Forget what you think you know about hotel restaurants. Hyatt has taken the Stetson to a very high level of quality. Add to that ... few establishments can balance the beef-sushi offering set. Stetson shines on both sides, and beyond. I thoroughly enjoyed the sea bass, while my wife delighted in her sashimi combination. Diners around us were obviously savoring their steak selections. The open kitchen concept enabled us to witness Stetson’s chefs at work, and they are obviously a disciplined, caring group. Every plate was prepared and served with care. The entire staff was attentive and friendly. In short, Stetson is a destination, not just a hotel convenience.
Really good strip steak. Service was friendly and informative on the menu items. They were able to recommend some sides for us. Definitely pricey but that's the going rate for Chicago Steakhouses.
We visited Stetson for Valentine's Day. The restaurant was pleasant and the service was respectful. We started with cocktails and the Octopus shared plate. The cocktails were bold and robust and the octopus was absolutely delightful - highly recommend.
We then moved to a couple of pieces of snapper nigiri which were fresh and appetizing. Our entree was the 24oz bone in ribeye, which they graciously split for me and my better half. The steak was cooked very well and the mushroom sauce we ordered with was a great touch. We also had the brussel sprouts for a side item which were a great compliment to the steak.
All in all, a solid 4 stars. I thought the prices were a touch high, but it is downtown Chicago. The service was quaint and respectful but didn't match the high end presentation that the restaurant seemed to aspire to. Cocktails were strong and robust which was appreciated for the high end pricing, so overall, a solid choice for the value and we would return.
Both ribeyes had at least 1/3 fat on them , that's not something that you expect for a $50 steak,our waitress never checked on us,the only attentive person was the one refilling the water, that's sad

Even though our waiter was outstanding, I was very disappointed. First I ordered my steak medium it came out well done. But, my main complaint was that a young lady very pretty blonde hair came out spoke to the table that was right next to us and then proceeded to skip our table go to the table right next to us on the other side and do the same thing. I was hurt. It was Valentine's day and when you have demanding jobs and 5 kids it hard to get out. Now I don't want to play the race card but both table were Caucasian. My husband and I (African American) sat in the middle. Truly disappointed. The waiter whom I'm so sorry that I don't remember his name came out an apologized and comped my steak but I would've paid for my meal. That's wasn't the point. I was just upset.

Made reservation through Open Table and received confirmation. Arrived to find sign indicating that Stetsons Modern Steak + Sushi was closed, apparently for the month of February. Needless to say, this was irksome and disappointing since we then had to scramble and ended up with rather unsatisfying dinner at a place that had the advantage of being open. I don't think it is asking too much of the restaurant in question and Open Table to list restaurants as "closed" when they shut down.
Not a friendly atmosphere. The day before our reservation we received a reminder phone call in which we were told that dinner has a 2-hour limit. This is usually enough time even with dessert and coffee, but it seemed awkward to have the clock on us when we are paying the rather high prices for everything we order. Next time we will visit Shula's or Ralph Lauren restaurant instead.
Also Stetsons doesn't have their own restrooms. You need to stand in line with the conventioneers in the Hyatt lobby. Yikes!
The grilled octopus appetizer was delicious. All staff were accommodating. We thoroughly enjoyed -sommelier was excellent, bartender so service oriented, waiter great, sushi chef top notch!

Awesome place for a special occasion or a nice romantic date! Fabulous birthday chocolate cake and the staff was impeccable.

Great steaks, oysters and salad. Service was top notch!
Although our server was kind it did not make up for how slow the service was. We sat with our drink glasses empty most of the time. When the food was served it was good. I do have to say that the grilled octopus was probably the best we've had.
Great steak and sushi. Good ambiance. Wish there were more tables closer to the fireplace. Service was a bit on the slow side.

Just a cluster. Food is very good however service has much to be desired.
Showed up with all 4 guests for a 7:00pm reservation early 6:40. Was told can’t be seated too early. (Restaurant was not full)
However we went to bar and brought back drinks as requested. Was told couldn’t stand in bar. Was taken back by the fact that 2 more groups for 7:00 reservations showed up at 6:55 and were seated before us. Total lack of respect or just poor operations
Dinner was Excellent food top notch. Gets better though. In my Hotel room 45-60 later my server called my personal cell number and said “you didn’t pay for your meal”. I was really caught off guard since I had my $420 receipt with me.
Spoke with manager and he apologized. But really poor taste. He ran my card I signed and left a tip. Just hard to believe the server can’t keep track of his paperwork. Or be able to Lonoke in computer.
In closing food is Excellent if you want to put up with poor service go for it. It not stay away.
Our meal was fantastic. I think our server was new as she seemed nervous and didn't know the menu or the options but she was very nice overall.

The filet mignon and ribeye filet were prepared perfectly. French onion soup must have been prepared by Julia Child. Vegetable medley of Brussels sprouts, sweet potato, and bacon in a maple sauce was unbelievable. Superior service - couldn’t be more pleased.
Waited 20-25 minutes for waiter to ask us if we wanted to order, had questions, wanted anything to drink. Service continued like that throughout the meal, where we had to actively flag him down to get anything. It wasn't very busy, despite it being a Saturday night, but it was like the waiter couldn't be bothered with us. When he did talk to us, he was unfriendly from the get-go. Food was fine; nothing special.
Our first time to Stetson to celebrate an anniversary, and we really enjoyed it! The food was superb, and the service was very good. The ambiance was also very warm and cozy. It was perfect! We highly recommend this place and will return again for sure!

Dinner before Chicago Marathon
The food was awesome! (We were here the night before for sushi, cocktails, soup, appetizer & dessert, so decided to return the next night as well for the same thing/s!) The service was extremely slow (& somewhat inefficient?); however, we had a big lunch earlier somewhere else so we weren't "starving" and we had no where to be afterwards, so we weren't in a hurry! Therefore, the slow service did not affect us adversely this night or the night before! We really enjoyed it & had a fun & great experience!

The food was very disappointing for the price and we were seated by a service counter.. I requested flowers and a special desert and it was never mentioned nor did I receive a call about it. It was really loud and it took forever to get our food..our server disappeared for a while and at that point I guess I was glad I was by the service counter cause I had to as another server to help me and before I new it we had 3 servers... just disappointing.. My bill after they took the steak off was still like $180.. stupid.. just stupid.. I could have got a better steak and king crab at red lobster or longhorn... 💰🙈👏🏼
