Waldhaus Restaurant - Fairmont Banff Springs Hotel
German-inspired alpine cuisine such as divine schnitzel and cheesy fondue are just waiting to be devoured in an atmosphere reminiscent of a rustic hunting cottage. With a large fireplace and a wine cabinet, we promise to set the tone for a memorable dining experience at our "House in the Forest."

The fondue was delicious, and very rich. We both wished they had provided more vegetables for dipping, especially given the price point.
The service was fantastic. The sorbet we had for dessert was wonderful!
We chose to have our wedding dinner at this venue as we were wanting to have a different cultural dining and food experience. We experienced our first fondue which was lovely, tasty and very filling. Our server was very hospitable and lovely. She made sure we were educated about our food choices and ensured we were enjoying our dining experience. We appreciated her attentiveness and overall excitement for our wedding celebration.

Honestly it could not have been better. From drinks to dessert every course was pitch perfect and the service never missed a tick. Even the floor show (a bull elk and his harem by the river) was super. I have not had schnitzel as good in many years and the sauerbraten short ribs were every bit as good. Fantastic.
Amazing service and food. Skip the restaurants at the Fairmont Chalet at Lake Louise and go to this hotel on the outer skirt of downtown Banff you will not be disappointed. We watched a heard of Elk while we at Waldhaus so cool. The Veal Wiener Schnitzel was the best I have ever eaten anywhere!
The venue itself is great, however the service was sub-par - our waiter did not seem to have the social skills to pick up on non-verbal cues. The chicken was fantastic, however the schnitzels were lack luster and our cocktails were not good.
Good menu with great local products skillfully prepared. Bier and drinks menu also very good with German/Swiss theme.
Service from greeting to shuttle service after dinner was excellent.
Best schnitzel ever... but not easy to access from the Fairmont on a snowy night.
Schnitzel was yummy and ambience was excellent. If offered bread, accept it for the pretzels alone. My only suggestion/advice for potential diners would be to arrive extra early if not staying at the hotel as to take advantage of the shuttle service. We self-parked and then had to scamper a good distance (downhill & down stairs) to make our reserved time instead of waiting for the next scheduled shuttle. Less of a problem for me, more of an issue for my 75 year old mom.
Location of restaurant is a little hard to find as it is tucked into the woods. European feel to the restaurant and the food is very good.
The Weiner schnitzel tasted like it had been fried in old oil.

Had the sauerbraten short rib and grain dinner. Both were excellent. Grain dinner a little richer than expected, buttery. Wish I had room for the apple strudel other diners were raving about. One there for a second night just for that dessert. Bar downstairs was fun for a pre drink. Server told us fun golf stories as we watched golfers and Elk! Great beer in both. May go a second time during this visit to Fairmont.
I think the worst part of the dining experience for us was our server. He barely spoke to us, he pretty much made us feel like we didn't belong at a fancy restaurant, he treated us like someone who wouldn't tip him so he just didn't bother with a good customer service. We went there as a treat for Dads birthday, but was very disappointed. The menu says the Käse Schnitzel comes with watercress and frisee but it didn't. Our plate only came with a big dry piece of schnitzel with literally 3 very tiny slices of potatoes and a tiny bit of lingonberry and thats it. Also, we had requested a candle for Dad with dessert, and our server literally just "dropped it off" beside him, didnt say a word to him not even a smile. For a 420$ bill i expected a little bit more, will def not come back and will make sure everyone i know knows how bad it is. We did tip our server 18% by the way, considering how horrible he was.

SMALL MENU, BUT EVERYTHING WE HAD WAS EXCEPTIONAL. OUR SERVER WAS KNOWLEDGEABLE AND PROFESSIONAL. DRINKS ON THE PATIO BEFORE DINNER AND ADDED TREAT. THE SCENERY IS OUTSTANDING. OUR SERVER ON THE PATIO ALLOWD US TO SAMPLES SEVERAL WINES BEFORE WE ORDERED A BOTTLE.
This made my quick weekend vacation seem over the top

This was one of the best meals we've had. I got the striploin and my husband had the sauerbrauten and it was amazing. Our waitress was attentive and very friendly. She took time to ask us about our plans and chat. We will absolutely return.
Best fondue in Banff. Amazing service, beautiful views. Every visitor to town must eat here!

We thoroughly enjoyed our dinner at Waldhaus. We had the fondue and it was one of the best that we have ever had. The combination of cheeses was great. Staff was very friendly and informative.
We went here with two kids and had a great meal. My husband had the classic schnitzel and I shared cheese fondue with the kids. Everything - especially the view in the turret room - was excellent!
Very nice atmosphere, beautiful views from our dining area. Excellent varied menu including fondue options. We had the pickerel which was excellent and just the right size portion. $170 including tip for two entrees and a couple glasses of wine. Would definitely recommend.
Restaurant isn't the easiest to find. Food is average and expensive
We dined at the Waldhaus at 6pm on 7/22 and sat in the back of the restaurant that faced the mountains, gorgeous views! The food and ambience was incredible and my wife and I really enjoyed that. However the service was absolutely terrible. Our server, I forget her name, was hardly welcoming or informative on menu items. I think she filled our water glass once and we hardly saw her or felt welcomed. There was only one or two other tables she was servicing as well. Hardly anyone in the restaurant. I just feel that if I'm paying a significant amount of money for a meal, the service should have matched it. Other than the service, we really did enjoy the amazing food and the great atmosphere of the restaurant.

Start at the pub and order a couple of German beers and pretzels. Then proceed to the restaurant and have the Experience. Cheese fondue, schnitzel, and chocolate fondue are all superb.

We were staying at the Fairmont -- I requested a table by the window (the main reason my husband wished to eat there - for the view). Arrived and there were several tables open - but we were seated elsewhere - while tables by the window remained open. Several moments later - they did move us.
Surprised that there was really no option for kids - so ours badly wanted the cheese and chocolate
fondue experience (at a crazy high price tag). One of our entrees came out sans any garnish.
Compared to how "special" everything else in the Fairmont was - and how "special" we were made to feel as paying guests - the experience at the Waldhaus unfortunately did not stack up.
Great food and great beer. Service was excellent too!
