    Definitely not back to the Vermillion we knew and loved. We were super excited to bring friends here for restaurant week and were thoroughly disappointed. The starters were tiny, salads were meh, and the beef short rib was the worst I have ever had. Nearly every restaurant has short rib on the menu in the winter time and it is usually a solid and safe choice. This was tough and chewy - not what you would expect of a long braised dish. The best thing I had was the dessert - a pistachio Bavarian. The wine pairing was generic and the pours were tiny for the price. This was so not worth the $235 we spent for two. I won’t be coming back unless I see a notable uptick in reviews.

    I love Vermillion. We had not been since before the pandemic and so I write this in hopes of offering helpful perspective to the team at a restaurant. Because -- I definitely want Vermillion to thrive. Two big issues with our experience last night -- one was that the restaurant filled up to capacity fast due to a great offering for restaurant week. Our party did not do the set menu, and perhaps that was our error. Because after the first course came, and promptly, it took a long time for entrees and even longer to get a dessert order and eventually dessert. It took us three hours to get three courses. We were exhausted. The staff was pleasant but seemed overwhelmed and we felt like we were lost in a busy noisy room. Second, our error was in ordering dessert...we asked for gelato (not on the menu) which was a single tiny scoop when served, and also melted by the time they brought it. The apple galette was tasteless and very poor presentation, and the crust was dense, chewy and had little to commend it. I would not order it again. I would however order the lovely pear salad, risotto, brussel sprouts, and my dining partners would recommend the beef options as well. So...very tasty food for courses 1 and 2, but an ambitious ratio of staff to tables and need for a upgrade on dessert. (Which I should note the restaurant kindly comped us on our bill.) I was thrilled to see this lovely gem of a restaurant filled to capacity, but if you go, bring your patience.

    Great meal. I chose the more obscure portions on the fixed price menu at Restaurant week. 4 courses. The first course was like a beet tart (galette)The beets were good, I do wish the beets were seasoned better and the chard had more presence. Marscapone and goat cheese as a garnish. Good complement. Second course carmelizes Brussels sprouts, nicely carmelized, plentiful, very nicely seasoned. Sea salted, olive oil, honey and chili added a nice flavor. Third course of short rib over fingerling potatoes. Small portion of meat with a gravy. Flavorful but didn’t blow me away. Wished there was more gravy for the 7 finger potatoes. Tender. Cooked well. Could have used an alternate flavor. Had a few cranberries that gave the dish some interesting complement. Final course for dessert was a pistachio Bavarian. Dried meringue and a bit of crumbled pistachios. Black figs soaked in red wine. Dollop of ice cream on the side. Interesting, the Bavarian was a lovely green color. Inside had a nice filling. Staff was super attentive, nice ambience… professional and friendly. Awesome! Overall a nice restaurant week meal.

    The food is solid, it's good. Reading the menu everything sounds amazing and creative. With that said the food is not special enough to live up to the description nor does is rise to the premium you pay. Service at the front desk and server was nice, welcoming and friendly, but they were also inexperienced and on the slow side for drinks. The ambiance and vibe is very cozy - really nice in every way. It's not a bad idea to try Vermillion if you sort of balance your expectations. There is a lot going right for them so I expect with some awareness and a few tweaks to the food and service it could be great. It will be a while before I try them again as there are so many places coming online that we need to try. So I would say off the list for now, but keep watch for improvement and maybe circle back in the future.

    They ran out of appetizers, waiter got testy when patron didn’t like wine. Other waitresses or manager came over and we ordered different bottle. She was nice. Waiter always rushed away. Brought vodka on rocks to husband without ice. Said he can’t stand his loud restaurant bc he has adhd. I’m sorry, but why is he working there?!? Shorts ribs were filled w grizzle. Won’t be back! They’re not the same restaurant as bf pandemic.

    The space is lovely, the food was excellent, and the service was very responsive. When we requested they slow down the service, they responded. Three comments are first that the wine by the glass was disappointing due to the limited selection. Location was listed, but not the vintage. The music was too hip hop for the ambiance. Finally, despite the dress code listed on the website, many were not dressed accordingly. Did that ruin our evening? Not at all. The champagne we received acknowledging a significant birthday was a lovely touch, and much appreciated over a dessert. We will be back.

    Really enjoyed our evening at Vermilion. The wine and spirits lists were really impressive, and the food choices were really inventive and delicious. Will definitely return again very soon.

    The food wasn’t spectacular and it took a while to get drinks and food after placing our orders. The server was nice and attentive. I ordered a cocktail that I didn’t like, too heavy on the shrub, and he said he’d take it off the bill. He did not. I didn’t want to be a pain so just paid for it.

    Energetic isn’t how I would describe the noise level. Upstairs should be alittle more quiet so that we could actually have conversations without shouting over the music. I understand downstairs with the bar but please allow customers to have options.

    Went for Christmas Eve dinner. It was disgusting. Appetizers were dry, salad was inedible, the steak main course was great, the sides were poorly done. Dessert wasn’t too good either and the price was very expensive

    My Husband and I have been to Vermilion several times, both before Covid and once after - this is the second time after Covid. I was expecting something a lot more from Vermilion for Christmas Eve and unfortunately, it fell short. The food was barely average, most of it was served cold and the ingredients that were described on the menu to be in each course were hard to be found. The most disappointing part of the meal was the dessert- a Strudel and Milk and Cookies. The Strudel had absolutely NO TASTE and the 3 cookies that came with the milk were each the size of a quarter. The service was slow, it seemed they were short staffed which is a product of Covid it seems, not only with Vermilion, but many other restaurants as well. Looking back, it was definitely not worth the price we paid for a less than average 4 course meal.

    Prix Fix dinners are hit and miss. This was a complete miss and could not justify what was served and what we paid. We appreciate the restaurant being open on Xmas eve to serve us but wow... never felt so ripped off. Very reluctant to return for regular menu. Compared to ada's on Xmas day... it was no even close. $105 for 4 course meal including trip tip? Or $69 three course including prime rib and stuffed halibut? Vermillion was not even in the same ballpark.

    Once again, expectations? Exceeded. From the warm greeting at the door to the impeccable service to the gracious staff, an amazingly wonderful experience. It's food and experiences and hospitality that draws us back time after time.

    This restaurant makes special dishes and there are only a few to choose from. I suppose because they are somewhat exotically made, by hand, that’s the reason they are so expensive. $30 for a roasted squash curry. The attitude of all the servers was great, but the time between courses was a little too long. The wine list was great.

    Second time here in a week and as a vegetarian, I returned for the winter squash entree. A++++ Dining companions immensely enjoyed their dishes of the risotto, the chicken ballontine and the tortellacci. The pear and fall salads were also extraordinary. Hope I can refrain from going back a third time soon!!! Highly recommended!
