Mawn is a noodle house with “no rules,” and the first restaurant for Chef Phila Lorn and his wife Rachel, who bring with them close to 20 years of experience in Philly’s restaurant scene. Phila, pronounced “Pee La,” broken English for Philadelphia, is a first-generation Cambodian-American chef. The first in his family to be born here, his parents and siblings came to Philadelphia as refugees in 1985 after surviving the war in Cambodia.Mawn, which means “chicken” in Khmer, the Cambodian language, represents more than one thing. To Phila, chicken was at every meal growing up, and to his parents, chicken represented peacetime. During the war and genocide of the Cambodian people, there was mostly only what was found in nature to eat, including rice and salt. If there was chicken, it meant no war. At the end of that dark time, recipes were lost, and culture was wiped out, but through survival, a new authenticity was born.

    My new Sunday supper dish is the chicken parmesan with a delicious red wine. It is always a perfectly cooked piece of chicken breast and a phenomenal tomato sauce. And all the staff is awesome, very friendly and attentive.

    I’ve eaten here twice now for the a la carte and dessert tasting menus. I have been blown away each time and cannot wrap my head around how this restaurant is run by just 3 (from what I can see) people. The combo of flavors and textures in every dish is like nothing I’ve experienced before. The tasting menu may be my favorite so far, as you get to sit back and enjoy the vision of Chef Holt, which is just a joy. In particular, the corn/peach/comte and cheeseburger/tots/soft serve dishes were absolute standouts. The service is warm and attentive, the value is incredible in my opinion, and the food is one of a kind. I also look forward to seeing their cocktails improve with time, as they have just started offering them.
