One of the BEST Italian meals we have ever had. Bonnie, our server was extremely knowledgeable and so passionate about the food and her job that she made our dining experience so much better. We would recommend this restaurant without hesitation.

Absolutely TERRIBLE service and very disappointing food quality! We had to send our food back multiple times and each time it was incorrectly prepared! Very unprofessional staff! Inconsistent and very rude for the type of busy they want to portray themselves as they are no where near as great a quality as Giadas!!

This has been my favorite restaurant for years, however the noise level was too loud for a conversation this year and the server would not even ask to turn it down.
He was frequently inaccessible and even absent for the entire second half of our three hour dinner.
The food was excellent as always, but I had talked up the service and ambiance so much, I felt like I left our client’s feeling underwhelmed.
Annual trip to Vegas is not complete without dinner at Carbones. Athena was an excellent server as was her compadre, who we forgot his name but he was originally from Missouri. The table garnishes could be an app all to themselves. The table side Caesar was outstanding and their take on croutons is mouthwatering. We split and order of vodka rigatoni, veal Pharm and potatoes for dinner. No room for dessert. Make reservations and don’t be disappointed.
Pasta was over cooked and the 2 different pasta dishes we ordered taste exactly the same. Service was amazing
Brought my wife for dinner. We tried eating here our previous 2 trips but didn't get the chance because we were unable to get a reservation. The food and service were on point. Carbone is highly recommended.

I've dined at the Carbone in NY a handful of times and sadly, this location doesn't hold a candle to the NYC location. I thought the food was good, but the portions were super chintzy and our pasta came out cold. We were so hungry we didn't complain but I was disappointed and I could tell my friends were too. There are a handful of incredible Italian places in LAS but I wouldn't throw this in that category. If you can get a resi in NY, experience Carbone at the mothership - don't do it in Vegas.

Amazing food and overall experience! Highly recommended. The ambience is really fun. The staff are well acquainted with the menu and excited about the food - which was awesome.
Service was a bit disorganized (accidentally put a second bread on our table then came back and took it back because it was for a different table... about three minutes later and cheese came 5 min after bread and meat.

No more Nick means no more us dining at Carbone in LV. What a shame. I know we are not alone on this thought. Replacing bartenders with machines may sound good on the front end, but if you don't have customers to serve it is a pretty stupid move. Way to let the mighty dollar cloud sound judgment MGM. Bye bye!!!

One of the best meals I have ever had!
I absolutely love this place! It is a must visit while in Vegas! My boyfriend and I always start with the carpaccio which is amazing. We change up our main dish quite a bit, but on this occasion we decided to do a dinner of all appetizers. The clams, chopped salad, octopus and potatoes louie were all delicious. The service was excellent. We were so full from out appetizers, we ended up skipping dessert but the cookies they serve with the check are the best. I ordered a margarita from the bar which was very tasty. The limoncello served with dessert seemed a bit stronger than I remember it, but still a great palate cleanser as always.
Had a wonderful dinner start to finish, excellent Italian food.

We were referred to Carbone by my boss and we’re so happy we took the recommendation!
We made a reservation on OpenTable, we were greeted and sat promptly (reservations were booked solid all night). Our server was Bonnie and she made the money we spent on dinner worth every penny because of her sweet attitude and recommendations. The sommelier, (I think his name is Blake) was also super awesome and extremely knowledgeable. We bought two bottles of wine, we had the caprese, muscles, lobster appitizer, lamb and vodka pasta and were full and extremely satisfied!!!
We spent a lot of money at dinner but we really I felt like it was worth every penny! We will totally be back!

Outrageous pricing even for Las Vegas! Had what looked like a 4 Oz glass of Cab for $27. But what was utterly a rip off was to be charged $110 for sole picatta!!! We were shocked and when we questioned the price the waitress said it was “market price”. $17 for a side of broccoli rabe. C’mon!

A visit to Las Vegas is never complete without having dinner at Carbone, a throwback to how old-fashioned restaurants looked in New York's "Little Italy" -- but here the food is extraordinary. And on this most recent visit we were lucky to have their premier waiter Sal managing our order: appetizers were a cold seafood salad and prosciutto and multi-colored melon balls, and for the main course Zuppe de Pesce and a double pork chop smothered in roasted peppers. Dessert is always their signature Carrot Cake along with usual coffee selections. PLAN AHEAD and book your reservation at Carbone even before you reach Vegas as it is extremely popular and frequently fully booked during popular times for evening dining. It is conveniently located on the Promenade Level of ARIA Hotel and Casino.
The food was so good, but pricey! Would have eaten here twice in a row...and wish we had!

Awesomeness. The Ceasar salad is not to be missed. Vongole and Vodka pastas were amazing. Even their bread game rocks. Service was professional and fun in an old fashioned Italian way. Love Carbone - and it’s much easier to get in Las Vegas than the original NY restaurant.
