Though tucked inside a casino hotel, I quickly forgot that's where we were. The general decor is nicely done, but check out the Encyclopedia room if you have a party of 5 or more. The grilled lamb ribs had to be one of my favorites, imbued with a nice smoky flavor, tender and fatty, these went down easily with the subtle heat of the romesco. Another favorite has to be the skirt steak carne asada. It's a tender piece of steak complemented well by sweet piquillo peppers. Chicken fritters served in a shoe was a popular item at the table. These were crispy on the outside and hot and fluffy on the inside and had a delicious chicken and potato flavor to them. I found the meal at Jaleo to be good. Nothing stood out as extraordinary but the restaurant offered a good way to sample a bunch of different Spanish flavors. The potato puree w/ wild mushrooms was creamy and flavorful, and the foie gras cannelloni was a little rich but totally worth it. The Rossejat paella was great, although we weren't sure if the squid that was supposed to be on it was actually on it or if it was all shrimp. Staff was friendly and helpful. Or the stuffed piquillo peppers with gorgeous goat cheese. The iberico ribs were falling off the bone, pair them with the patatas bravas and you are in heaven. But wait, you finally arrive in heaven if you finish off with the Flan. Wine list was fantastic.

Be it the ethereal tortilla (an updated interpretation though I do like the homey thick tortillas), the salty sweet simplicity of the bacon wrapped dates and the classic pan y tomate, or the updated elegance of the beet salad (gorgeously roasted sweet beets, complimented with the refreshing bitterness of escarole, tangy goat cheese and the light dressing) or the new pork skirt steak. The latter was recommended by our waiter on a recent visit (John I think was the name) and it did not disappoint.
