Ribeye is a traditional steakhouse that focuses on Irish bred cattle and sustainable stock from rare breed herds that are traceable from farm to fork and that is a minimum of 60% plus genetic thoroughbreds. A good steak is not just down to how it is prepared in our kitchens, it goes right back to breeding and ageing. We are extremely fussy when it comes to beef. Consistency in size, colour, fat retention, and great marbling are all elements we check for.
