Contemporary American
Originally part of the summer resort, Hotel Di Prima, which opened its doors in 1926, the Would Restaurant has a long history of warm hospitality. The Hotel Di Prima catered to Italian families from the New York City area. In the 1940s and 1950s, thousands of vacationing families came to relax and savor the rich summer flavors of “the country.”In 1994, Claire Winslow and Debra Dooley purchased the establishment and became partners in the Hudson Valley retreat.
Many guests say that "the old resort atmosphere relaxes you and takes you back to slower days." On summer evenings guests enjoy dining on the porch. In the winter they dine by a crackling fire with white linen table cloths, candlelight and fresh flowers.

We offer a varied selection of Contemporary American Cuisine prepared from local ingredients.

The staff was wonderful and incredibly accommodating making my husband's 70th birthday celebration very special. The food was phenomenal and noteworthy. Although we were just visiting the Poughkeepsie area, we would make a special trip back to go to this restaurant again. Excellent experience all around.

Overall, this was a disappointing Mother’s Day Brunch experience. The woman who called to confirm my reservation was rude. She was caught off guard and unprepared when I asked if they were handicap accessible. She was relieved when I said my 83 year old mother just had difficulty with steps but wasn’t in a wheelchair. The woman who greeted us when we arrived was also rude. Far from welcoming. The buffet selection was poor. The waffles were soft and barely cooked. The pasta had no flavor. The French toast was deep fried bread. I live in Philadelphia and am fortunate to have a wide variety of culinary greatness all around. I visit the Hudson Valley many times through the year and and sadly it is challenging to find just plain good food in a clean and welcoming restaurant. The meal was expensive-which would have been fine if it was deserved. The kicker was having the tip added in to my final bill. And at over 20% no less! For a buffet!! Definitely not returning!!

For a Mother's Day brunch, the food was exceptionally fresh and well cooked. Salmon with dill sauce was moist and delicious. The cronuts were wonderful. Great variety. Service was attentive. Only small complaint is that tea water and coffee were not hot enough.

The Would Restaurant is in an interesting location - without GPS, I'm not sure we would have found it (no pun intended.) However, it was well worth the drive, which takes you through a rural neighborhood. We were greeted promptly and seated immediately, and all the staff were friendly and welcoming. The view of the property (a rural inn) would have been charming if it hadn't been raining hard and foggy. Oh, well. Incentive to return again!

The menu has some interesting and unique selections. Unfortunately, our first choices for wine, while on the wine menu, were not available, which was disappointing. We were able to find a wine that worked, however. That was the only off moment in the entire evening. We shared the roasted Brussels sprouts appetizer and it was fantastic, one of the best iterations of that dish I've had. Our group of four finished it and would have licked the plate if we hadn't been out in public. We all ordered different entrees, and then passed them around, and everything was delicious. I especially enjoyed my spatchcocked game hen, something I make at home, which was even better than my own. For dessert, we ordered the lava cake and the maple rum creme brulee. The creme brulee was by far the best dessert. The lava cake was more like a flourless chocolate cake, it had no lava center. It did have a delicious chocolate flavor and smooth, moist texture. The creme brulee had a mild maple rum flavor, and the texture was so light and creamy, we ended up trying to steal the last bits from each other. Delicious.

Our server was a lovely, warm, friendly, and professional man who made us feel welcome and was very patient as we took our time through the meal. We loved this restaurant and will return when we are in the area again.

The prix fixe dinner at $25 was quite a bargain. Choices were excellent and the food was very good. I didb't care for the creme brulee but the brownie with icecream was excellent. Wine selections were very nice as well. A very enjoyable experience. Looking forward to going there every month.

This is such a nice restaurant. My family and I went to dinner for my birthday and everyone was impressed with the food. We all had something different and we all agreed that we found a new favorite place to eat! I can’t wait to go back!

Very disappointed . . . First, the service was friendly, but very inconsistent. When I unfolded my napkin, it was stained and the server didn't come back for the longest time, so I had to take a clean napkin from the table next to us. My husband accidentally spilled his water on the table and over the entire bread basket; the water was blotted off the table, but our water soaked bread was never replaced. Dirty plates and the soggy bread basket sat on the table until we finally asked for them to be removed. The menu said to "be patient" because everything was cooked to order . . . however, everything except my husband's steak was obviously re-heated. Our server confirmed this. Food was very overpriced for the quality. Cappuccino was from a Nespresso machine and was served in a very tiny espresso cup and cost $8!!! The last straw - when we got our bill, we were charged $1 extra for every drink that was ordered "on the rocks!" Will not be back!!

Food and service were fabulous! Had a great cocktail before dinner. My vegetarian entree was just perfect, and the whoopie pies for dessert were so fresh and flavorful that I saved half for my morning coffee! Will be back!

The prix fixe menu is the right amount of food. You will feel satisfied. The sweet pea ravioli was the bomb.

Went for HVRW. Menu diverse, excellent reasonably creative choices and sides, fun Whoopie pie dessert. Food delicious, well prepared, hot, generous but not ludicrous portions. Service a little overwhelmed but as attentive as possible under the circumstances.
Overall rating reflects the physical setting: dreadful minefield driveway (watch the undercarriage!), no identified stair-free access, uneven floors, lintels more like steps without warning tape or paint.

Always an amazing meal! We came as a group, but we are always treated like welcome friends! One of my fav spots for all types of dining: special occasions, everyday, business meals or holidays! We love The Would!

We had a 5:15 reservation.. The restaurant opens at 5. We had 9 people in our party. 7 of us ordered the steak. The waiter came back and said they only had 6?? I had to order something different. On a Saturday night at opening how can you be out of steak that is listed on your menu.
The 6 steaks were all supposed to be cooked the same - Medium well. 2 came back rare!! That really is unacceptable.
Waiter seemed very confused about things and I would expect better service.
Was disappointed considering how much things cost.

Honestly one of the best meals we have had in a very long time! It wasn't crowded since it was a Tuesday evening in the winter, and we were there a bit on the early side (6pm.) We have been there a few times before, usually on special occasions (Valentine's day, Easter Sunday, etc.) This was also a special occasion - my wife's birthday! We won't wait until the next special occasion - everything was fantastic!!!

I love this restaurant. The owner always greets you, the food is fantastic, we had the short ribs (melt in your mouth!), and the scallops. Excellent food, prepared beautifully and cooked to perfection.

Christmas decorations were successfully used to celebrate Valentines. Dining rooms were absolutely beautiful. We were very pleased by the menu and struggled a bit to choose our meals. Sadly, lamb chops were mostly fat. Scallops weren't well seared, rubbery consistency and relatively tasteless. The amount of food left on our plates made our dissatisfaction obvious and we were comped dessert and coffee. We appreciated that gesture but coffee when it arrived wasn't hot!

To be honest it was Valentine’s Day. Was expecting it to take a while for food. The unfortunate part is after an hour wait my friends meal the mashed potatoes were just shy of frozen and the meat was requested to be medium/well and was more rare.
Mine was very good but at this point blood sugar was very low and any kind of food was appreciated.

Other than close seating for our table for two, most everything else was excellent. Our server Stefan was most convivial and not overly obtrusive. We liked the decor and felt like we could dress up and still be comfortable here. Unlike some reviewers we had no trouble finding our way to the restaurant.

A little tricky to get to, even with GPS, but worth the trip once there. The mushroom soup was especially delicious, but everything was prepared very well. The waiter was attentive.

Good food well executed. Given that it was a holiday (New Years Eve) and the restaurant was crowded, they pulled off a fine meal with good service. Food temps were spot on and drinks and apps good as well. Will return.

The food and our server were both outstanding. The noise level was head splitting. Talking to our friends was hard work to make yourself heard. The band is too big for the room. There’s a line between uplifting background music and nerve wracking sound. Voices and music so loud it would keep me from returning.

the food was excellent, the greeting was warm, and the staff was very attentive. It was an excellent evening and I will keep recommending it to my friends. The limited menu had excellent choices and the artichoke and calamari first courses were excellent as were the short ribs and scallops. We will go again

Took my family here for my mother's birthday and had a fantastic time. First they were very accommodating when I made an error when making the reservation and were able to accommodate an extra person. And the food was so good, from appetizers, to main course, to dessert. My mother, who is picky on top of her medically restricted diet, loved it as well. This place is near where my sister lives, which is about 2 hours from me, so I'm not sure how often I would have an opportunity to dine here again, but my brother-in-law was quite thankful to find this gem they didn't even know about.
