No song and dance by the servers, just unobtrusive attentiveness. Tojo invented the California roll when most non-Japanese diners were leery of "uncooked fish." and were unfamiliar with seaweed as an edible item, so he hid the seaweed inside the roll. Last night's menu included generous portions of uni (sea urchin), bluefin toro and lobster.
