About The Would Restaurant

Originally part of the summer resort, Hotel Di Prima, which opened its doors in 1926, the Would Restaurant has a long history of warm hospitality. The Hotel Di Prima catered to Italian families from the New York City area. In the 1940s and 1950s, thousands of vacationing families came to relax and savor the rich summer flavors of “the country.”In 1994, Claire Winslow and Debra Dooley purchased the establishment and became partners in the Hudson Valley retreat.
Many guests say that "the old resort atmosphere relaxes you and takes you back to slower days." On summer evenings guests enjoy dining on the porch. In the winter they dine by a crackling fire with white linen table cloths, candlelight and fresh flowers.

We offer a varied selection of Contemporary American Cuisine prepared from local ingredients.

Disappointing experience. We love restaurant week. We dine out often and it gives us the opportunity to try restaurants we would especially like to check out for special ocassions, to recommend to others, and to host dinners at. We arrived on time for our reservations. Can't say we were greeted because it felt more like we appraised and found lacking in some way. We were directed to give her our coats, my husband was wearing a light vest and I a very light jacket. She then disappeared somewhere we couldn't view. Upon return We were guided towards a table which seemed lovely by the fireplace, then rerouted to an adjoining back room-which was cold. The woman-she was not wait staff-owner?-sat us down said someone would be serving us then changed her mind and said someone else. Turns out it was a newer wait staff and not the obviously more experienced gentleman who knew a bit about wine pairings and the menu in general. We waited quite a bit before being brought a bread basket with a few pieces of bread. My husband's comment was jeez could they spare it?!
The food was ok nothing to write home about. The ambiance could have been lovely had we not been made to feel uncomfortable by the attitude. Which was revealed, in our opinion,as we were leaving when we were asked-not warmly or invitingly- where were we from.
PS the multiple guests arriving after us were seated in the first room and all were ushered to seats with their outerwear. Did she think we were a flight risk??? Not going back there or recommending.

We have been several times to the Would Restaurant and always had a good meal and service
We went and brought friends who had not been there to have a great dining experience. It was restaurant week. 3 of us ordered from this menu the 4th guest from the main menu. We had reservation. upon arrival they seemed very unprepared for guest. The restaurant was fairly busy but not overwhelming. After approx 10 minutes and 2 greeters we finally were shown to our table was only 5 steps away from the entrance. Our service was only acceptable. very pleasant waitress but not very efficient or attentive. No bread offered. no water refills, little things but makes a difference. The food was very good, but the experience was disappointing.

We went during restaurant week. All five in the party enjoyed everything served. Coffee rubbed pork and cod were special favorites. Butternut squash and goat cheese appetizer had a wonderful balance of flavors. Pumpkin brulee along was worth the trip. Totally enjoyable. Tomas was very attentive despite the restaurant being full.

We have not been to the Would in quite some time. We were delighted to find it enjoyable from all aspects. The decor is soothing, everything is clean, the service was very good, every part of the meal was delicious and the price was reasonable.

A return visit to a wonderful restaurant. During restaurant week, the limited menu was not limiting at all. the appetizers were great (NE clam chowder in a wonderful broth, entrees the same - roasted pork tenderloin and a pappardelle with beef was perfect.

They also have a well chosen wine list that is reasonably well priced as well. We will surely return!

The food is a big disappointment. The presentation of the food was unappetizing for example burnt gnocchi swimming in watering sauce, with over cooked bitter escarole in the centre, pieces of walnut which is tasteless and a sprinkle of goat cheese which is not enough to add any flavor to the dish. We don't bother to take picture. The lava cake we ordered has a solid center instead of chocolate sauce ozzing out. Is more like a brownie. Flavor of the food is well below average. The service was forgettable too.

We reserved this restaurant based on the recommendation from the reviews on Open Table. We honestly do not understand why this place was awarded the winner of diners' choice 2017. It was a big let down. When we made the reservation, we mentioned it is for a birthday celebration. Well, no one acknowledges that. Anyway, the dining experience dampened the celebration mood.

Never again will we trust the winners awarded by Open Table.

Been here many times and brought many friends. This time was not the best. No specials, wine list has disappeared so we don't know what we're drinking and two different pasta dishes were just average. Price was high for the quality this time. Waitress rushed the bill to us as soon as we put our forks down; I HATE that! Not typical here. Hope they're not going downhill.

We were there on a Saturday night while spending the weekend in the area. We enjoyed our evening but I fear we pay the beautiful setting rather than the food creativity. We shared fried calamaris and it wasn't really tasty. The chicken and the pastas were also not really special. The risotto cake (vegatarian option) was on the contrary really delicious. The wine was have chosen was affordable and to our taste. It was not a bad experience but for that price, I would have expected a little more creativity on my plate.

Chose The Would based on Open Table reviews and it did not disappoint. Restaurant had only a few tables served but the waiter explained the busy season is the fall. Food did not disappoint despite the lack of customers. The arugula salad was fresh and the goat cheese stuffed squash was delicious and a generous serving. We both had the steaks on the menu and the meat was tender and served as we had asked. I also enjoyed hearing about the history of the restaurant.

The food here is amazing. The waiter doesn't have much of a personality but the service was ok. I highly recommend this to anyone who is lining for a delicious meal. They have a fantastic menu.

I have eaten at the Would several times before. It is off the beaten path, but worth the ride. I was pleasantly surprised to find that on Tuesdays, Wednesdays, and Thursdays, they have a pre fix menu, as well as their usual menu. I would recommend it for any special event.

Not only was the food cooked to perfection, the portions were as well. The wait staff brought peace and twanquilty with their professionalism. For a last minute "let's go to dinner" idea The Would was the right place to dine!

We were so disappointed since the Would restaurant is usually one of our favorite dinner restaurants. We were so excited when we saw that your restaurant would be open for Mother's Day brunch. We never had come for brunch before but figured dinner is always great. What a mistake we made. Brunch consisted of mostly some muffins and pastries with an omelette station and carved over cooked roast beef, bacon, sausage, potatoes, salmon,waffles and pasta with chicken. Horrible. Worst brunch I've ever been at in 20 years. If you are normally closed on holidays,I would suggest staying closed in the future. I'm not sure if we will ever come back...even for dinner.

Mother's Day buffet was great, great service and the staff was very friendly. Not one bad item on the menu, but the sausage, Brussels sprout salad, and the desserts were table favorites.

Really enjoy having this local gem nearby . Lovely outdoor seating options. Very attentive staff and nicely varied menu options. Specialty cocktails are imaginative and tasty. Close to larger cities of Poughkeepsie,Newburgh and Kingston where the choices of entertainment are more varied. Have never been disappointed during any of our visits and especially enjoy the relaxed atmosphere. Will continue to return.

We enjoyed Hudson valley Restaurant Week at the Would… Our three distinctly different meals were all delicious ( chicken thighs, fission chips, and pork osso bucco). Service was very good--friendly and perfectly timed. We never felt rushed. Our cocktails were also expertly prepared--always good to have a bartender who can make a great Perfect Manhattan! :)

We were personally greeted when we arrived asked if we wanted to check our coats. It was a little chilly so we chose to keep them on. There was a cute waiting area so we sat there even though we had the option to sit at the bar. Once we got to our table, the service was very good. They were busy but still offered a personal approach and checked on us frequently. Once we had finished dinner and were leaving, we were treated like we had been there lots of times before. Everyone at the bar, said good bye and they joked and laughed with us as we were exiting.
I would definitely recommend this restaurant in the future.

The Would is a very good restaurant with very professional waiter service. Tomas was thoughtful and considerate. The noise level was comfortable. We could hear one another speak. It was very relaxed. I intend to return there in the future.

We ate here for restaurant week and they had a prix fixe menu. The food was fantastic. I opted for calamari lightly breaded and fried (the O's, no tentacles) that was served with a sweet chili sauce. Fantastic!
I had the cod which was delicious, one in our party had salmon, and one had chicken. All meals were excellent. We had a chocolate pots for dessert which was delicious. The coffee was excellent. The waitstaff was excellent.
We would come bacv in a heartbeat.
