Things weren't up to what I remember of the Pullman. Aside from delicious blue cheese potato chips, the remaining dishes were uninspired and lackluster. The poutine might have even been inedible. To top it off, service was elementary. We asked for a side of curry sauce that was denied because they'd have to "heat it up". Sad for a place that used to be so great and worth the drive from Denver.
The Pullman is our go to restaurant in Glenwood Springs. Great menu, the is something for everyone, the menu changes with the season. Next time we are in GS for the weekend, we will eat there both nights!
This was our second visit to the Pullman and the food quality and service was outstanding. Each time I have enjoyed the fresh ingredients, delicious recipes and drink selection. The service is very attentive and professional. We will continue to visit each time we come to town.
Excellent service, reasonable wine list, very good food! Can't go wrong with this restaurant as a dinner choice!

Surprisingly unique. Food is also artistic as well as tasty. They have healthy choices.
Went for a "special dinner" while we were vacationing in Glenwood Springs. Waited about 10 minutes in the crowded, uncomfortable entryway just to talk to the hostess ... the two of us were there for almost 30 minutes before we got our first drinks even though we had reservations.
The waiter didn't know how to answer any of our questions about the menu. While we waited for food, I noticed the tables around us looked anxious and at one point someone chased after the waiter because they'd received the wrong order.
I had the lamb (medium rare) and it was burnt all along the outside.
We had higher expectations walking in, and will try to find another place for a nice vacation dinner next time. :(
The food at The Pullman is always artfully presented, imaginative, and delicious. The menu changes frequently, but considering the modest number of options there appears to be something for everyone. My palate isn't very far ranging, but I've been there several times, and have never had the same thing twice, which is unusual for me. The hard surface floors and walls contribute to the noise level — particularly noticeable when there's a full house, which is often. It's not so noisy that you can't have a conversation. Make reservations, and prepare to enjoy your experience. If you end up having a bad night, it won't be due to The Pullman.
The service was amazing. They were a little behind on our reservation so bought us a round of drinks. The food was delicious and unique, wait staff courteous and prompt. Great overall and we will definitely go back when we are in town.

Food was delicious and waiter polite. Unfortunately one person's meal was miss ordered and came out with allergy concerns. They had to wait through u eating our entire meals before his came out. Very discouraging and not even a drink or snack was offered to make up for it. Poor management and poor judgement. The 16 year old was starving!
We dined at The Pullman for my parents wedding anniversary when we were in Glenwood for the week. We had a perfect round table right near the kitchen. The service was great and the food even better. We will return there next time we visit Glenwood.

Fantastic food, great service. John was our server. The gnocchi salad was so good, I wanted to lick the plate! ( But I didn't.. ) Really great experience. We will be back.

There are small plates on the menu which we love since we like to share many things, but we ended up with 2 of the night's specials which were outstanding. Grilled short ribs on a celeriac puree with sour cherries was the perfect combination of flavors with the cherries cutting the fat in the meat. That was the big plate special. The small plate special was smoked loma with a local blue cheese, olives, grilled bread, and a current mustard. The cocktail menu is creative.
The Glenwood Springs Lodge where we stayed recommended The Pullman. We loved the ambiance, great food and the service. I enjoyed the best Rocky Mountain Trout I ever had in any restaurant nationwide.
We love the Pullman restaurant. There's always a line because the food is so unique and delicious! It is a very Cozy Restaurant yet casual with an ambience of homeyness and comfort. every time we go to Glenwood Springs this is our favorite place to go and we try to make a reservation early enough that we get a table at a time that is not too early or too late because it's always so crowded. Their food is always unique and the menu changes often. The food seems to be as local as possible using as many farms and local Delicacies as they can find. Being in Colorado in the mountains it's hard to find a lot of fresh vegetables in the winter but I think they have some kind of greenhouse operation or know someone that owns a green house or something that provides them with local produce year round. The wait staff is very well-trained and can explain anything that they have on the menu because everything is a unique creation from the chef. I suggest that you try it out if you've never been there. It is a bit expensive but worth every penny. Love it love it love it

Everything was terrific. The flat iron steak was exquisite. The caramel pecan bread pudding was out of this world. Will definitely be back next time we're in GS.
Enjoyed the atmosphere, food was great, and they had a good selection of wines. I would go back if I am in the Glenwood Springs area again.
By far, my favorite place in all of Colorado! Glenwood Springs is my favorite place on earth and the Pullman is my favorite restaurant in all of Glenwood Springs! The service is spectacular and the food is amazing! Thanks for making my birthday weekend even more special!

Never Disappointed! While staying at the Hotel Colorado, the Pullman is an easy walk across the bridge. Enjoy!
The Glenwood Springs dining scene continues to mature and The Pullman adds to the diversity of options within GWS. Located across street from The Hotel Denver and across river from Hotel Colorado, easily accessible even from west GWS as street parking is ample on the surrounding blocks.
Be sure to start with the smoked devil eggs, at $1.5/per great option with good mix of flavors. The chips coated in artisanal cheese, also excellent. We both enjoyed salads, creative options with mix of flavors. The steak salad, while one may be circumspect concerning french fries with a salad it works! Spouse' vegetarian salad, good mix of seasonal veggies and an excellent dressing, can easily add protein.
Of note, excellent beer and moderate wine selection. Good micro and artisan brews available. Be sure to make reservations esp. on weekends as Glenwood is becoming a strong destination for weekend getaways.
Please note there are some excellent old time options in GWS, however if wanting a newer option with a diverse menu, reasonable prices and excellent beer selection more akin with Aspen or Vail, The Pullman will not disappoint.
The ambience was warm and welcoming. Casual feel. Food was delightfully delicious and creative.

The roasted chicken was amazing! So many flavors. The skirt steak salad was overdressed but still was wonderful! The restaurant had a really welcoming feel and the service was outstanding! We would definitely go back.
Very high quality dishes (NYC gourmet) at a small town price. Exceptional value. Limited draft beer selection, but you really should be drinking the wine!
Found this little gen this last trip and will make it a point to visit going forward. Hands down one of the top 10 meals I have had. Great food, great service and an all around great time.

With so many delicious looking options on the menu, the worst part about the Pullman was figuring out what to eat. If we were staying here longer, this place would be a weekly tradition. Food, service, and atmosphere was wonderful. All how casual dining out should be.
We come here every time we're in Glenwood. It's always excellent. Today was no different. The food flavors are PHENOMENAL!
I took my sister and aunt here for their birthdays. I told the hostess it was a special occasion and also the waitress. They did not make it special in the least bit. The waitress acted like we were putting her out when we ask questions about the menu.
Service means everything when make a special occasion like this a success. They failed.

Fantastic food with reasonable prices and a friendly, relaxed atmosphere. Great service. Great location. The Winter Vegetable Cianfotta was a delicious surprise. We'll make this a must-visit whenever we're in town.
