As the name suggests, The Everglades Restaurant pays homage to the vast expanse of threatened wetlands in South Florida. Green efforts and conservation are especially important to the Rosen Centre, a Two Palm Green Lodge — among the first hotels in Central Florida to receive this designation. While the interior design reflects a respect for the native flora and fauna of the Everglades, the gourmet menu showcases an array of steak and seafood dishes that artfully blend Florida traditional flavors with more contemporary dishes.
