The rice appears to be made with akazu and is really good— stronger vinegar flavor and much less sweetness than Americanized sushi which is nice. The fish is a bit more western and has options like Wagyu. I am not certain that they brushed nikiri on top. The nigiri is made quite well! The rice separates into individual grains in the mouth without effort. This was a standout. Honestly, I don’t like getting Edomae sushi in the states because it’s generally overpriced and lower quality. This place is much more reasonably priced and actually pretty good. You can expect excellent and fresh quality in the ingredients they use and I appreciate that there were vegetables too. I’m usually still hungry after eating at an omakase but their portions were spot on for me and I left with a full stomach.
