New York’s critically acclaimed Carbone restaurant will bring its
show-stopping, Italian-American dining experience to the bright lights
of Las Vegas when it debuts this fall at ARIA Resort & Casino. The
celebrated concept from Mario Carbone, Rich Torrisi and Jeff Zalaznick
(Major Food Group), pays homage to the Italian-American restaurants of the mid-20th
century – an era of great food, glamour, and tableside showmanship.

Carbone tirelessly sources the finest products to create indulgent masterpieces including crowd favorites such as Spicy Rigatoni Vodka, Lobster Fra Diavola, and Veal Parmesan. Guests are guided through the feast by Carbone’s iconic Captains who deliver its unique attitude creating an intimate dining experience impossible to find elsewhere.

    Carbone is one of our favorite spots in Las Vegas. Great service, wine list and amazing food! We have never been disappointed and love visiting!

    From the moment we walked in we were excited for what was about to come. The ambience was great. Our waiter outstanding. Gave great advice. Great stories. From the chunk of cheese to the main course, spectacular. Wanted to get dessert, but stomach didn't have any more room. Just all around great experience.
