A word from Cured
Cured – chef Steve McHugh’s first and highly anticipated gatropub opened December 2013 in the century-old building that once belonged to the president’s headquarters of the famed Pearl Brewing Company. This seasoned chef spent ten years in New Orleans as chef de cuisine for chef John Besh followed by two years at Lüke in San Antonio. Yet, his most sterling achievement has been beating cancer. After such a life-changing triumph, McHugh set out to open Cured, giving it a name that speaks to his feat as well as the artisanal cured meats hanging in view. It was with this purity of ingredients and hands-on methodology that enhanced his own healing process. This from-scratch, seasonal focus finds its to menu items like Sweet Potato Agnolotti with Bourbon Brown Sugar & Sage and Slow Cooked Heritage Hog with Smoked Andouille & Okra. McHugh has found a way to implement “gastronomic giving” by donating $1 from every charcuterie board order to a different charity each quarter.Continued

Diner Reviews
  • "Second visit to Cured. Needed a foodie hit while visiting SA. Tried the gumbo (nice orca) , sausage topped with an organic egg and pork poutine. Lot of great food so don't eat all the fries. Cured again"

  • "There was nothing wrong with my visit, but there was nothing special either. For the money, I'd go elsewhere. I was underwhelmed. Server was great though!"

  • "I had dined at cured once before, so had some idea of what to expect, but those expectations were absolutely blown out of the water on our recent dinner visit. Walking in you see the dry aging case and your mouth immediately begins to water. Our hostess greeted us by wishing me a happy birthday and informing us that the chefs table was ready. We were sat at the end of the kitchen line where we could watch all of the extremely talented cooks work their magic. We started with cocktails that were so good we almost didn't need to eat, The Cured was a lemon and thyme infused dream. After that, we ate until we were delirious. From appetizers to dessert the food was unbelievable, and our service was unparalleled. You must eat here."

  • "Excellent food and service. Delicious fresh hand crafted dishes"

  • "We tried Cured on the recommendation of a foodie friend. The occasion was an anniversary so we had plenty of time and committed to trying a lot of things, slowly, to really appreciate the breadth of the menu. Our experience was OUTSTANDING. We tried a 3 piece charcuterie, quail legs, fried oysters, some kind of corn muffin with bacon excellence, and the hot goat sausage. EVERY DISH was delicious. Another note is that we had a reservation for dinner but showed up early (because we were already at Pearl, browsing the shops). They (happily) seated us an hour ahead of our reservation and made sure our pre-dinner experience (kitchen opens for dinner at 5) was just as outstanding as the rest. We had a great experience and will be back!"

  • "Great food. Great service. Drinks varied from the usual bar drinks."

  • "Been to Cured a few times now. It's tucked into the nicest little spot at Pearl, and provided it's not raining, the courtyard out front is such a great place to enjoy the San Antonio weather while you wait (which is never long if you have a reservation.) The food is excellent-- unique menu items that change ever so slightly each time I'm there. The Poutine is the star of the show. My only complaint, and it's a big one, is the service is lacking. No mistakes on orders or anything, but they have zero personality. Every time I ask for suggestions I get blank stares or "oh, everything's good." It's sort of like they took the old concept of the snooty French waiter and stuffed it into a millenial wearing plaid and hip eyewear. Not a fan."

  • "The menu is like nothing you've seen in San Antonio. Different meats and cocktails than anywhere else. Excellent food and knowledgable polite service. An amazing beer menu that compliments the meats. The use of local Pearl brewery market vegetables was a nice touch."

  • "We met up on a weeknight. Our table was waiting for us and the waitstaff were very friendly. However, it was difficult to hear each other and almost impossible to hear the music. We tried cocktails from the menu, all which were strong and with unusual ingredients (e.g. green chartreusse, Burlesque Bitters). We then had the 6-item charcuterie, Wagyu Beef Tartare, and a lamb ravioli. These were excellent, although the lamb ravioli was a little on the small side for a "large" entree, two big ravioli. Lastly, we had a new fruit dessert, which was all right but would have functioned better as a palate-cleanser; it was extremely light and didn't have much flavor to it. We also had the chocolate and berry granita, which was delicious."

  • "Once we were moved away from a table set for 20 people, things settled into wonderful. Excellent service, nice Rose with the charcuterie. Best beet salad and heirloom tomatoes."

  • "The food was flavorful, the ambiance was nice, the service was excellent. Our biggest qualm was that we left hungry. The portions were less than filling. Maybe we ordered three small items (although two were supposed to be entree size). Basically, we wouldn't want to go back to spend a ton of money on dinner if we end the night hungry. Also (and we can't speak to this because we didn't order the items), stick with what they are playing up .... It is a restaurant that excels in meat and charcuterie. That is probably the way to go."

  • "We went to cured 2 nights ago and are still talking about how delicious it was. It is good to come with an open mind and leave the diet at home. The food and the service are outstanding. This was my third time there and it was great. Also, the Cured cocktail is delish."

  • "Overall it was ok. We had a 5:00 reservation and about ten minutes in the fire alarm started going off due to an AC repair. That lasted for 15-20 minutes and we had to relocate outside until the fire department cleared the alarm. It wasn't the end of the world and the manager apologized but you would think they would have offered an appetizer or dessert....something. Otherwise the service was really great and our server made spot-on suggestions. A few things on the bar menu weren't available. The charcuterie was magnificent! We all wished we had just ordered that, skipped the entree and had dessert. We all agreed we would go back, and give it a second chance."

  • "We selected Cured to celebrate my father's 80th birthday. It was a real treat for all. The beer, wine, and cocktail selection had something for everyone. Wes, our waiter was great at explaining the menu. His service manner was exceptional. The food, beginning with the charcuterie, was outstanding and well priced for the quality and variety. I will be going back to try more items or for cocktails and appetizers. *Note* You do need to make a reservation well in advance in order to select the time you want. I highly recommend Cured."

  • "We tried Cured for the first time recently and it was an unexpected surprise as to how good it was. Rachel was our server and was awesome! She was extremely knowledgeable and helpful explaining different things about the food and just providing an overall pleasant dining experience. The food unique and delicious. Portion size and pricing was spot. The interior decor was also very unique and enjoyable. We will return for sure!"

  • "We had a really great experience at cured. I was surprised by the menu variety and quality. Its more than a meat house! The waiter was very helpful with recommendations from the menu. Food portions size was perfect allowing one to manage four courses without loosening the belt."

  • "Reservation was pointless, seated in the back of the restaurant...food order took forever manager was not compassionate they lost our order in the kitchen, service was an issue with no compromise, never going back."
    Dined on 6/25/2014
  • "Excellent food, nice wine list, friendly wait staff are the hallmark of this place. Great charcuterie. A perfect combination was the vealwurst with the picked cucumbers that provided the perfect blend of meatiness and the refreshing crunch of cucumber or the unctuous pork rillettes which leaves you wanting for more. Perfectly cooked fish (though my dining companion thought the portion size could have been larger), excellent tartar (though this was too finely ground and was a bit gluey because of that) and a perfect gumbo, especially made fabulous by corn muffins with pork butter. Black rice pudding provided the perfect end with a touch of chewy nuttiness balanced well with peach and raspberries which refreshed your palate."

  • "We ordered eight dishes between the four of us. Three were great, three were good, two were terrible. The service was outstanding. The place became loud with the restaurant about half full. Dessert menu didn't include anything that we had to order, so we didn't."

  • "Very interesting restaurant experience. My wife and I had our monthly date night and wanted to try something different. Cured definitely met the bill. Very interesting dishes on the menu. We kind of worked our way thru the menu by sharing appetizers, salads and a couple of entrees. We are very adventurous when it comes to food. So we look for items we have never had before and that was easy to do with the menu at Cured. Don't know how many times we looked at each other and stated "That's Good". Of course they offer several safe dishes for those less adventurous, but if you want a neat experience and try something a little different, make a reservation and get over there. Place fills up real fast."

  • "This was my first time at Cured! My boyfriend I went there to celebrate our anniversary. We were so impressed with our waiter, the fast service, the decor and over restaurant ambiance! We will definitely go there again and recommend it to others."

  • "What a fabulous place! Great location. Great atmosphere. First rate service. Nice wine list. Outstanding charcuterie menu and nice food menu. Everything that came to our table was first rate (plus some). We would loved to have had a cheese plate with the charcuterie, but kinda crazy -- they don't have cheese. Without cheese in a place like this, I regretfully had to give it 4 Stars for "Food" and "Overall," which is unfortunate 'cause this place is 5 Stars across the board. If you're not a cheese lover, you'll love this place. If you are a cheese lover, I'd hold out for a menu change, as I am certain they'll straighten out this most obvious shortcoming on the menu."

  • "Great location and very easy parking. The atmosphere is vibrant and the menu is meant to be shared, which is nice. Our server also cleared tables- plan ahead to order more cocktails or for additional selections from the menu. The food was wonderful- well prepared and presented- and the choices were superlative. The wine list is pleasantly inexpensive."

  • "The food and drinks were fantastic. Went for a date night with my wife - we ordered the corn muffins and beet salad for appetizers and had the roasted leg of lamb and ravioli for our entrees. Everything was fresh (some items bought at the Pearl Farmers Market that morning), quite tasty, with good portion sizes. The beer menu was extensive with a lot of local craft brews to choose from. Looking forward to our next visit!"
