking forward to our next visit. Welcome back to an old standard!

I really had hoped that the new Booth One would have brought back some of the beautiful glamour to the dinning area that it had when it was the original Pump Room...
The Origanal Pump Room was one of the most beautiful Dinning rooms in Chicago.. Now it's drab and boring with horrible lighting and fixtures!!! Wish they would have brought back some of the old Pump Room elegance and glamour. It was terrible what was done to the decor in the room after the last owner.. Im so glad to see at least the food is now wonderful!!
My boyfriend and I are teachers and we’re looking to do something really nice (so we didn’t mind spending more than usual.) The design of the restaurant is gorgeous and we were excited for the night as soon as we walked in. They seated us quickly (with our reservation) and we looked over the menu. I ordered a salad and fish... my boyfriend the beef tenderloin. After our first cocktail, my salad came and we ordered a bottle of wine. They cleared the salad plate then returned to the table a few minutes later to say that they had lost our order in the kitchen and could we place the order again.
After waiting 10 minutes for our bottle of wine, the food came shortly after. We started eating and my boyfriend realized the hadn’t given him the sauce he ordered with the steak (which really was integral to the order) so he flagged down the server and waited about 5 more minutes for Him to return with it. My fish was pretty bland, and not at all worth the $47. All in all the portions were good, but small (think French restaurant.)The sides were generous, about $9 each but nothing to write home about.
We were sadly disappointed in the overall experience. I had heard so many great things about the Pump Room and the articles about Booth One put it high on our list for what we thought would be a special dinner. It was a big night out for us and expensive for what turned out to be a flop.
Booth One opened in our neighborhood a week ago and we were delighted because we knew a Melman restaurant would be a winner. We were immediately struck by how smooth the operation is, from hostess to coat check to wait staff, a nice flow. The decor is lovely and the ambiance quite comfortable. Big big plus is the level of sound - with good dinner music at a nice volume you could still hold a conversation, the room wasn't too noisy. Huge plus. Server was familiar with the menu and everything we had and the food arrived very quickly. The crispy duck over roasted fruits and vegetables, the filet (which was superior to Gibson's) and the 1954-era cheesecake were superb. On the downside - and this was a bummer - we dined early - 5:45 - and were seated at a table immediate next to the bussing station when the room was 2/3 empty. My chair was inches from the counter where they pour all the water, etc. (tried to upload photo but said photo was too large) Several large booths were occupied by couples, so we had seating envy. The other downside was the server seemed to want to rush us, not sure why. An example of this is when we were eating our dinner, our plates were half full, and he asked us if we wanted to see the dessert menu. We told him we'd like to finish our dinner first. We were impressed enough that we'll be returning. Tony kept saying how his filet was absolutely perfect. If you can add more fish to the menu that would be a big plus for me.
Obviously very new. Service was lovely and efficient. I had to ask for a black napkin..probably should be offered. Menu is pretty expensive though limited. Perhaps a few more mid priced items. Booth One wants to get the neighborhood in ( like us)..so they need variety.
I would put in olives and chips vs little toasts. Food was cooked well, salmon good but a bit plain. Great Caesar salad great smashed potatoes. Filet was good.
Excellent job with the new concept and a nod to the Pump Room. Very elegant room but not stuffy. Not sure if it was due to live piano previously but it might fit this concept as well? Food was spectacular! Service was spot on. Hats off to Lettuce once again.
Booth One was definitely a let down. To start, the food was underwhelming. The appetizers (seafood sampler and crab claw) are basically built for one person and would be nearly impossible to share amongst a small group. The entrees (tortellini & beef wellington) we ordered lacked flavor and tasted very bland. The dessert (rasberry Kiss) was one of the worst desserts we have had. It tasted liked it was made a week ago and taken out of the fridge to serve.
On top of the food disappointment, the service was also pretty terrible. We waited nearly 30 minutes for appetizers and the server forgot to bring us several drinks, so we had to keep reminding them. I was so excited to check this place out, but definitely will not be going back anytime soon.
The renovation of the Pump Room is absolutely gorgeous. The design, light fixtures, ambience--just beautiful. We were there on day 2 of their opening and everything was perfection. My St. George Gin Gimlet was superb . The stone crab and rack of lamb with mint risotto were simply delicious. The service couldn't have been nicer and better. We loved the variety of music playing and best of all-=--we could have a conversation without screaming at each other. It is so rare to find a lovely restaurant where you can actually talk and not leave with a headache. We have already made two more reservations. can't wait to return for Dover Sole night!!
