How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, just opened at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

I was not seated until 7:35 for a 7:00 reservation. Once seated, the bread did not arrive for 20 more minutes, therefore our order for our meal was taken exactly 1 hour after arrival. I told the waiter that I like steak pink so he recommended I order medium well since they tend to cook on the rare side. The $29 dollar steak came with very little pink and very tough. Since I had to wait an entire hour from reservation to ordering, I had no time to send it back and start over. We had planned the dining experience around our flight schedule. I have always had to wait minimum 20 min. past reservation time to be seated, but usually the food is good. It was just a total miss this time and when I told the waiter all he said was "Sorry" and ran off to wait on other customers. Unfortunately, after bragging to our out of town guests how wonderful the food was, it was embarrassing.
This is easily the best steakhouse in Las Vegas. Everything is perfect and the food is the best you will ever eat no matter which cut you get. Service is amazing relaxed everyone is friendly and not overly attentive suggest attentive enough never would go anywhere else.
Took my wife here for her birthday and everything was excellent. They made sure to pay attention to detail. Everyone wished her a happy birthday. The food, 10 out of 10. I've been everywhere in Vegas eating at fine places and most the time we go home thinking... I would have rather just cooked that myself and ate at home. Well this was perfect. One of the best steaks I ever had at a resturaunt period... and the sides where delicious. To top it off it as very reasonably priced. I will not only come back , I will visit often. Much love.
Not only is the food phenomenal but because it is also a full butcher shop, the prices are cheaper than any other steakhouse in Vegas (and the quality better). In addition to that, they adhere to the highest standards of excellence in service. I have been here twice now and was incredibly impressed by how high their service standards are and how much the people working there generally seem to enjoy working there - and I say this as a long-time food writer who has been to hundreds of restaurants and for whom service is a particular pet peeve. Highly, highly recommend all around.
Not as great as our first visit, but still pretty great. My steak was a bit over cooked, then when they wanted to fix it, it came back undercooked. The server from our last visit was off & this server was just okay. Oddly, the Busser, Zac, was the one who stepped up and kept checking on us & making sure we were covered. This server never came back to fill our water, scrape the table, provide clean silverware, etc. - all the little things that impressed us so much at our first visit with our Server Ari. I guess they were busier due to being closer to the NYE holiday? I don’t know, it just wasn’t as great of an experience as the first visit.
Excellent service,exceptional menu selection. Rainbow salad and fried spinach salad a must. Spencer steak and filet are excellent meat choices.
The salmon and butterfish are excellent seafood choices. The sides are all good depending on your taste. Four people can easily share a side. Tbe deserts are all ice cream sundaes to fall in love with.
Server was Ari & he was really amazing. Ari helped us out with our 1st visit providing great tips, suggestions & menu-item descriptions. We started with craft beers & fresh bread & butter; then 3 varieties of freshly shucked Oysters on the half-shell; then chose to move directly on to dinner as Ari showed us sample sizes of the steaks and side dishes. Instead of getting a salad, we chose 2 different side dishes, the Portabella Mushroom Fingers with Aioli dipping sauce plus the Roasted Garlic & Cheddar Mashed Potatoes. My husband ordered the Ribeye Cap & I ordered the Bavette Steak and we both chose the Blue Cheese Sauce which is so good I think they could sell that by the ounce out of the back food & make a fortune from that alone!!! Just heavenly! Then we finished up with the Caramel Toffee Ice Cream Dessert. We were there so late that Valet brought us our car keys. That was very kind.
Hands down best service I’ve ever experienced. Was asked if there was anything I wasn’t totally in love with- it came right off the bill with out asking or any expectation. Prices were extremely reasonable for the quality of food and service. The wife and I will be celebrating all our occasions at Echo and Rig.
Every time we visit Vegas we go to Summerlin for dinner at Echo & Rig. The meat is excellent the service is excellent the prices are reasonable for the cut and size of the meat and much less than on the strip or the name chef restaurants and tastes better at Echo & Rig! - they have other options but have never tried them since the beef is awesome - The salted caramel ice cream is wonderful - A pleasure to dine - constantly excellent
Echo & Rig is one of my favorite places to go eat whenever I'm in Las Vegas. This restaurant is located by my parent's house so it's convenient to get to with parking. I love the brunch options on the weekends as well as dinner menu. I love the portabella mushroom fries and of course the steaks. We were recently here celebrating my brother's UNLV graduation and could not be happier with the food and service-thank you Hugo!
We wanted our visiting family to have a great experience so Echo & Rig is the first place I thought of. As always, the service was excellent.
My brother, who does a lot of entertaining, remarked that our server, Ryan, was one of the best in the business. I don't doubt that, however, that is what I think of much of E&R's staff.
The food was very good and the outdoor seating was perfect for our group, which prefered a quieter environment. The rest of the mgmt and staff, were all genuinely service oriented, turning the meal into an occasion that was a highlight of their trip.
Kudos to the whole team and thanks for another great dinner!
