Designated historical, 740 is one of Colorado's two oldest remaining saloons; transformed back to its 1904 roots; a traditional American dining saloon with a turn of the century ambiance featuring a magnificent room dominating bar, built in 1880 by the Brunswick Company,. The copper spit trough, once equipped with running water, still exists at the front of the bar. Louisville, notorious for its drinking, gambling, and illegal activities, evidence of the occasional misunderstanding is the .22 caliber bullet hole in the front bar. The bar offers a selection of craft beers, wines,  handcrafted cocktails and an extensive craft bourbon selection.Dinner Tue. thru Sat.     Our table was ready (with a reservation) right when we arrived. The staff is friendly, the location is great on the Pearl Street Mall, and the food is top notch. If you've never tried octopus, this is the place to do it!

    The chips and dip and the Brussels sprouts were killer. Amazing. The burger was pretty delicious. The fig and prosciutto pizza left something to be desired. The drinks were killer. Service 10 outta 10.

    A thoroughly enjoyable restaurant, Cafe Aion (near the college and Fox Theater) is a wonderful place for paella and delicious tapas (don't miss the fried cauliflower or the mushrooms in season. There paellas are delicious but not as large as they think (they say it serves two, which it does with appetizers, etc., but men and some could easily order just one per person). Ambience is great. It's out of the way (if you aren't near the college) but absolutely worth the drive. I've brought many friends from out-of-town and all enjoyed it immensely. If you live in Boulder, check out the many specials held on different days of the week. Despite being near the college, parking has never been a problem.
