How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, located at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

    Not great. I went to E&R in previous years when you used to select your steak. The steaks we had were tough. The service was not good.

    The wait for our table was about 10 minutes. We were seated with a window view. There was a nice orderly flow to the service and food delivery. The menu selections were explained to everyone at the tables with queries by a waiter who not only was familiar with the dishes but did not hesitate to make suggestions. The food was served hot and on time with the exception of one side of mashed potatoes. The excess was packed in a container and we left satisfied. There was also extra spoons so that the birthday boy could share his treat.

    We ate in the bar area as the restaurant was full. Our server was very polite and attentive without being overbearing. Half a dozen oysters were fresh and served with a good choice of sauces. Pork belly burnt ends were not that good or tasty awash with sauce but the pork lacked flavour. Cuban sandwich with fresh chips was really poor. The chips were a mixture of warm fresh and crunchy and cold snd slightly stale. The sandwich itself was virtually inedible meat lacked any flavour drowned in cheese and the pickles mojo sauce was not pleasant it lacked any sort of balance. We had a beer with the meal which went down well. In summary it was average at best having read reviews and watched a couple of you tube videos before we went I get the feeling we may have just got a poor meal at the end of a busy service

    I’ve visited Echo & Rig for the last 6yrs now on my wedding anniversary. I’ve had so many memorable experiences here that this one disappointed. Before I get started let me just say that the service is really good a lot of times even better when it’s busy. Well here is the long and short of it. Usually we know exactly what we want, so we were provided with bread & water by our runner. A few minutes later came our waiter. I asked to start with my usual which is a crab cake for me and carne asada bone marrow for wifey followed by a Caesar salad we share. All three dishes were amazing, the house Cesar is excellent and love the anchovies, this was our first and 2nd course. For our entree we ordered a hand selected 35oz.tomahawk, roasted carrots, and broccolini. For those who have dined at Echo & Rig before know what I mean by hand selected, those of you who have dined there, you will need to experience it, i will not be the one to ruin it. So far the experience is great. Well some time went by and we finished our starters. Our main course began coming out, and it looked, and smelled amazing. Their sauces are great and when you order a big steak all of them are included with your meal. I’ve never had the carrots before and usually order the asparagus however, decided to try something new. The crème the carrots sat on top of was so good, as well as the texture, almost reminded me of eating a sweet potato. The broccolini was seasoned to perfection, they had the right amount of crunch and were nice and oily in a good way. Good way meaning a light drizzle of some kind of oil. What a let down. My steak, while I had ordered it medium, it came out on the medium/ well side. It was pink but it was not evenly cooked, which was not what I’ve come to expect from Echo & Rig from past experiences. Mind you we visit several times a year, this was the first time our steak was sub par. The steak is usually juicy, well seasoned, and the perfect temperature all through. Still going back

    This is still our favorite steak house in town. We've been coming here for years. Just celebrated my wife getting a new job. Food and service was excellent as usual. We even got free dessert!

    Got to the restaurant ahead of our reservation time and were promptly seated. We’re greeted by a manager who explained everything to us. Our waitress was amazing and very friendly. Got ribeyes with mashed potatoes and winter squash….all amazing. To make everything a little sweeter all the staff each wished us a happy Anniversary and gave us a treat at the end of dinner. Definitely a place to go to!!

    Food, excellent as usual and everyone is friendly and welcoming. We love this place and had two meals here in three days. We always take visitors here. This morning, staff seemed a bit disorganized. They were not sure on who ordered what, didn’t ask about splitting up the check. But the good always outweighs the not so good. My only complaint is it’s just so loud that it’s hard to have a conversation.
