The cauliflower with white mole was a masterpiece - the subtle nuances of the mole complemented the delicate flavor of the cauliflower perfectly. What truly elevated the experience was the incredible wine pairing, featuring exceptional Mexican wines (I had no idea Mexico produced such amazing wines!). Each sip perfectly complemented each bite, showcasing the expertise of Ramses the sommelier. The service was intuitive and impeccable, with Nancy providing warm and attentive service that made me feel so at ease as a solo diner. I am glad I chose to experience Bajel while visiting Mexico City! I would highly recommend! I enjoyed every single bite and will return on my next visit to this beautiful city! The manger Irais was wonderful and our server, Raymundo, was a pleasure to meet and to be served by.
