In an attempt to change the way we think about what we put in our mouths, we opened our doors in April 2018 with a vision of bringing meat eaters and vegans together over good plant-based food. With each passing year, No Bones has evolved, driven by the determination to do better for both our community and the environment.

A boutique family owned gastronomic restaurant on the South Coast of NSW. We offer a 3 course lunch & dinner menu ($110pp) with optional wine pairing ($50pp).

Head Chef Matteo Ponti brings close to two decades of experience shaped by his roots in the Italian countryside and a global culinary journey. Originally from Piedmont, Matteo earned his first Michelin star at the age of thirty while leading a contemporary Italian kitchen in Singapore, where he spent a decade refining his craft.

His menu at Mimosa is more than a collection of dishes — it's a personal journey. From the traditions of rural Italy, through the vibrant markets of Southeast Asia, to the native produce of the South Coast of NSW, each plate tells a story of season, memory, and travel. With a deep respect for nature and sustainability, Matteo reimagines Italian cuisine through a modern lens, honouring both humble and premium ingredients with the same reverence.

I was born and raised in the countryside of Tuscany, and although I’ve now lived in Australia for over 6 years, my passion for all things Italian has never been stronger. Nor has my passion for sharing it with Australia and the Central Coast. I noticed that while there are a lot of outlets serving Italian food up here, they’re largely not hitting the mark when it comes to quality, authenticity and value for money. My wife Laura and I became so tired of being disappointed every time we ordered food out, that we decided to take matters into our own hands.
