When we arrived, unfortunately our table was not available quite yet. We went to the Mallard Lounge for pre-dinner drinks. When our table was ready, we were greeted and seated before further being welcomed by a lovely, talkative, well knowledgable lady whom definitely knows how to sell each course, side dish & wine accompaniment. The flavours of our beef fillets were amazing, especially with the jus which accompanied them. The presentation was perfect. The wine was smooth and our desserts were exquisite.
The GrillRoom NEVER disappoints! We are locals and often dine at the GrillRoom. The food and service are consistent; consistently excellent. We had dinner to celebrate our 8th wedding anniversary on the weekend and the staff went out of their way to make it special. I ate a Ribeye as big as my head and had table side Tomatoe and Gin soup prepared that was spectacular. If you visit Whistler, eating here is a MUST.
We sat by a beautiful fireplace that gave the meal a feel like dining in a beautiful home with out any of the work. The decor is warm and the gardens outside are stunning. The food was amazing and the service was wonderful. Thank you for a lovely experience!
My husband and I went here looking for a good steak and seafood option and it did not disappoint. We had an attentive waiter who made great recommendations and the wine list is expansive. We had a wonderful evening, good conversation and perfect portion sizes. Make a reservation if interested as they are quite busy.
Amazing food. The Rizotto, the elk, the sides like mac&cheese were all delightful. Yes the mac and cheese too was extraordinary and the parents enjoyed it as well as kids. Quite pricy but it worth the investment. The service was amazing too. A very good experience for the family.
Our dinner at the Grill was tremendous. The food was amazing from start to finish. We had the dry aged steak along with the King Salmon which was a perfect pair. Our server matched a perfect local BC wine to the meal. The sides of spinach and mushrooms were amazing. Then we followed it with the perfect sundae for dessert. Service was awesome and for the amount of food we got it was a great value.
I would not recommend the Grill Room. The restaurant seems disorganized and people are not accountable.
We arrived earlier in the day to select a table for the evening. We were assured it would be booked. When we arrived the table was not reserved and we were offered a 2nd choice. Not good.
After ordering the Branzino fillet for 2, our server Alex advised the restaurant had not ordered the fish and we could only order 1 of them? Really, how does this happen when the chef does not advise the servers about items not available for ordering?
We felt the service was "rushed". We realize the restaurant needs to turnover the tables but it was quiet on our visit. My wife gets up to go to the bathroom after finishing an appetizer and then the main course arrives almost immediately? She was gone 10 minutes since the bathrooms are outside the restaurant. I asked the server to keep the food warm. After the main course was served (again) all the items were just warm. The fish was ruined by our standards and unappetizing.
We didn't even get plates to eat the side dishes from. They expect you to push everything on to the fish plate.
We complained to the server who did make new side dishes, but we don't appreciate eating our meal in stages.
The kicker was the finale when we are served cotton candy. What's up with that? We are 60 not 5 years old. We advised the server of gluten allergies, but cotton candy seems like a joke to us? We moved it to the side of the table where it sat for half an hour.
All in all a very disappointing dining experience. I guess the Fairmont just expects all their diners to pretend everything is good when its not.
Second visit to this restaurant. First visit was horrendous, from food to service. This time, most everything was great. An issue with one meal out of six - which they took care of. Server was outstanding. I realize this is Whistler ..... and the Fairmont ...... but 300%+ markups on wine is over the top - in my opinion.
We love the Fairmont. It is like being home away from home. Just that comfortable always. Our dinner this evening was unforgettable. We have had another amazing weekend in Whistler, and dinner tonight was the topper. It has been a birthday weekend celebration for both of us as our birthdays are one day apart. Everything from the host to seat us, the wait staff so friendly and interested. The food was delicious and the presentation lovely and family style (just like at home). This was an evening well worth repeating.

The Fairmont Chateau Whistler offers a fabulous dining experience that is most definitely worth the cost. The setting is elegant and comfortable, formal but not fussy. The servers are very professional, courteous and dedicated to making their guests feel at ease. We started with the winter green salad which was good but not memorable. Perhaps the dressing could be a little more tangy. However, the entrees we ordered were remarkably delicious--tenderloin steak and planked salmon. The steak was expertly cooked and the taste was mouth-watering. Our sides were the garlic mashed potatoes (whipped to perfection--very, very faint garlic taste) and the fresh broccolini (great sauce). The wine list is extensive and exotic drinks can also be ordered by the glass. We enjoyed a most scrumptious desert--the dark chocolate melting Blackcomb. What a chocolate explosion for the tastebuds! It is the kind of desert that lingers in the memory and makes one wish for another! We topped off dinner with mini-pots of peppermint hot tea and the basket of end-of-dinner cotton candy. This is a fantastic restaurant that can compete anywhere in the world. The Grill Room definitely deserves it high star rating!
If you are looking for nice cuts of meat, this is the place for you. It was cozy, had a roaring fire blazing, and an attentive wait staff. The one drawback was the wine. Like so many restaurants, they list one vintage, but bring a different one. When I pointed this out, my server shrugged and said, "well, that's what we have." For a restaurant of this caliber, I would expect a better response. Disappointing.
