We started Fatto a Mano in Brighton in 2015, serving authentic and affordable Neapolitan pizza, made with fresh ingredients, in a friendly environment. For us, everything starts with our dough. Soft and pillowy, our pizza dough is made fresh every day, using only the best Italian 00 flour, salt, water and yeast. We let our dough prove for at least 24 hours – the slow proving means we’re able to use minimal quantities of yeast, so our pizzas are light and easily digestible. We use carefully selected Italian and local British ingredients from a handful of small, independent suppliers to top our pizzas. Finally, our pizzaioli cook the pizzas in our oven at about 450 degrees, for no more than 90 seconds, in true Neapolitan style.

Beautifully arranged over three floors, Bohemia delivers a full lunch and dinner menu that includes both large main dishes as well as small tapas-style plates and sharing boards. One of the fastest services I’ve ever seen. We attend Pho Brighton semi-regularly and are aware how the service takes a little longer when it’s at its busiest - but during this last time we visited, the staff and kitchen really outdid themselves in terms of speed.

Mostly delicious food - no sacrifice on flavour or texture for it being vegan which makes it a great destination for a mixed party of vegans/non-vegans (like ours). The cocktails and mocktails were also very good. The only slightly odd notes were the absence of a wine list and only one sake (and only two cups available to drink it from?!) Service was very friendly, if a little slow, but overall a very enjoyable experience and we will be back.
