As always, our captain (Troy) made our experience wonderful. The food and wine were excellent to match.
Carbon was totally fantastic, the food, the service, and the ambience. The captain explained the entire menu and made suggestions on what were, in his opinion, some great dishes. He had no issue with splitting each course for us and actually said that the portions were large enough to be shared. We started with grilled octopus which was so tender it could be cut with a fork. We then split a pasta course, geneli with fried eggplant and again, they served it split. We completed dinner with the best veal parmigiana I've ever eaten and once again, they served it to be shared, cutting the veal into four large pieces. The presentation was authentic Italian, with a reasonable amount of cheese and sauce so you could enjoy the flavor of the veal. We had a nice Puglian red wine which the sommelier decanted and the servers kept our glasses filled. We will definitely be back here on our next Las Vegas trip.
Fantastic service and the rigatoni was superb. But Veal Milanese is really a veal chop and an under cooked one at that. The outstanding server really pushed the potato potatoes in sick fat, it’s dry and smothered in raw garlic. This is probably a food place for a large group rather than a couple.
Visit this place ASAP!! Don’t second guess this place for a second. The atmosphere is old Vegas although the flagship is in New York. Every dish was better than the last. Words do not do justice to the flavors. Sorry the pictures are a little dark as the restaurant has dim lighting but amazing ambience. Staff was amazing and helped guide our dining experience. Go visit this place NOW!!!
Amazing as always, service is some of the best in Vegas and the food is incredible - from the bread to the pickled cauliflower and salami starters to the salads, pastas, entrees and sides you really can’t go wrong at Carbone.
As always, an excellent experience from start to finish. Possibly the best restaurant in Vegas!
Wonderful service, delicious food. Must have meatballs, Cesar salad was outstanding. Loved the veal Parm. Bread basket and cheese was a great way to start meal.

Server #4 was not mindful of our presence. We were sat with no menus. Finally got our order placed and 2 hours later we received the wrong entree. We didn’t get out of the restaurant till 3 hours from our reservation time. Not because of the great company and conversation, but because our server did not touch our table adequately. So disappointed. Server was busy but treated us like we were last on his priority list.
Incredible from start to finish. Top quality staff; incredible food with lots of “extras” (homemade salami, fresh Parmesan, limoncello, etc). Can’t wait to go back.
Had the unfortunate experience of dining here this last Sunday. Disappointing experience all around. Carbone is heavily overpriced given the subpar/below average service. Had 9:30pm dinner reservations for a party of 10. Coincidentally, and unbeknown to us and to our dismay, Drake was having dinner at 9:30 too! Staff was inattentive, very disorganized and only concerned with Drake. Once seated, we ordered drinks, then entrees. We were served our drinks and then waited and waited and waited.... Our food took forever to come out. Waitstaff was soo visibly busy catering to Drake and his entourage that we were left unattended and waiting for well over an hour! When I questioned the waiter, he said, the “pork chop takes a really long time to cook”. Meanwhile, half of our party ordered pasta, some of which never even made it to the table. By the time most of the food came out, we were all disgusted with the service and ready to leave. We requested the check, expressed our dissatisfaction, left the food sitting on the table, paid for our drinks and left. Carbone should value all their customers. In a city that is so heavily service dependent, and at their price point, Carbone completely drops the ball! When I reiterated to the manager how disappointing the experience was, the manager offered up nothing more than an empty apology and stated that “they haven’t been doing well lately.” For all their grandeur, Carbone lacks the hospitality and the decorum expected of an upscale, classy restaurant. Fortunately, Vegas like NYC has a plethora of really good restaurants. Why settle for poor service? If you want upscale Italian with good service and good food, do yourself a favor, skip this spot and head over to Lago, The Giada or Lavo. Won’t be returning to Carbone in Vegas or NYC!!

Management is terrible. Ive never been treated so poorly in my life. Specially in place supposed to be high end and as expensive as this. Too bad, because the food is amazing, just not all the guests have manners.

Honestly everything was absolutely incredible. We could have done without the clam appetizer. My boyfriend and I started with the baked clams , Caesar salad (incredible ), spicy rigatoni ( el Dante made absolutely perfect) the veal parm, and a side of mushrooms. You table get complimentary cheese, meats, pickled veggie and bread which was delicious. If I knew that was coming I wouldn’t have ordered the clams. After the pasta we were struggling we were both sooooo full. The veal parm could serve 4 people easily! Portions were huge

Food was fantastic as expected. But service was extremely poor comparing it to the welcoming, vibrant service as the New York location. I would not return due to the petty & unprofessional maitre d‘s and waitstaff. We had a 9:45 reservation, got there at 9:15 and saw at least 10 open tables for two. We were advised that we would not be able to be sat until our reservation time. The ten open tables remainded empty until we ended up getting sat at one of them when the clock struck exactly 9:45. Frankly I think we would’ve been sat sooner had we not had a reservation.
One of the best meals in Vegas. Without a doubt I will visit Carbone every time I am in Vegas. Try New York’s lucattion it’s also outstanding.
This was our second visit, had a great experience the first time however this visit was a bit different. The food remains excellent, bet the service was terrible. It was not quite top notch the first time but this time it was horrible. We believe there was a VIP in our section that was getting all the attention, came in after us, served first and always had water and drinks. No excuse. If we return, probably just sit at the bar...
The food was really good, the service exceptional, however it was too noisy and quite busy to be considered a 5 star.
The food was perfection - the heirloom salad should not be missed. The downside was ampretentious waiter who did not pay much attention. Inconsistency in offering the special pre-dinner items.
Veal Parmesan is best ever. Love the brat pack feel to the restaurant, and the service is beyond anything I have ever been to. Go there every time I go to Vegas!
This restaurant was just fine... nothing memorable other than the bazaarly rude servers. It was so blatant we initially thought it was a pretend ‘tough-guy’ act since it was consistent amongst all the servers but then by the end of the meal we realized it wasn’t ‘character acting’, it was actual unhappy bad servers. Too many other good restaurants in Las Vegas to waste your time here. The bread was really tasty and the food was just average.

My wife and I love Carbone. It is always fantastic. We are locals too so that tells you something. We had a great dinner and special props to Richard, who always does a great job!
Food and service was phenominal! This is a place that is pretty upscale and dress should be more than casual, as I felt my wife and I were underdressed. I think this would be a great place for group get together. It is a little loud (background music) for a date atmosphere, I would say. Overall wonderful experience.
We've been there twice. It is outstanding. Food is delicious! Service is phenomenal! Wine list is wonderful and the fact that they have a sommelier to help you decide is fantastic. We go to Vegas at least once a year for our anniversary. Always stay at Aria. We will definitely be making Carbone's a permanent part of our agenda. Just a fabulous evening.
Although the ambiance and service were outstanding, we found the food to be average but extremely overpriced. $28 for a bowl of pasta is ridiculous and it wasn't even cooked properly. The Caesar salad at over $20 was mixed and dressed tableside, and was good. My friend had the Veal Parmesan and didn't even finish it. Overall, overpriced and pretentious. I would not recommend.
