The hostess stand was running about 20 minutes behind and accidentally sat another party ahead of ours, but once we sat down the entire experience was fantastic. The food is interesting and delicious and the service was timely and attentive without being overbearing. Our waiter was definitely busy, but very good. I like this restaurant because the energy and ambience is more like the "hot" clubs in Vegas that also serve food, but without the superior attitude - and the food is WAY better. In addition to more unusual Tapa, larger plates, and paellas, you'll find Tapas standards on the menu, but even those have been transformed through application of modern techniques and premium ingredients.
The service was fantastic. The servers were attentive, quick, and knowledgable. They also worked as a team. I couldn't ask any more of them.
Though tucked inside a casino hotel, I quickly forgot that's where we were. The general decor is nicely done, but check out the Encyclopedia room if you have a party of 5 or more. The grilled lamb ribs had to be one of my favorites, imbued with a nice smoky flavor, tender and fatty, these went down easily with the subtle heat of the romesco. Another favorite has to be the skirt steak carne asada. It's a tender piece of steak complemented well by sweet piquillo peppers. Chicken fritters served in a shoe was a popular item at the table. These were crispy on the outside and hot and fluffy on the inside and had a delicious chicken and potato flavor to them. I found the meal at Jaleo to be good. Nothing stood out as extraordinary but the restaurant offered a good way to sample a bunch of different Spanish flavors. The food and service was amazing! The smells coming off the grill are tantalizing! They had a separate menu ready for me when I told them I was a vegetarian. All they did was delete the meat only dishes to make it easy for me to choose-and there were so many things to choose from! The wine list is incredible. Everything is in small portions but absolutely worth the price. The Ibérico ham was phenomenal, as was the selection of cheeses. The potato puree w/ wild mushrooms was creamy and flavorful, and the foie gras cannelloni was a little rich but totally worth it. The Rossejat paella was great, although we weren't sure if the squid that was supposed to be on it was actually on it or if it was all shrimp. Staff was friendly and helpful. Our selection was on point with the help of this tool and a very attentive server. The food was overall very tasty. We ordered a lobster paella which was rich in flavor but very hard to eat since it didn't come with a seafood fork...I resorted to use my hands so a towelette would have been nice. The portions are small, tapas style, so make sure to order several items. Secreto Ibérico is amazing and done really well. The menus and decoration are very thoughtful as well, quietly highlighting details of Spanish culture. Old standbys like jamon iberico and cheese plates were equally good, but pretty pricey for very small servings- 6 plates for 2, half carafe of sangria and one glass of wine for $140.
Servers were great, attentive and helpful. Tried the sangria which was too minty for my taste, but switched to a nice wine from a good wine list.

Where to start? How about the olive app... Omg. Olive aka Adrian Ferran. Tiny spheres that explode in your mouth coupled with stuffed olives that are over the top due to the tasty little anchovies inside them. Next Jamon Serrano that melts in your mouth. Or the stuffed piquillo peppers with gorgeous goat cheese. The iberico ribs were falling off the bone, pair them with the patatas bravas and you are in heaven. But wait, you finally arrive in heaven if you finish off with the Flan. Wine list was fantastic.

Well, 1.... skip the paella, they used the wrong type of rice, it had the wrong consistency, pasty, and not tasty at all.... other than that one dish, everything was SUPERB ! This restaurant compares with all the top restaurants in NYC, and I've been to most of them. I like the small plate TAPAS business model, it lets your party try many dishes and eat as much or as little as they like. The service was excellent and the food was fabulous! We enjoyed the knowledge of our server in suggesting certain tapas, as there are many to choose from.
We enjoyed it thoroughly and will return on our next visit to Vegas. Be it the ethereal tortilla (an updated interpretation though I do like the homey thick tortillas), the salty sweet simplicity of the bacon wrapped dates and the classic pan y tomate, or the updated elegance of the beet salad (gorgeously roasted sweet beets, complimented with the refreshing bitterness of escarole, tangy goat cheese and the light dressing) or the new pork skirt steak. The latter was recommended by our waiter on a recent visit (John I think was the name) and it did not disappoint.
