This was the first time I've eaten here, even thought I've been here many times for Happy Hour (which is great by the way). Our waitress was great, she made some recommendations that we all loved. The kitchen did mess up on the toppings on 2 of our burgers, but quickly corrected and made it right. Food was delicious and will definitely recommend this place to others. But not too many, because I don't want it to get too crowded ;-)

Perfect booth in the bar/happy hour area so nice and dark, intimate and didn’t feel as loud as usual in the open area. Love ordering off the happy hour list and sharing for dinner! Perfect date night.
We all very much enjoyed our meal. The steak salad was delicious!
Service was outstanding. However, my Thai flatbread small plate had cheddar cheese??? Since I can't do dairy, Thai is usually a safe bet, not here.

We love coming here, especially on Saturdays - the drink specials are fantastic! I would never come without a reservation though. We also love the food...try the crunchy broccoli!
Restaurant was clean and orderly, reception was warm and friendly so the beginning was good. We were seated in the room adjacent to the bar area and it was a bit noisy as it was full for lunch. Menu was good and we saw a lot of salads being served and inquired with the next table about the quality and the response was delicious. Will return soon to try the salads.
We had a business lunch at the Union Bistro on a weekday. The service was very friendly and prompt. The food was good, hot and delivered all at the same time. I would highly recommend this restaurant. It got a little noisy by the time we left at 1:30 pm.
I would not go back for dinner. I would go back for a happy hour and maybe appetizers. I had the salmon with the mashed cauliflower and it was COLD! My hubby had the burger and it was good but just another burger. For the price, the quality was not good due to the temperature it was served. Drinks were just okay. Service was decent. I may go back for a happy hour if I am in the area but I won't be back for dinner.

Great food, great atmosphere and great service! Between the four of us we had a different types of food and they were all delicious. Staff was helpful and friendly and they took care of us right away. My husband's pork chop was big and juicy, my fish tacos were very flavorful and everything was very tasty.
This is a consistently good restaurant. Good staff.

Loaded tater tots appetizer was a joke. Salad dressing had little flavor. Very loud, had to ask twice for water, no bread provided. Server was nice. 3rd visit here, seems to have gone downhill. Expected better for $80 a person with tip.
2nd time I’ve been to Bistro - both times were great. 1/2 price wine was awesome and service was good. I’d definitely go back and recommend to friends.
We hadn’t been to Union for a while and was so happy that the food was as good as we remember! A little loud, bur with it!

Castle Rock does not have a very many good restaurants. Union can cook but know that on Friday night at seven pm you are going to be shouting to be heard. Its not a great date place on Friday's. Our maitre'd wore a t-shirt. We had reservations but had to wait. We had to wade through the bar to get to the packed back room where we were seated next to two children under 5 and their exhausted parents. The food was fine, not great, certainly not $60 great (no drinks) but okay. I learned my lesson, not on the weekend for Union.
Union is a great place to go for drinks and dinner. The broccoli, polenta fries and brussel sprouts are so very good! The owners are always around making sure their guests are happy! This is our go-to place in Castle Rock!
The food was good. I had the beef flatbread and two others in our group had a hamburger and the lobster poboy and they also said their entrees were good. We arrived at 12:30 for lunch and the main dining room was full and noisy. Hard to converse and hear in a group of 6. We were celebrating 2 birthdays and our server brought us 2 free birthday desserts-lemon cheese cake and a chocolate cupcake. Both were good. Service was good- server willingly gave us separate checks and divided and added the birthday lunches to each check.
We've dined at Union several times and always had great food and great service. It can be crowded, especially on Saturday evenings, so make a reservation. The Salmon Salad with shaved Brussel sprouts is outstanding, as is the double pork chop. The filet is prepared in a red wine sauce and was fabulous. We had the spicy, crispy broccoli and as long as you want the extra calories it was fabulous! Saturday evening is 1/2 price martinis and they have an extensive list, might be the reason it is crowded, but an excellent selection and worth the drive. They have a great menu for small plates to share. Simply a gem!

Union has a great niche in Castle Rock with happy hour starting at 2:00PM. We had a drink, fish tacos and chicken Caesar salad with a side of brussel sprouts. All very good. Service was excellent.
Terrific little gem in Castle Rock, just a few minutes from 1-25 and plenty of parking. The food was terrific, highly recommend a reservation, it was really busy for a Weds lunch. They split checks and large meals so we could have a taste of everything. The house salad was amazing (light and simple with polenta croutons) and a nice addition to sharing a large plate. Save room for dessert, the coconut cream pie was out of this world, we will go back! Thanks
Food was delicious! Two people in our party had the salmon and said it was delicious, and my husband and I both had the Meatloaf. I had a side of Brussel sprouts and those were really tasty. The only complaint we had was that the cocktails were super expensive and small. So we would not order alcoholic drinks if we went back again, but instead go somewhere else for drinks afterwards.
We were 5 mins early for our reservation, our table was waiting and we were seated immediately. Service was prompt and friendly; food was great and reasonably priced. This place has been very popular for years, so on a weekend night it is packed and a bit noisy. If you want a quiet, intimate spot, this isn't that. However, since you can see all the other patrons in the room, you can play "celebrity look alike " to pass the time. A man near us looked like a younger Tim Roth - fun stuff!

Overall really good. Loved all the food with the exception of The poutine (cold & bland) and the chocolate peanut butter bite (overly sweet). Love the $6 martini.
Great Food, service, atmosphere with a small bistro feel. Being from Kansas City, the added bonus of having Boulevard Beer on tap is worth the trip back.

We started out with the Thai flatbread with chicken and that was very good. Our waiter forgot to take our dinner order so we sat for awhile after the appitizer was gone. My friend and I had the burgers with added ingredients. Our burgers were over-done but still tasty. Our waiter was very inattentive - I saw him just standing leaning against the wall quite a few timeswhich was irritating while we waited for our order to be taken, plates cleared, drinkd offer/ refill ect. I would go back but would not sit in his section again.
We are never disappointed with the food or service at our favorite local restaurant. The menu changes often enough to keep our interest but is consistent enough to always keep us satisfied. On occasion we will stop in for happy hour and make it a meal tasting several of their wonderful bar tapas.
This place really needs to consider updating the interior. Big paint chips coming off walls. It’s very outdated. But the food was amazing. The waitress was blah, not very personable, or super on top of things, but she was adequate.
Had a goof time even with the excessive noise. Go there often and usually not this bad
