Having both started cooking at a young age, our executive chefs Kim and Daniel have a combined experience of over 26 years in the hospitality industry. Their work experience includes various positions in the most celebrated restaurants on the planet, such as Per Se (New York), The French Laundry (Napa Valley), Alinea (Chicago) and El Bulli in Roses Spain. Most recently, Kim and Daniel served on the executive management team at the three Michelin-Star rated restaurants “The Restaurant at Meadowood” in Napa Valley.Continued

We had the impromptu tasting menu (along with the wine flight) and it was incredible. A splurge for us, but you could be equally happy to choose from the menu and not spend more than you would in the other nice restaurants around. Friendly and professional service. One gives you the complete experience of modernist food without any of the pretension. Just go!"

To some presentation out performed taste to others it was great. I appreciate the creativity and inventiveness. All loved the starter, bread and final chocolates. That said, I don't see this as my go-to restaurant. If one wants the "tasting menu", everyone at the table must order it. That was a big disappointment when I took guests there recently. Also the menu is very limited."

  • "I've enjoyed eating at [ONE] in the past, and this was my first time back since they retooled their menu to offer chef's tasting options. We tried the seven-course Impromptu Tasting and were treated to a well-paced variety of delicious dishes; some from the regular menu and some surprises (the flounder was a favorite, as were the pretzel rolls baked in-house). We were seated close to the open kitchen, giving us a fun view of the preparation. Our service was welcoming and attentive. If you don't mind being surprised by the menu (and they will ask about any allergies or other dietary restrictions), trust the chefs to provide you with a wonderful dining experience!"

  • "Five us went to One for an "event" dinner. It was spectacular - one sister said it might have been the best restaurant meal she'd ever had. For the basics: the service is superb and professional. The wine list is varied and reasonably priced (not cheap). The food is exotic. We're fairly foodie, and we had to have half the items on the menu explained to us ("What's a grouper cheek?"). This is not food for the unadventurous - no fillet and baked potatoes, even as an option. But all the appetizers we had were good (grouper cheeks turn out to be really tasty), and the mains were almost all excellent (the flounder option was sort of bland, however). Desserts - save room. Wow... Wow. Very highly recommended overall. We'll be back."

Given the reputation of ONE and the accolades recently bestowed by the News & Observer, me and my girlfriend were both disappointed with the overall experience. The food was certainly good, but not memorable. The wine was extravagantly overpriced, and the stingiest pour we’ve ever seen. The service was very attentive and professional, but as cold as the cement floor and insufferably stuffy. Come on folks, it’s okay for dining to be fun! The “chocolate” desert offering featured three tiny brownie buttons hidden underneath a whipped substance. When you visit a restaurant of this caliber, you expect more. Much more."

Beginning with the free "amuse-bouches" delectable "small bites" of incomparable flavor and presentation, all the way through to the inspired, sometimes whimsical desserts, this restaurant is a delight. We started with the grouper cheeks and duck wings, and each was delicious and beautifuly presented. We went on to the pork chops for two, and I do not believe I have ever eaten more flavorful ones. The vegetable accompaniments were fresh and innovative. The meal concluded with a splendid dessert and a free European-style delicious candy. I would be remiss if I did not mention that the wait staff was outstanding. Kudos also to the bartender as our drinks were elegant and perfect. One is Number One for us."

  • "It has been about a year since we last dinned at ONE during our visits to Chapel Hill. Our first visit was not memorable due to less than stelar foods. Since we really liked the look of the restaurant and its convenient location vis-a-vis the Aloft Hotel, we decided to try it again, and were glad that we did. While the service has been taken to a new level, the food was nothing short of fantastic. After two well prepared cocktails we started with the pansotti and the duck confit. Both were very VERY good. For entrees, we both had the chix/sea on the recommendation of our excellent waitress Becca and were happy that we had followed her advice. The dish was prepared perfectly, presented well, but most of all was to die for. We will be back!"

The chef volunteered to serve one of us the courses and wines on the printed tasting menu and, for the other, an impromtu chef's choice menu and paired wines.   • "This meal, this evening elevated our dining experience to place in our all-time Top Five Dinners! We selected the 6 course Valentine's Day special and were not disappointed. Each course had different tastes, unique presentations, along with impeccable service. We love new dining experiences and this one was one the the best ever. For me the best course was the flounder. Normally I don't expect much taste in flounder the further I get from the coast, but this dish was the exception. This is our 4th or 5th visit to One and it continues to be our No. 1 restaurant in the Triangle Area and is in our Top Five restaurants we have visited anywhere!"
