El nombre del restaurante, L'Abattoir, rinde homenaje a su pintoresco pasado, pues está ubicado en la zona histórica de Gastown, entre Gaoler's Mews y Blood Alley, fue construido en el siglo XIX en el emplazamiento de la 1ª cárcel de Vancouver y originalmente lindaba con la principal carnicería de la ciudad y el distrito de la carne. El restaurante ocupa un edificio reformado de ladrillo y vigas de madera que combina azulejos clásicos franceses con elementos industriales y madera natural y cuenta con bar salón, comedor elevado, atrio lujoso con mucha luz y comedores privados. El chef Lee Cooper y el propietario y director Paul Grunberg se esmeran en destacar los puntos fuertes de comer y beber en el ambiente informal de L'Abattoir. El servicio, elegante pero sin pretensiones, está orquestado por el encargado general Ricardo Ferreira.
