It is operated by the couple, Chef Juan Lopez Luna et sommelier and wine importer Lindsay Brennan. Alma offers a tasting menu experience (5 or 9 courses) inspired by the concept of "mar y montana", largely influenced by Chef Juan's childhood memories of central Mexico as well as the couple's time spent on the coastal region of Oaxaca. Lopez is one of the few chefs in Canada working with heritage corn from Mexico, making fresh masa in-house each morning and tortillas by hand with his grandmother's traditional tortilla press. The wine list specializes in sunshine-filled Catalan wines from a unique group of winemaker-friends from the Barcelona region.     We celebrated Father's Day at restaurant Alma and the experience exceeded all our expectations. From the moment we walked in, Lindsay and Juan made us feel like part of their extended family. As owners, they demonstrated deep and passionate knowledge of every dish on the menu, from the most specific ingredients to the preparation techniques. Their expertise in wine pairings was equally impressive - they masterfully guided us through each selection, explaining how each wine complemented the flavors of the dishes. You can tell they live and breathe gastronomy. Every dish that arrived at our table was a true work of art. I'm not exaggerating when I say they looked like carefully orchestrated compositions of vibrant colors, complex flavors, and contrasting textures. The presentation was so beautiful it almost felt wrong to start eating, but once we tasted the first bite, we were completely captivated. Every dish was so beautiful visually but beautiful flavors as well. The ingredients were of the highest quality and you could taste the care in every preparation. If I had to make one suggestion, it would have been perfect to have a champagne-type sparkling wine option for toasting - something like a Loxarel would have been the ideal complement to crown such a special experience.
