Pargot is a shrine to Chef Ayala's culinary vision and creativity. His clam stew alone is enough to make a visit to Pargot a must. It was one of my "dishes of the decade," another culinary remembrance making my 75 years on this planet worth it. However, every aspect of Pargot, from its gorgeous, modern design, to the elegant service, made customers feel special. Pargot is a great restaurant, on par with the best of CDMX. The chicken wing croquettes, served on a sculptural branch, akin to a presentation at the acclaimed Alinea in Chicago, tasted fantastic, unlike any "game day" chicken wings. Our grilled octopus was the only miss of the night. We thought it was just okay. The stuffed Chile dessert knocked my socks off, but my spouse thought it was nada. Prices were a steal for a meal of this quality; about $85 American dollars each including two appetizers, two entrees, one dessert, two glasses of wine, and two cocktails. The tuna carpaccio, picaña, cacio e pepe and the polpo are amazing. Great cocktails and a very well curated wine list. Awesome vibe, great soundtrack and all of the people are fantastic.
