How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, located at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

    The food and service is always wonderful. The noise level could use some ceiling baffles which would help immensely … I would love to see the customers make a little more effort to look 👀 presentable. This is a “locals” restaurant so tip and behave accordingly.

    I have been there many times. I left this with the overwhelming thought, “Echo and Rig has lost the magic.” The Manger was least friendly, least personable manager I have met there; just not inviting. This set the tone to dominate the ambient. None of the typical warmth we have received in other visits. Rib eye: literally have had better ribeye with a steak and eggs a random diners. It was sad. I felt like sending it back, but did not want to bother. This was the first visit where neither the food nor the service matched the price. At the price, I just don’t know that I will gamble on going there again. I’d rather gamble and try to find the next great place to dine.

    I have frequented your establishment several times. I found this experience to be rushed!!! Yes, it’s Mother’s day and I have been on other special times as well. The waiter kept coming to ask if he could take our plate and we were still eating. The waitress was overwhelmed.

    Our overall experience was excellent, with one minor exception. We arrived 20 minutes early for our reservation, which really seemed to throw the reception staff off their game. The receptionist wasn’t exactly rude, but she seemed very irritated that we showed up early. We sat and waited for about 10 minutes and were seated then, but received a text from the restaurant well after we were at our table, telling us our table was ready. Today I received an email from Open Table, telling me the restaurant reported me as a “no show”. The food and service was excellent, but the reception process was definitely subpar.
