Sustainability is a core focus of many restaurants across the country, and some of the most committed are recognized as ocean-friendly by the Surfrider Foundation, a nonprofit dedicated to the protection of the world's ocean, waves, and beaches. Those restaurants must meet strict criteria, ranging from using proper recycling methods to eliminating plastic bags, straws, and utensils. El chef y propietario Peter Merriman ha llevado su estilo único de gastronomía regional hawaiana al establecimiento, servida en un ambiente informal pero elegante, al estilo de una antigua plantación en Hawaii. Peter es un pionero en el concepto de la "granja a su mesa" y solo sirve los productos más frescos, el 90 % de los mismos se cultivan y capturan localmente, utilizando solo métodos sostenibles. El restaurante sirve desayunos, lunch y cena en un ambiente casual con vista al mar. El desayuno y el lunch en Ki's son muy casuales, ya que el servicio es en la barra y los clientes buscan un lugar donde sentarse. Para la cena, el restaurante cuenta con servicio completo en el comedor del segundo piso y un menú más especializado. Ki's investiga todos los productos que ordena y cuando es temporada, intenta conseguir tantos ingredientes locales y/o orgánicos como sea posibles. Los platillos del restaurante son creados teniendo en mente el sabor y que sean saludables. En Ki's se cree que una buena salud viene de comer alimentos completos y saludables. Ki's también ofrece sushi de miércoles a sábado por las noches, y los domingos es el único lugar en Cardiff que ofrece brunch dominical.
