Our dough is made fresh daily and proved slowly, meaning we’re able to use minimal quantities of yeast and our pizzas are light. Our commitment is to quality, we use carefully selected Italian and local British ingredients from a handful of small, independent suppliers to top our pizzas.
We use independent producers as long term partners, including Fior Di Latte Mozzarella sourced from Caserta, and wines imported directly from private Italian growers. In June, our subterranean dining space will transform into KOYN Thai in collaboration with Bangkok born chef, Rose Chalalai Singh. The new restaurant will celebrate the flavours, spices and cooking techniques of Thailand.
KOYN Thai will sit underneath its Japanese counterpart, in the basement of the Grosvenor Street Residence, offering a menu that captures the essence of Bangkok, Chiang Mai, Phuket, and the central provinces.
Rose, known for her Parisian private dining restaurant, Rose Kitchen, and having catered for
some of the world’s greatest fashion and art talent - from Vogue Paris fashion events to The
Gagosian - will make her London debut at KOYN Thai.

The brasserie is inspired by the 19th-century poets who used to meet on Old Compton Street and features art-lined walls, a brass bar and mosaic tiled floor.
