Carversteak is a reimagining of the classic steakhouse experience offering dry-aged American steaks from artisan producers, Japanese-certified Wagyu steaks and playful vegan selections in a modern environment.

The steakhouse features an expansive bar, a plush main dining room, two private dining rooms (The Knife Shop and Whiskey Room) and a sweeping outdoor terrace overlooking the Las Vegas Strip.

Executive Chef Daniel Ontiveros’ menu highlights include a 42oz Tomahawk Rib Chop, Lobster en Croute (a whole Maine lobster cooked in a puff pastry shell) and a bounty of raw bar items including Hamachi Crudo and seafood towers.

Accompanying the menu is a dynamic beverage program from famed mixologist Francesco Lafranconi featuring seasonal cocktails, an extensive wine list and a tableside martini cart.

PLEASE NOTE: On Friday and Saturday reservations; guests under the age of 18 must be sat by 6:45 pm. Dress code is business casual; flip flops, sandals and hats allowed on patio only.

    Table of three - we split 6 oysters, the burrata salad, spicy salmon, 10 oz filet, halibut, side of mushrooms, and potatoes au gratin. Everything was incredible! Collectively, we agreed the mushrooms were the most incredible thing we’ve had in ages. They were unbelievably good and we could have polished off three more rounds of them. The spicy salmon was also top tier. I wouldn’t call them spicy, but very flavorful with a great crunch from the rice. We also each had a drink from the Aperol Spritz bar, and everyone loved them. One is plenty since they are enormous and quite strong. And to round out the night, our server Jonathan had us cracking up all night long. He is everything a server in Vegas should be, and we were so lucky to spend our time with him.

    Our 4th time at Carversteak did not disappoint - this was for an event (my daughter's HS graduation). We were a party of 10. The only minor blip is my son said his caesar salad did not come out. Everything that did was delicious!

    Searching for a great steakhouse with at least decent vegan options is nothing short of difficult. I wanted to treat my boyfriend to a nice dinner at a steakhouse. Carversteak has seriously blown away any exception I can have for the quality of any vegan options that are available at a steakhouse. They provide a separate vegan menu (upon request) with multiple delicious and creative options. For an appetizer, we had the vegan calamari and the chickpea fries. Both were fresh and flavorful. For the entree, I got the vegan chop. At first, I thought it would be a bit dry given there was no sauce to accompany it. The balance of how it was prepared and the vegetables it was served with proved me wrong though. The flavor and overall consistency of the dish were perfectly combined to make a hearty tasteful dish. From the elevated and intimate setting, the wonderful staff who bend over backwards to create an exceptional experience, and delicious food. I cannot recommend Carversteak enough especially those who have groups with various diet preferences.

    Carver Steak was absolutely incredible. We started with the crab cake and a delicious salad with mandarin oranges, lettuce and the best dressing. Our entrees were amazing. We ordered prawns and steaks which were cooked to perfection. The gratin potatoes completed our meal. Tom was our server and he was outstanding. Thank you for a memorable evening!!

    Phenomenal from the moment you walk in to the minutes it takes to roll out. Visited a year ago, really wanted to come back on the next trip, and they did not disappoint. Amber was a welcoming server, we enjoyed her personality and demeanor, and the other assist staff were great too. Everyone was on the same page at every step of service, which is something hard to find even at the highest-rated steakhouses. Carversteak was a restaurant we’d recommend to friends visiting Vegas, and we will continue to do so going forward.

    It was a top notch steakhouse experience from beginning to end with the most amazing offerings. We started with a nice little treat of caviar poppers and wagyu steak skewers that danced with flavor on your tongue. The striploin was melt in your mouth perfectly prepared to rare plus and accompanied by roasted broccolini and onion rings that were equally yummy. Thank you to the team at Carversteak!!
