Creole is derived from the many cultures who have settled in New Orleans, including; French, Spanish, West African, Caribbean, German, Italian, and Irish. Cajun is derived from the French-speaking Acadians who settled in the bayous south of New Orleans. The influences of the French are the most prominent of both cuisines. Almost all of our Creole and Cajun dishes begin with a stock (poultry, beef, or seafood), trinity (onions, green bell peppers, celery), and a roux (blonde, brown, or dark), lending a unique flavor to our Gumbo and other dishes.

It was created as a stable for a nearby Danish sugar plantation, and the walls are more than 2 feet thick. Ceiling fans and breezes blowing through the valley keep the place cool.

Everything was nicely presented. Fries on the steak frites were delicious; the steak itself was a filet and was slightly undercooked, verging on rare, but still passable. Specialty cocktails were good. We got a free dessert because we were staying at the resort next door. We ordered the chocolate cake, and it was delicious! Service was unobtrusive and responsive.
