I enjoyed the 5-course dinner with wine pairings, and from the very first spoonful, the kitchen was showing off, in the best possible way. The ginger, lemongrass, and turmeric bisque was silky, vibrant, and packed with sharp, pleasant flavors. Paired with a baby lettuce salad featuring juicy Bing cherries, candied sunflower seeds, pickled sea beans (a first for me and I want more) and a dreamy hempseed dressing, it struck that magical balance between fresh, sweet, and indulgent. Then came the baked chickpea, loosely classified tagine, with toasted cumin coconut sauce and crowned with toasted pine nuts and garlic scapes. Rich? Yes. Excessive? Also yes. Regrets? Absolutely none. The star of the evening was the hickory-smoked morel mushroom, spinach, and cashew cheese-filled crepe served over a powerful saffron cream sauce. Smoky, savory, and deeply satisfying, it delivered all the comfort and complexity you'd expect from fine dining while remaining completely plant-based. It was the kind of dish that makes you forget you're supposed to be comparing vegan food to anything else. And just when I thought Harvest Beat had played all its cards, dessert arrived. The lemon oil cake with orange blossom Saskatoon berry coulis and lemon orange glaze was bright, elegant, and just the right amount of sweet. The spruce tip whipped cream was out of this world delicious. A perfect mic-drop ending. The wine pairings were flawless throughout the meal, each selection elevating the flavors on the plate without trying to steal the spotlight. That's a rare talent. Every course felt intentional, creative, and deliciously unapologetic. Even a committed carnivore wouldn’t miss meat for a single bite.
