A word from The Partisan
Joined at the hip to Red Apron, Chef Anda's groundbreaking butcher and charcuterie shop, the restaurant and bar draws heavily from Anda's line of house made products and relies on the meticulous sourcing that has made Red Apron the first and only butcher shop in the nation to use 100% Animal Welfare Approved pork. Anda and Chef Ed Witt's charcuterie program at The Partisan draws from 100s of cured muscles, pates, and sausages, showcasing over 30 different products on any given night.

The balance of the menu is broken up into a series of meat-centric composed dishes highlighting distinctive cuts, cooking techniques, and animal breeds. The portioning encourages sampling, sharing and customizing, which allows guests to construct a completely unique dining experience with each visit.

  • "I went to the Partisan to see some old friends who were in town, because it was connected to the Red Apron Butcher at Union Market (my favorite place there). I was definitely impressed at the range of options available, all served tapas style to share. If they have it, try the sour beer. It may be an acquired taste, but if you can acquire it you'll be better for it. Also, if you have vegetarian friends or those who only eat fish and chicken, there are plenty of ways to assemble a meal from the offerings on the menu. I'll definitely be coming back."

  • "I knew my husband would enjoy Partisan because it's all about the meat. I knew I would because of the portion options, which allow for lots of tasting and mixing and matching. We selected three items from the charcuterie; each had its own wonderful and distinctive flavor just as the menu promised. Hubby can never pass up foie gras and Partisan's stacked up with the best. While his arteries congealed, I had an excellent warm kale salad. Lamb was unavailable but I was encouraged to try the pork ribs, which were not on the menu. They melted in my mouth. We also enjoyed fennel sausage, the house steak and the fried apple pie. The drink and wine list is very well conceived. The only disappointment was a not so great cappuccino."

The menu brims with unconventional options and reinventions of classic dishes. Everything we had was exceptional, from the excellent cheese slate to my steak with a Latin flair, to our fried--yes, fried--apple pie. But what everyone MUST experience at Partisan, and what truly sets it apart, is their outstanding charcuterie program. The range of flavors they are able to impart to different types of cured meat is nothing short of astonishing. The butchers (jointly associated with Partisan and Red Apron) elevate charcuterie to an artistic plane."

The half-portion items should be welcome by the small-portion eaters.   • "Arrived early and were seated in the bar until dinner service started. Thought about eating there, but a noisy couple seated themselves next to us so we went to the table. I was delighted with the three spicy meats I selected from the menu but disappointed that kielbasa was no longer available. My date thought her lamb pasta was a little dull but liked the other things she selected. We look forward to returning to the Partisan and wish it were open late enough for dinner after shows at the Lansburgh Theater around the corner."

  • "I have been a fan of Red Apron since moving into DC in 2013 and when I caught wind of The Partisan opening just down the street from where I work I was excited! It is my favorite "go-to" restaurant for a quick bite, drinks, dinner after work or even lunch when I need an amazing sandwich! The beverage program is amazing and the bar area is so beautiful you forget you are in the middle of Penn Quarter."

  • "There are lots of choices and because you can order anything from small plates to entrees you have the opportunity to try a variety. You can order pates and meats individually allows you to make your own combinations. Everything we ordered was cooked and seasoned perfectly and the small burger was one of the best burgers we had ever eaten. The staff knows all of the food very well and was very helpful. Red Apron is next door so you can pick things up and take them home for another time."

  • "Went with a friend to celebrate a birthday. Ordered a few small dishes and split the porchetta. The kale and mushroom salad was good and had potential to be great, but it was slightly overdressed and was drawning in the dressing. The various charcuteries were great, as was the homemade bread. Wouldn't recommend the squash blossom as it's so delicate and the way it was served made it taste like tempura. Beef fat fries as good as everyone has said."

  • "The sausages and smoked meats for the charcuterie were quite good, though the board was definitely missing olives and cheeses. It would be nice if they carried gluten-free bread options for those with allergies. The wine list was quite extensive, though the "half-glass" pour is more like a half of a half-glass, so save yourself the disappointment and get a full glass. That said, the Qupe syrah was delicious and the savory notes well paired with the pork and beef options. The cocktails were too pricy for justifying a taste."

  • "This is probably our 5th or 6th time at the Partisan. If you haven't been, don't hurry, RUN to get a table at Partisan. I'll challenge you to find better charcuterie on the East Coast - and that includes Manhattan. The theme of the food is "simple" dishes taken to incredibly high levels. The meat dishes in particular are out-of-this-world. All of this would make for a great experience, if it weren't for the wine list. Sommelier, Wunderkind Brent Kroll, turns this into an absolutely outstanding experience. You must try their version of the summer of Riesling. There's no restaurant we have ever been to - and we've been to a LOT of them - where you'll find a more amazing high-end selection; and by the glass no less. Incredible!!!!!"

  • "Visiting from Toronto, Ontario, Canada, we were looking for some fantastic eats in DC, and this came up! We originally booked reservations, but ended up arriving late due to some last minute plan changes. Regardless, they were able to accommodate us for a later dinner service. Food was overall very good and their butcher shop experience shines through in the food. The meats and dishes were all well executed save for one caveat. My partner and I found some dishes to be on the salty side. We brought this to the attention of the waiter who only laughed it off and said 'that's why we have water!' I'd come here again for the sandwiches and a few select items on the menu. Bolognese was very rich, pasta tastes fresh made, but too salty."

  • "This is a restaurant with some very fun and very creative food, as well as a lengthy charcuterie selection that would be reason enough for a visit in itself. Plus our server was terrific - knowledgeable, helpful and funny -a rare combo. Especially liked the pickled half smoke, triple stack burger, kale and mushroom salad, and the heirloom tomato salad with pickled peaches (new the week we came). And definitely try to leave room for dessert - but it will be hard to do!"

  • "Our party of four dined at The Partisan for a birthday. The "birthday girl" loves meat so we thought she'd appreciate the restaurant. Bottom line: it was great and we all had a great experience. We started with charcuterie and a cheese board and we weren't disappointed. Our server made recommendations as to which to select; all were delicious. We followed up with selections from the regular menu. All four of us had something different (burgers, quail, roast beef, fried chicken). We left room for dessert, and since it was a birthday celebration, one of the desserts came with a birthday candle. Warning to potential diners: the meal may bust your diet but it will be well worth it!"

  • "Decided to try this place particularly due to the fact they serve charcuterie with tigelle, something that is quite uncommon outside Emilia. We started with the "Eternal Hamnation" that, excluding the culatello, was awesome. The tigelle were perfect (although not many) and the fried sticks (they fry the dough of tigelle) were great. The tartare was the biggest disappointment (not raw enough) and the lambchetta was meh. However, the Bolognese (why this name?) was awesome: I really wished the portion was bigger. Finally, we opted for the Snicker terrine (very good) and the fried apple pie (awesome, the bacon caramel is to die for). Nothing to argue about service and ambience, our server was kind and attentive and the place is very nice."

However, the salads were very bland and 3 of the 4 entrees we ordered had problems: overcooked dry fried chicken, tasteless secreto and a porchetta that was nothing more than a slab of fat. The burger was terrific. Desserts were also very good. So, half the meal was good, half was poor. Our group was mixed on whether or not we would return."

  • "Took my family here on a Friday night for Father's Day Dinner. Reservation was for 5:45, table was ready - we had a six top for 5 of us and we all had plenty of space. The food was unequivocally fantastic. The meatballs Mom ordered were so light and airy, the porchetta was heaven, and the 80 day rib eye divine. Our service was impeccable. Jurgen was pleasant, helpful, and accommodating. He was there when we had questions without hovering over us. We were there for three hours and not once were we made to feel as if we should hurry our pace. I will be back. Many times."

  • "Red Apron is a great place, especially at Union Market, so dining at the Partisan was a much-anticipated event. But there was a little _extra_ anticipation because we were on time with a reservation but they'd overbooked. So we hung out in the bar. Nice cocktails. We never did actually get a regular table but were seated in the bar. Only issue is that the decibel levels were much higher in the bar than the dining area. They did comp us an appetizer. Service was attentive and gave a good explanation of the complexities of the menu. Food was quite good and the small portions offered a chance to try multiple items. And make it worth going back and trying others. Not super pricey either."

Restaurant portion of the place is quite small, with the back of the building opening up to a large bar area with high ceilings and dark, warm décor.   • "I truly enjoyed my girl's night out with friends visiting from out of town. We truly enjoyed the ambiance! When you walk into the restaurant the mood is set with dim lighting against the exposed brick walls. When you enter you will find quality charcuterie which you can order for appetizers at your table. We began with olives, nuts, prosciutto, honey, a delicate Italian bread/pastry. To accompany our hors devours we enjoyed a few glasses of sauvignon blanc which was divine. Our hors devours were followed by four different salads that were incredible (highly recommend the kale salad), a whole cooked fish, and the roasted then fried chicken. The service was also wonderful as the servers had excellent recommendations and were so kind!"
