Waiter was extremely rude, this place has very good food but the rude waiters attitude is the only thing i remember when thinking about my experience.

Well worth it! This restaurant serves a complimentary plate of Parmesan bites, spicy salami?), a variety of freshly baked bread and focaccia to start of at every table. They top it off at the end with Limoncello. Nice touch!!

As always absolutely incredible. The server and sommelier were amazingly helpful and the food was incredible. The carpaccio is out of this world.
We had the unfortunate experience of eating here this last weekend. As soon as the captain (the guy in the maroon jacket) saw that we were "only" going to be spending about $300, he was immediately cold towards us. He rolled his eyes whenever we would ask for something or ask a question, never checked on us, ignored us completely. He was Mr. Personality to other tables even offering them free limoncello, but not us. I wasn't aware that spending $300 on pasta was unacceptable. For the record, we would have ordered some alcohol with dinner, but we didn't want to spend one more cent there. We told the manager about him as we were leaving and asked that the full tip amount be given to the waiter, who was delightful, and not the captain. This was extremely disappointing as when we dined there a few years ago, our service was so amazing that we decided to go back. It was like it was a different restaurant this time. In a city that is so heavily service dependent, we expected more. We won't be returning.
Upscale Italian/American restaurant inside the Aria Hotel. The staff provided great service during the evening. Allow yourself plenty of time to enjoy the meal and experience. The homemade limoncello was a nice touch to finish the evening. I highly recommend Carbone.
A classic - very good food, great Ceaser salad and the fish was outstanding
Terrific service. Our waiter recommended how to order with sharing plates and it was perfect. If you are feeling like steak, the porterhouse for two is incredible. Expensive but incredible. We all loved the meal.
Carbone exceeded our expectations in food quality and service. Everything was outstanding. The one issue is the Price range. It is identified as a “$30 and under” kind of place, but there is basically nothing but appetizers under $30. Most entree level dishes were $35-70, with the market Branzino at $135 the night I was there.
So, a great place, just in a higher price category.
Service was the worst i have ever seen
Love the location of this restaurant. And love the atmosphere. We enjoyed listening to Perry Como, Rosemary Clooney and others and apparently so did the other guests and wait staff as we could hear them singing along, as we were. First they brought us our cocktails, then three different types of bread with a small block of delicious cheese and yummy salami. Our waiter suggested our foods, and we took two of the three suggestions. We ordered carpaccio and it was very good, but not the best I have ever had. We had a chopped salad and then split an entree - rigatoni. Both were good. We chose not to have dessert, but watched as the waiter made bananas flambé right next to us. We were each given two small slices of cake and they brought a bottle of homemade limoncello to our table!! What? It was delicious, but very strong. Great place and we will definitely be back!!

I had high expectations for Carbone. The service definitely lived up to those expectations. However, the food for how it was priced left some things to be desired. Bright spots - carpaccio, spicy rigatoni. Weak spots - Veal Marsala (so fatty as to be largely inedible) and the octopus, which was well cooked but the preparation was bland. Overall it was just ok. Italian is hard to do in a way that is outstanding and worth the extremely high prices that they are charging. It was good, but forgettable.
We chose this based on Open Tables $ rating. Surprised to find out that it was for each course. $64 for veal parmigiana seems a bit steep in any world. Food was good but nothing to rave about. Please update your $ system so others aren’t quite as shocked.

Our favorite Italian restaurant in Las Vegas. Every thing on the menu does not disappoint. A lot of food. Your own bottle of limoncello to drink as much as you want with desert is a very nice touch. Jason knows his wine. Ask for him for recommendations. Dion is the best Captain. Personable and helpful. Their meatballs are as good, or better, as another famous Italian restaurant in Las Vegas where everyone raves about their meatballs.
Veal parmesan and rigatoni ala vodka sauce were phenomenal. The calamari, house potatoes and bread were OK. Bonnie was a passionate, knowledgeable server although she did steer us to the forgettable potatoes and calamari.
Food was excellent, waiter was knowledgeable and attentive. Good atmosphere and it was a good place for our business dinner.

We had some high points and low points, but our overall experience left us feeling like we had spent way more money than it was worth. Let me start with the high points: the room is beautiful, ambiance is great. Jason the Somm on duty was very helpful and found us a delicious bottle of wine at a reasonable price. There was a server assistant named Mike who was also very helpful. And Saul, a head waiter, not ours, who was very friendly and helpful as well.
On the low side, our celebration was noted in the reservation, but never acknowledged from the time we entered to the the time we left, until I asked Mike. He immediately brought a candle and dessert as a gesture. Our server Jim was less than personable, seemed distracted most of the time, and never checked on us once the food was served. Had he done so, he would have been able to correct a problem with a side dish. Instead, he told us when clearing dishes that we should have made eye contact with, and then he would have come over. Once he cleared the dishes and we had voiced our complaint, we never saw him again. Saul seemed to take over from there, and was much more personable and attentive than Jim had been. As it was, the food was good, but the WOW you expect at those prices. Thank you Jason, Mike, and Saul for your help.

This was our best dining experience that we had this trip to Vegas! Menu items and wine offerings are definitely pricey, but the food quality and service was well worth it. We’ll definitely be back next time we’re in town!
We love Carbone!!!!!! Everyone is so friendly and persible. Bonnie is one of a kind. She always serves our table when we come out to Vegas. She is very knowledgeable and always recommends the finest dishes. Thank you so much Carbone. Looking forward to our next Carbone experience soon.
Service wasn’t exceptional for the price. Appetizer came out after entree. Table was neglected. Drinks weren’t replenished. Service just wasn’t what we’re expecting.
