We had a wonderful time. The staff (chef/waitstaff/etc.) were all fantastic and extremely helpful. The food completely blew us away in how good it was. The “Down the Rabbit Hole” special was completely unexpected and wonderful. I will order that every time going forward.

The Welsh Rabbit is always welcoming, even amidst difficult times. Whether it be an interesting cheese, charcuterie, or a small plate, we have enjoyed it. It is like dining with dear friends.

Fantastic!!! I had the “Down the rabbit hole” dinner where what you receive is a surprise. All the courses were amazing! I loved the rice paper wrapped salad and the meat course-they were all superb. And whatever the vinegar-y bright and fresh greens were that were served with three quail meatball. Fantastic!
We had a phenomenal time at the Welsh Rabbit recently to celebrate a few special occasions! The staff are great, Madison (I think was her name) was fun and offered great insight and suggestions. The Cheese Monger was also generous to our table, which made the entire night feel even more fun. Would highly recommend this restaurant for a date or celebration, or just for a fun evening out with your friends!
We tried this based on a recommendation from a server at another restaurant. We are so glad. We went with their “Down the Rabbit Hole” where chef Nate creates a succession of 8 small plates of beauty and deliciousness. Probably one of the most creative, well conceived selection of dishes my husband and I have ever enjoyed. Ranks in top 3 of best dining experiences in our 35 years of marriage.
We each did the chef's choice 8 course guided with wine pairings. This was excellent value and by far the best meal we've had in FoCo. We will be back!
We loved our night at The Welsh Rabbit. We went #downtherabbithole and let Chef select our courses. Everything was amazing. The wine list is stellar and the service was warm and impeccable. Everything about this place is fantastic.

Best date spot in Fort Collins if you like cheese and wine
We had a great evening at The Welsh Rabbit. We ordered a salad and an assortment of cheeses to try, and everything was delicious. Our server was very friendly and knowledgeable about the wine and food menu, which was super helpful in ordering. We will be back!
Our waitress was absolutely great. Food was what we expected and very good. I even like trying the crickets!

Great Plates at the Welsh Rabbit was above ordinary. A cheese platter appetizer proved why this is the place for cheese in Fort Collins. There was just enough variety and texture to be adventurous. We added smoked duck and Spanish chorizo. The chorizo should not be missed. My red deer entree was delightfully tender and well balanced with black rice and a medallion of sweet potato. The surprise addition of a homemade tortilla was just right. The choice of one of six dessert options made selecting very difficult. I had a perfectly prepared creme brûlée enhanced by a small shortbread cookie and some berries. My husband raved about his peanut butter tart with pretzel crumbles and he is a hard man to please. The extensive wine list and incredible cheese and meat platters could be enjoyed any time. Take a friend!
Great place to go for a date. Food and service were excellent. The only criticism I have is the table size for two was a little crowded to the table next to us.
We were very pleased with our experience. We even tried the crickets and mealworms! The service was great and friendly and we had a great window seat that was just as romantic as we had hoped! We definitely recommend it, especially for those that enjoy tapas.

Welsh Rabbit was a charming place, cozy, small and very attentive. The menu is comprised of small plates to share. The food was delicious, the cheese variety is the big draw. My only suggestion is that the personal plate to use is very small (3.5”) and the shared plates are very large (8”) and crowd the table. It would be better to reverse the plate sizing, since the food on the shared plates, while artfully presented, are of smaller volume than the plate it’s served on.

Once again our meal was wonderful. The cheese is good but the real highlight was the small plates, specifically the pastas. The flavors and sauces are amazing. This is the best restaurant in Fort Collins.
Unique restaurant with nice choice of cheeses, meats. Service was fine, waitress seemed a bit inexperienced and lacking valuable input on selections. Turmeric pasta was amazing. I personally did not care for cheese cake or dessert options.
