Del equipo detrás de el Blackbird and Avec traemos este homenaje a la cerveza, la carne de cerdo y pescado. El chef ejecutivo Paul Kahan y el Chef de Cuisine, Cosmo Goss, han desarrollado una red de proveedores para abastecer el restaurante con pescados y mariscos capturados de forma sostenible seleccionados a mano, así como carne de cerdo de la más alta calidad criado también de forma sostenible. Todo esto para aterrizar un menú de tipo ecléctico y simple. La extensa lista de cervezas internacionales, desarrollado por los socios Eduard Seitan y Terry Alexander, cuenta con más de cien ales, lagers, stouts y cidras en botella, doce de ellas disponibles en barril. Al igual que Blackbird and Avec, The Publican es una asociación de diseño del equipo ganador del premio James Beard, formado por Thomas Schlesser y su socio Donnie Madia.

This place did not disappoint. Unique pairings and flavor combinations made our meal very memorable. The slab bacon was divine. We will be coming back next time we are in Chicago

On a chilly September evening, my son selected The Publican as the restaurant in Chicago he wanted to take me to during our mother/son Chicago weekend. Our dinner was fabulous! The server was extremely kind and made very helpful suggestions - such as the delicious barbecued carrots topped with dill and pecans - which we chose to accompany the tender, melt-in-your-mouth smoked pork shank. Yum! Yum! Yum!

Lotta hype going into it and recommended by so many. Was just overall disappointed especially for what we paid. Got about 10 dishes, was only impressed by 2. :(

Tried this place for the first time. The food was ok, no wow factor. The prices were way too high for the quantity and the quality of the food served. Not worth the money spent!

The food was good, but I definitely felt that the cost was too steep. I will even go as far as to say overpriced. We had the pork, beer and oysters - as they advertise are their specialties - as well as a cocktail and a few other dishes. The food wasn't amazing in the way I'm still thinking about it days later. It was just good. Not worth the price in my opinion, and the ambiance is lacking. I'm all for minimalism, but it was just blah. The service was almost too much. There was always someone at our table filling water, leaving plates, taking plates, taking glasses, watching us to see if we had anything to clear. I never felt I could relax or have a conversation since there was always someone a foot away. We asked for a private table and got one, but it's definitely not "private" in the way that you have any privacy. It's just not a shared table. They did bring our ice cream for my husbands birthday with a candle which was a sweet touch. Overall, glad to check it off our bucket list, but won't be back.

Went based on a recommendation and it did not disappoint. Food was flavorful, service was very attentive. Will definitely be going back next time I’m in the city.

The kitchen’s unwillingness to substitute for vegetarians was a major detractor. Plus, the famed publican bread wasn’t available for lunch. Disappointing.
