Chef Valette's 'Trust Me' Tasting Menu

Chef Valette's 'Trust Me' Tasting Menu is created around local products, showcasing the best of Sonoma County, seasonal fish, and sustainably raised meats, along with produce grown in our estate farm, located just 100 yards from the restaurant. This experience begins at a minimum of 5 courses and can go up to 10 courses, featuring Valette's finest appetizers, entrées and desserts. The price starts at $75 per person, plus tax and gratuity. Optional wine pairing as well as additional food courses are available by selecting the appropriate add-ons. This menu is created for the entire table to experience together, with the same number of courses per person. Please inform our team of any allergies or dietary restrictions in advance.

Always a pleasure to dine at Valette. Food is incredible - must order the day boat scallops! We also had the dungeness crab stuffed petrale sole this time and it was amazing. Love the patio and staff can’t wait to come back!
Our dinner was fabulous. We did a 6-course tasting. Was really exciting to be “surprised” with amazing dishes for each course. We will go back next time we are in Healdsburg.
Fantastic experience. Highly recommend the prix fixe chef’s choice menu. The food was of Michelin Star quality for sure, and service was friendly and thorough even though we were eating outside. If they do the truffle pasta as a special you must try it. The only dish I was not impressed by was the charcuterie board, but I have never liked that at any restaurant. This was one of the best meals I have had in years. Please eat here.
I was looking for a delicious and inspiring dinner, and I found it at Valette this weekend. They did a nice job for outdoor seating: even with the windy, cold evening, neither the food nor the service suffered. The two of us went for the 5-courses chef’s tasting menu, and the chef delivered 10 different courses, all in impeccable flavors, textures, and presentation. While we had been to Valette a few times before the pandemic and often had a good time, this was definitely the highlight.
Can’t wait to go back again.

Fine Dining 2021—fine at Valette. Didn’t feel like outside in a white heated tent. In a shy mood, but WOW that lobster risotto was so my style! And I can rarely resist a filet mignon, with fresh shaved truffles right on top. My serve Sandra took great care , all staff were really on it.
I would tell you but I just wrote a very long commentary review that open table proceeded to loose, so unfortunately I don't have time to write it again. Please tell open table to up their review game, its pretty bad.

Overall we had an excellent experience, the waitstaff performed flawlessly and attentively, the small table being the only challenge. One member of our group of four was celebrating a birthday and Justin was generous to a fault providing us with some additional tastings. Highly recommended.
As always, the food, drinks and service is simply awesome. Have missed dining here this past year. Will make use of the outdoor dining opportunity more regularly again ! The tables are set apart a good distance and felt very safe and comfortable dining here .
The bartender created a new drink for me based on my likes and it was really delicious. Definitely a restaurant worth visiting again and again. We did the Chef’s tasting menu and it was totally worth it.

I have been a fan of this restaurant since its opening but now Valette is starting to price itself out of the affordability range even by Bay Area standards. My husband and I are familiar with the regular pricing structure but were blown away by the bill we received this past Saturday night. We were charged $80 for a steak special where there was no mention of price by the waiter. Yes it was big but perhaps should have perhaps been recommended as a meal for two. We were offered shaved truffle as an add on and it was not mentioned that it cost $15. We just assumed it was part of the steak special. The waiter suggested a Valette Cabernet to go with the steak which ended up being $44. How could a waiter suggest this without mentioning the price? It has been a treat for us to go to Valette but based on this we have decided not to return again.
Valette just keeps getting better! We had a fabulous meal in their beautiful patio 2/5 with great cocktails. We had a lousy dinner elsewhere the next night and returned without a reservation and they made our night! Adrian is a great server!

Valette is my favorite restaurant for any occasion. I love the appetizers the signature salad and seafood entrees.
Only giving 4 stars for ambiance because we have to sit outside and it was raining (totally not their fault)...but, we LOVE Valette and highly, highly recommend this restaurant to anyone. Our dinner (and the gin and tonics, with homemade tonic) was exceptional. Brava!
This is the best fine dining experience in Sonoma County. The ambiance is beautiful in their outdoor dining patio, covered for rain and many heaters. The food is exceptional and so is the service. We also had the pleasure of talking to Bob Valette at the end of our dinner and ordered the bread and jam dessert he suggested. This was his grandfather’s recipe. It was delicious!
Service and food was impeccable and welcoming. The highlights were the Vitamin V cocktail, the tuna poke (the greatest taste sensation and thoughtful combinations of flavors I have ever had in poke!), the coriander dusted duck breast was another study in perfect blending of flavors and textures to create the perfect bites. It was a very enjoyable meal outdoor in the midst of Covid, we were warm, felt safe and well fed, Valette is always a favorite destination.
This was my second time eating at Valette and first time outdoor dining here. It’s an absolutely outstanding experience and I continue to be a huge fan of this restaurant! Valette has made the outdoor dining feel comparable to the indoor experience and felt quite cozy even with the January chill. The food and cocktails are incredible, the service is attentive and helpful, and Valette continues to be a top 3 Bay Area dining spot for me. Huge fan.
Dining at Valette is truly an amazing experience. The food , the ambiance , and service are unmatched. We do look forward to going there whenever we’re lucky enough to score a table. Chef Dustin and his brother Aaron are warm and professional. They pour so much heart and soul into this place that you can feel the love. Their Dad , Bob, who walks around greeting everyone is a gem and a fascinating person who pilots fire fighting airplanes in the local area. Be sure to try the scallop appetizer which is baked in a copper pot with an amazing pastry crust and topped off with a pernod cream sauce and caviar. Magnificent just like Valette. Don’t miss dining here if you can get in 🤗👍❤️🎉

Delicious food. The scallop encroute appetizer notable. They brought bone marrow side (we did not order) with our Waygu beef special, five year aged, incredible. Forbidden rice to accompany. Hands down a food party. We will be back - chef came by to see what we thought. Great attention to detail. Five stars.
The duck is a near-perfect dish and one of my absolute favorites. The duck itself is amazing and flavorful with perfectly cooked skin, and sits on forbidden rice which is an absolute umami bomb. Then there is the spring-roll type thing-y which is crispy and not greasy - just tasty. And finally the bok choy provides a little counterbalance to all the savory flavors and adds a fresh, not overly seasoned flavor. It's always a little too much food, but I eat it anyway because of how good each element tastes. And let's not forget the bread and salted butter at the beginning - if you love fresh bread, this is irresistable.
Great vibe - love my Healdsburg hometown and Valette is a winner.
