My girlfriend and I were visiting from NY. To be clear we were not expecting Michelin quality food, but this meal was bad in a different way than just dining outside of Manhattan is.
We did the tasting menu which was reasonably priced at $80 for 6 courses. The cocktails ranged from 10-15. Opt for wine or beer, besides being poorly crafted they were fairly uninteresting.
The space itself is stunning, but it is furnished by lawn chairs concealed by dingy white padding. In case you forgot where you made your reservation, VMertz is plastered on all of the furniture.
The biggest problem was the length of the menu. It took three hours for 6 courses. We were not warned, and thankfully didn’t have plans after, but we’ve done dozens of tasting menus and are ALWAYS told about the time, especially if it will go over 2 hours. It is quite inexcusable as we’ve done 14-18 courses in 2 hours multiple times.
Every course deserves heavy criticism and there was not a single redeeming dish, but we’ll highlight a few particularly bad points.
The first non-amuse course included oysters. My girlfriend isn’t a fan, so we asked they be omitted, but the chef refused. I would have eaten them, but both of mine had sand in them.
Three courses had sauces or soup poured out of a large carafe. The server poured directly over meat (amateur hour!) twice and I had to stop him from pouring one directly over A5 wagyu. This sauce was wine-y and ruined my girlfriends otherwise well cooked beef tongue.
The cookie was made with a rancid animal fat instead of oil, the smell was off putting. In general, vinegar was over incorporated and everything was under salted except the steak.
Besides the cookie and sauces everything was actually cooked well. The restaurant would be fine if they stopped over saucing and dropped the tasting and pretense. A tasting menu should be driven by an idea. It is not 6 disparate dishes thrown together.
This restaurant is like a child’s idea of fine dining.
We will forever remember our 11th Anniversary meal with V.Mertz , what a fantastic meal all the way around. Impeccable service, a quiet cozy atmosphere yet you do not overhear conversations at other tables. The food was so complex and rich with taste and flavor you could not even begin to unpack the layers. The suggestions for drinks to pair with the meal were spot on and contributed well to the meal as a whole. We already consider this the best meal we have had dining out (including the restaurant in LaJolla California on our Honeymoon) and look forward with great anticipation to the next time we have the privilege to dine at V. Mertz again, especially as it is right here in Omaha! Thank you for a truly wonderful meal!

Have always wanted to dine here on our annual treks to the BRK annual meeting in May, but can never get in. Finally booked it one evening while passing though Omaha in November. Well worth it.
Our server couldn’t have been more accommodating. The pumpkin bread was amazing, as was the Waygu beef dish. Very romantic and quaint.
The food was amazing! The Charcuterie was delicious! The seasonal smoked mushroom popover was so yummy. The wage steak was cooked to perfection the brandy peppercorn cream sauce was perfect! Yummy!!!!!
Whenever we are looking to celebrate a really special occasion we tend to choose V.Mertz. This time it, again, did not disappoint. It was a little louder than normal due to a large group being there. The food and service was superb, although they have changed their steak option and it was not quite as good as it used to be.
This is our go to place for fine dining. Excellent as always.
A good tasting menu with about 1/2 the wine pairings really working. Portions a bit small but very artistic. If all the pairings had been complementary instead of some being sharp contrasts it would have been a more satisfying meal. They clearly try hard but miss Michelin star category with more glitz and slightly too little attention to finely balanced flavors and pairings.

My wife and I had a great time. Appetizer, entree, and desert were all great. The wine pairing(s) at the suggestion of the waiter made for an all around memorable experience. For us, this is a destination dining experience and a for sure stop on our next trip through Omaha.

Celebrated our Anniversary with a cozy dinner for two. They had congratulations on the top of our printed menus; it was a nice touch. V Mertz is one of our favorite restaurants and everything was good this time, however, there was no "WOW" moment in our meal. We've had those moments here before but no single course blew either of us away this time. Everything was technically correct and the ingredients are excellent but technical expertise and precise attention to detail doesn't necessarily equate to creative genius. That's just us though, someone else might've been thrilled. The Service was also excellent but pacing was slightly slow between courses. The dining experience was still quite good and we enjoyed it.
We shared a few small plates so we could taste more unique dishes. It was wonderful!

My husband & I dined here for our 22nd anniversary for our first time visit & we must say it was spectacular!! We LOVED the food & what was super cool was they created our menu that said “Happy 22nd Anniversary” to our surprise!!! Definitely going to visit this establishment again!!!
We celebrated a birthday and one member of our party got the tasting menu, two ordered entrees, and two ordered off the small plates section. We all enjoyed sharing and getting to try the different dishes. The staff provided a description of the item and was very willing to answer questions about techniques, ingredients, and dish development. The meal was highly enjoyable and delicious.
Was one of the best dining experiences I’ve had in Omaha. Waiter was knowledgeable, attentive, but not intrusive. Food was artfully crafted and delicious. If you want to romance a gal, or even give her a ring, it might be worth doing here.
They made my 25th anniversary special. Even printed it in our menu. Our waiter was very knowledgeable on the wines and all the food. Very enjoyable experience!

Out of town family can into Omaha. We went to V Mertz for dinner and to experience the old market. The food and service was great. Our relatives thought the meal was one of the best they have ever experienced.
In Omaha for a weekend trip, looking to celebrate a milestone anniversary, and everyone told us to try V.Mertz. That was superb advice - we shared five small plates and two desserts; each plate was a delight, with seasonal ingredients, unusual combinations (say, watermelon and caviar) that paired wonderfully, and great attention to detail in preparation. The service was equal to the food, and the atmosphere - in what seems to be a re-purposed old brick warehouse in the Old Market district - was equally suited to an extraordinary dining experience. Well worth the trip to Omaha!
