CHEF JAYSON FOSTER was born in Norwich NY where he developed a love of cooking through spent time with his mother and grandmother in the kitchen. In 1996, he came south to Beaufort, NC. After stints in other dining spots, Jayson was hired by Chef William Bell at William’s Casual Fine Dining where he was named sous chef. Jayson attended Carteret Community College; Culinary Arts studying in France under two-starred Michelin Chef Marc Meurin. A stalwart on the Beaufort Food Scene, Jayson has cooked at Chef’s 105, Circa 81, and at Aqua, where he was the Chef for 10 years. In 2012, Jayson and team won the Fire on the Docks Competition in Wilmington, NC. Jayson is proud to bring all these experiences together in the kitchen at Blue Moon Bistro and looks forward to serving you. Bon Appetit!

A friend recommended this restaurant. Everything was great. But, like most restaurants now, prices seemed high. And, suggesting the tip amount based on the total (including tax) doesn't feel right. It was disclosed on the bill but it still didn't feel right.

It was our 38th anniversary. As Blue Moon is one of our favorite restaurants in Beaufort, it was our first choice for a special evening. Lara, the bartender and manager for the evening, was wonderful. She is so smooth…never rushed, calm, accommodating, and fun! Our waitress, Hannah, was wonderful. Timed everything perfectly. The food was excellent! A wonderful evening, as always.

A must-visit dining experience on your next trip to Beaufort. Intimate setting on Queen Street. First class in every phase of what you’d expect at a prestigious restaurant. My wife had the beef filet, with asparagus and garlic whipped potatoes. I had a cup of lobster bisque, followed by the tile fish special, on a bed of assorted vegetables. Both entrees were perfectly prepared and just scrumptious. Blue Moon will always be on the agenda when we visit Beaufort.

It was our first visit and our experience lived up to the reviews we had read. Our table was on the porch and it was so quaint.! We enjoyed being able to watch people walking up and down the sidewalks of the sweet town of Beaufort, enjoying their evening. I had red snapper and risotto, which was a dinner special, and my husband had the pork chop. Both were amazing! Service was great and the food came out hot and very timely and had great presentation. Would highly recommend and we will be back!!

My husband and I had dinner here in early May. This place ranks among our most memorable restaurant experiences…and we’ve been around. We have to give them top marks in all categories…specialty drinks, wine, wait staff, super service, and exceptionally good food. Based on our experience, they are clearly world class, good enough to rival best restaurants in major metropolitan areas. Definitely not a tourist-oriented restaurant. The overall atmosphere seemed to be what you would expect for fine dining, but at the same time unassuming, casual, and family friendly. Wait staff was particularly attentive and engaging, but always professional. We both had the fish Du Jour which was grouper and loved it. The food was exceptionally well flavored and the portions were perfectly sized. We’re usually not into desserts, but since the entrée was so good, we gave the carrot cake and the mocha chocolate chip cake a try. Both were fantastic, especially the carrot cake. We learned that our server, Kimberly J, made both desserts. After dessert, the Manager and owning partner, Ashley Amaral, spoke with us to ask if we enjoyed the food. We came to Beaufort for the fishing with dinner as an afterthought. On our next visit, we’ll focus on dinner at the Blue Moon Bistro and try to squeeze in a day or two of fishing. Can’t wait to go back!

Blue Moon Bistro offers generous variety of small plates and entrees prepared to perfection with an explosion of flavor profiles served by an exceptional and attentive staff. Our "go to" restaurant especially when introducing friends to local dining. Chef Jayson never fails to impress our guests and House Manager Ashley always makes your dinning experience top shelf. Blue Moon Bistro has THE premiere chef, cook staff, and servers and I highly recommend them if you are looking for an exceptionally flavorful meal served by professionals that is reasonably priced.

Such a nice surprise to see this Beaufort eatery reopened. Food was very well prepared and service was excellent. The only negative thought is about parking. Very hard to find a place to park and it is not even high summer season. Will go again soon.

Very good food! The service was a bit poor, we constantly had the feeding they did not have time for us: table not read at reserves time, trying to make us have dinner at the bar, no attention at all during the payment process (actually yapping in phone at the same time).
