They start you off with fresh parmasean and end with lemoncello. Very neat-heavy menu but nice starters and sides. Great service.

After frequenting Carbone since it’s opening, it is slipping. The attention to detail that made this restaurant so incredible just isn’t there anymore. Read on for specifics.
This experience started with the hostess pushing us to get a drink at a bar with no space availability. Then we were directed to a lounge area where we waited fifteen minutes before someone would take our drink order. Then the bartender listened to our order, interrupted to ask us if we wanted something different that he was pushing, and then repeated our order completely contrary to what we requested. Upon moving to the table almost immediately after our drinks arrived we were brought the famous anti-pasta that comes with every meal. Except this time, instead of thick cut salami arranged in a floral presentation and the delicious pickled cauliflower we were given paper thin slices of meat that looked like they were shaved at the deli and slapped on chipped ceramic plates. The cauliflower was dry and inedible. We ended up sending it away altogether.
The entrees were great as they always have been which was somewhat redeeming.
It’s relevant to note that we live on the Las Vegas Strip and dine out several times a week. We considered Carbone to be in our top five restaurants on the Strip but this last visit was unfortunately the final nail in the coffin of what we had been previously dismissing as just a few off nights on our last few visits.
Had the Cesaer salad which is the best I have had anywhere. Then had the Penne Vodka which was also great. Wonderful ambiance and great service.

This was my second time coming to Carbone and my fisst time was 5 stars, so I was extremely disappointed upon my return. I had worked this restaurant up to my boyfriend and was excited to take him for his 35th birthday.....big mistake! The waiter talked minimal, and was not friendly. We got our bread after our appitizer arrived (which was not yet finished and had to be finished at the table 5 mins later) the food was delicious but due to the lack of service it didn’t seem to be a good as the first time. I highly doubt I will ever return. I wish I could give them negative stars it was so bad!!
We went to Carbone with a group of 8 for a birthday dinner before heading to a concert. The service was incredible - our server guided us through the menu, recommended splitting a bunch of dishes (and even split the bowls of pasta into equal portions for us all to try at no extra charge), and tended to our needs without being overbearing. The food, as always, was incredible. We ordered the tableside caesar salad (so garlicky and delicious - the croutons are insane!), then split 4 portions of the Spicy Rigatoni Vodka between the 8 of us, and the Chicken Massimo (which was chicken in a balsamic glaze) with a side of grilled asparagus. They bring out complimentary meats, cheese, and an amazing bread basket in the beginning of the meal, and traditional italian rainbow cookies and Limoncello at the end of the meal - also complimentary. I love Carbone and can't wait to go back.
Great food and atmosphere. If you’re looking for an experience than this is the place for you.
Carbone has an amazing menu and the food was meticulously prepared. I would especially recommend the Caprese salad and the lobster cocktail. The setting is very nice but the background music (Motown hits which would have been perfect in a different setting) was way too loud and unfortunately distracted from what could have otherwise been an elegant dining experience. The wine list was incredible, although very overpriced. The service was fantastic. Our waiter made outstanding suggestions, as did the sommelier.
I would strongly recommend this restaurant for a fun evening with friends. If you are looking for a quiet or romantic venue, you need to look elsewhere.

It has been a culinary delight eating at Carbone because you feel the flavors in every single dish they offer and the way they taste in Pasta , Salads and Main Dishes.

We saw this restaurant's advertisement plate picture outside of Cosmopolitan often - and it looked terrible, so for long time we did not even consider this place. However, after reading some good reviews we decided to visit them. They are superb. The food, the service, everything was just perfect. And if you like rhum for after-dinner drink - they have one of the best selections. We definitely will go back.
As usual, service and meal were off the charts. Veal Parmesan was like no other. Wait staff was on point the whole evening.

Service was amazing. Small menu, but expensive. Branzino was $130 and wasn’t anything amazing. The spicy vodka rigatoni is good, but it doesn’t stand out or anything. The cookie at the end is the dinner is good though.
Best dinner of our lives all around! With the exception of the host (who was snobby and rude), once we sat down we had the meal of our lives. We started with the caprese salad...a must. The most delicious salad with fresh homemade mozzarella and heirloom tomorrow’s. Then we had the spicy vodka rigatoni and lobster ravioli. Both lived up to their hype and did not disappoint. We shared the bass alison with a side of asparagus and ended the night with the lemon cheesecake and chocolate cherry cake with Nutella ice cream. The spacing between the dishes was prefect. We sipped on our drinks and enjoyed ourselves over the course of two hours. To top the night off, Michael Jordon came in to dine. Needless to say we will be back and you should spend your money here. Budget $150-$200 per person if you want to live it up. $75-$100 if you want to eat on the cheap. It is worth every penny!
Overall, I was disappointed. When we came in, I thought that the hostess was very rude to us. Once we were seated late by the way, for our reservation at 9:15, got seated after 9:30. We sat for ten minutes without anyone even speaking to us, no menus, nothing it was very weird. The waitress came to tell us about the concept, but it was so loud I couldn’t hear her, and when I asked her to repeat things she seemed annoyed. Apparently, due to the music and my trouble hearing her I missed some key information. I ordered the ribs and it was way too much food, but also rough and had to cut with my knife which was dull. So, they see me at this classy restaurant trying to cut the meat off the rib bones and no one offers me a better knife, till the very end, which by then I am actually tired from working so hard to get my food. Other items ordered were Lobster Ravioli and meatballs with spaghetti. Not one of us out of four enjoyed the meal, each of us were unhappy when we left. I think from the host to the service, from the lack of details to the bad food experience, it was not good at all. This is maybe my 30th trip to Vegas, so I have had a ton of food off the strip and I would say by far my worst experience. Also, I selected birthday and we were there to celebrate, I also put information in the notes. No one said anything so we were all beaten down by the end and just didn’t say anything. It was sad as this was our last night in Vegas and it was sad to end on such a bad note.
Music was too loud, to hold a normal conversation. Choice of music was good just to loud. Could not even hear the waiters specials.
This is our third time to eat here. Fabulous food, service, and ambience. Don't miss the spicy vodka rigatoni or the tortellini ragu. Also, the prosciutto and mozzarella is an amazing appetizer.

Dining at Carbone was a dining experience for sure. We should started at the bar with bubbles while we waited for our table. Very friendly and attentive bar staff. The seating and decor in the dining room was so sexy. Love the red! Love the amuse bouche that was presented of fresh cut chunks of Parmesano reggiano Straight from the wheel. Nice touch. We were blown away with the U4 Madagascar prawns appetizer! Absolutely delicious. We opted for the whole fish of Branzino for dinner. It was good. Not $125 good but good. I didn’t specifically like the small bones that kept ending up in my mouth but it was still delicious. The wine list is spectacular. I love the complimentary house made lemoncello that is brought out as a digestif. Service by Dion and his assistants were spot on! Be prepared to have a fantastic dining experience and be prepared to pay. This was our favorite dining experience in all of Las Vegas and I can’t wait to return!
Pricey, with smaller portions than I'm used to especially on the Las Vegas Strip. However the quality, preparation and taste of the food is all worth it.
