The ambience was cozy and romantic surpassed only by the quality of service and attention from the staff. Extraordinaire is a word to describe how delectable was the food. Every dish was more amazing than the last. The crab salad was an unbelievable combination of flavors. Foie gras was great. The trout unlike any combination of flavors...kumquats added nice contrast. Oh I dream of my next trip to Omaha to visit V. Mertz. My only complaint was the volume of others conversations. In a small space, sound carries. Overall excellent experience.
Apparently the Chef is more concerned with JMes Beard ratings that he is with providing a menu that includes choices for everyone. No green salad. No potato choices. Limited entree choices. What choice would there be for children: kale greens, grilled cabbage salad. This menu is not appropriate for a midwestern restaurant. The bar could not make a Bloody Mary or a Margarita. That was ridiculous
VMertz has the best service and environment for find dining in Omaha. The food is innovative and delicious and the staff are professional and knowledgeable about food and wine. This is my favorite place in the city for a dinner date or a quiet evening alone.
I only marked service as lower due to an order of caviar never making it to us. Being gluten free also seems to impact the dishes pretty heavily as far as presentation, but was still delicious. Our server was very friendly and prompt on everything else.

We did the Tasting Menu and it was absolutely amazing. Truly enjoyed the wine pairing with it and having each wine and course explained.

V. Mertz is an excellent restaurant -- well trained wait staff and bar tenders, cozy and romantic ambiance in a cool location within the Old Market Passageway, and delicious food from a creative menu. Because of its high price, I would recommend dining there on only the most special of occasions.

Amazing! We adore V. Mertz! Every time we go it’s fabulous, from the French Martini to the charcuterie to the wine and the main entrees. The service is exemplary and the atmosphere sublime! I had the ocean trout and it was amazing! It reminded me of salmon and was very flavorful. Lovely desserts and after-dinner drinks. It is, and always will be, one of our very favorite spots in Omaha.
This was our first time at V Mertz and will not be our last! We were seated right away when we arrived and we greeted promptly by our waitress. She was very knowledgeable about the menu and gave us her recommendations which did not disappoint. For our main dishes I had the Waygu New York strip which was the best cut of meat I have ever had! She had the pork duet which she loved and could say enoug good things about it! We will dine again with VMertz in the future!
Great atmosphere and food. It is a little bit more expensive but not outrageous by any means. It's a nice restaurant so its expected that the food isn't "cheap." Great location as well! Perfect for a date. Took my boyfriend when he came to town for Valentines Day.
V. Mertz was truly a wonderful dining experience. From the minute we arrived till we left, everything was great. I had the my strip paired with a red reccomend by the waiter (who was very knowledgeable about everything from drinks to food).
Always great food, never been disappointed. Can get a bit spendy but you get what you pay for too.

The made my 26th birthday a REALLY SPECIAL day. I would go there anytime again.
Our group of 6 started with meat and cheese plates. They were beautiful and tasty. I had a small foie gras for dinner because I ate too much cheese. My dinner mates had duck breast, chicken, smoked mushroom popovers and steak. Everyone comments the food was excellent. Ask for wine suggestions-we had Chablis and Chateauneuf-du-Pape.
I would describe the experience as impeccable. Attentive, traditional service. Enjoyed the amuse bouche, lamb with blueberry jus and Nantucket scallops. Very good and well paired with cotes du rhone. Nice selection of wines and cocktails- reasonably priced at that. So good thus far that I decided on a bite of dessert. Wonderful selections of cheeses and creme brulee were quite nice paired with champagne cocktail, although a bit sweet! Overall, the value was appropriate for the quality. I was surprised by the pistachio maccaroon at the end as I have had horrible experiences with macaroons in the past. This maccaroon put my doubts to bed. It was a delightful little treat to end the evening. Thank you, Dylan T, for a wonderful dining experience.
So far best restaurant in Omaha..great atmosphere, great service, creative and high quality food. Can be a little expensive so great for a special occasion!

My girlfriend and I were visiting from NY. To be clear we were not expecting Michelin quality food, but this meal was bad in a different way than just dining outside of Manhattan is.
We did the tasting menu which was reasonably priced at $80 for 6 courses. The cocktails ranged from 10-15. Opt for wine or beer, besides being poorly crafted they were fairly uninteresting.
The space itself is stunning, but it is furnished by lawn chairs concealed by dingy white padding. In case you forgot where you made your reservation, VMertz is plastered on all of the furniture.
The biggest problem was the length of the menu. It took three hours for 6 courses. We were not warned, and thankfully didn’t have plans after, but we’ve done dozens of tasting menus and are ALWAYS told about the time, especially if it will go over 2 hours. It is quite inexcusable as we’ve done 14-18 courses in 2 hours multiple times.
Every course deserves heavy criticism and there was not a single redeeming dish, but we’ll highlight a few particularly bad points.
The first non-amuse course included oysters. My girlfriend isn’t a fan, so we asked they be omitted, but the chef refused. I would have eaten them, but both of mine had sand in them.
Three courses had sauces or soup poured out of a large carafe. The server poured directly over meat (amateur hour!) twice and I had to stop him from pouring one directly over A5 wagyu. This sauce was wine-y and ruined my girlfriends otherwise well cooked beef tongue.
The cookie was made with a rancid animal fat instead of oil, the smell was off putting. In general, vinegar was over incorporated and everything was under salted except the steak.
Besides the cookie and sauces everything was actually cooked well. The restaurant would be fine if they stopped over saucing and dropped the tasting and pretense. A tasting menu should be driven by an idea. It is not 6 disparate dishes thrown together.
This restaurant is like a child’s idea of fine dining.
We will forever remember our 11th Anniversary meal with V.Mertz , what a fantastic meal all the way around. Impeccable service, a quiet cozy atmosphere yet you do not overhear conversations at other tables. The food was so complex and rich with taste and flavor you could not even begin to unpack the layers. The suggestions for drinks to pair with the meal were spot on and contributed well to the meal as a whole. We already consider this the best meal we have had dining out (including the restaurant in LaJolla California on our Honeymoon) and look forward with great anticipation to the next time we have the privilege to dine at V. Mertz again, especially as it is right here in Omaha! Thank you for a truly wonderful meal!

Have always wanted to dine here on our annual treks to the BRK annual meeting in May, but can never get in. Finally booked it one evening while passing though Omaha in November. Well worth it.
Our server couldn’t have been more accommodating. The pumpkin bread was amazing, as was the Waygu beef dish. Very romantic and quaint.
The food was amazing! The Charcuterie was delicious! The seasonal smoked mushroom popover was so yummy. The wage steak was cooked to perfection the brandy peppercorn cream sauce was perfect! Yummy!!!!!
Whenever we are looking to celebrate a really special occasion we tend to choose V.Mertz. This time it, again, did not disappoint. It was a little louder than normal due to a large group being there. The food and service was superb, although they have changed their steak option and it was not quite as good as it used to be.
This is our go to place for fine dining. Excellent as always.
A good tasting menu with about 1/2 the wine pairings really working. Portions a bit small but very artistic. If all the pairings had been complementary instead of some being sharp contrasts it would have been a more satisfying meal. They clearly try hard but miss Michelin star category with more glitz and slightly too little attention to finely balanced flavors and pairings.
