About Stages at One Washington

Located just 10 minutes from Portsmouth and tucked away on the third floor of the historic Washington St. mill in Dover. Stages serves Progressive New England cuisine, focusing on foods that are farmed, foraged, and fished from within New England. Chef Evan Hennessey offers an array of flavors, sometimes familiar and sometimes unexpected, mixed with a variety of temperatures, textures and techniques all to create palette pleasing dishes.
The Kitchen Table is a unique and interactive experience, as you can watch and talk with the chefs preparing each course. The Kitchen Table is available by request only, please note upon making a reservation.

Evan Hennessey is a culinary genius. I have never in my life had such a wonderful dinning experience. He is so creative and talented. He comes up with ways to pack so much flavor into these small dishes that you literally can't believe what you are tasting. Me and my guest each got the 8 course meal and there were at least 8 times that my eyes rolled into the back of my head while tasting each dish. Truly incredible!! We opted out of the wine pairings but the couples seated at the bar next to us chose to do the pairings and they said they couldn't believe how well they went with each course. I love the dedication to preserving the beauty of each individual ingredient and I love the time and resources he exhausts to make sure that everything is local and top notch. Watching him plate each meal got my blood flowing! I was on the edge of my seat all night! If you love great food and the hard work that goes into it then Stages is a MUST! If possible I definitely recommend being seating in the kitchen so you can really appreciate all of his passion for his creations!! A true gem in Dover, NH.

Stages is creative, fun and really delicious. The chef and the staff makes you feel welcome from the moment you arrive, and the food is incredible. We are lucky to live close by, however even if we didn't we would drive hours to get here. Visit their website so you can view the menu and enjoy!

An interesting experience, a number of small plates and I ate things that I wouldn't normally touch, interesting combinations and nice presentation. I had no idea it was so small (8 seats watching the chefs), not for frequent dining but worth a try once in a while.

Absolute gem! What a privilege to have this in Dover Nh, the chef's home town.

Chef Evan Hennessey connects the earth, cuisine, and community. He and his staff are extremely open and interactive. We took three teenagers here after going our selves for an anniversary dinner. They loved it and we all know teenagers are hard to please.

The Chef and his team, take local sea fare with items they foraged and create extremely creative and new dishes. Crazy cool wonderful flavors and textures.

The seats at the Chef's table are fantastic and the wine paring divine.

This was our third time to Stages and it was another win on all levels. Chef Hennessey and his staff are the epitome of hospitality. The food is creative, presented in the most inventive way and offers flavors that are unfamiliar yet delectable. The experience of the chef's counter overlooking the food preparation is not only fun, it provides a view, literally, into what goes into presenting food of this caliber that diners don't often see. The wine and beer list is smart with some unusual (in the best possible way) finds that pair beautifully with the food.

Very much worth the drive from the NY metro area.

This was a spectacular meal. You want to sit in the kitchen where they can seat 8 at a bar facing the Chefs and watching them cook close up. It is a tasting menu based on certain fresh and local ingredients which they list for you beforehand. It is an experience as well as a meal and interactive with the chef and the other couples. Unbelievable food. One of my top 5 restaurant experiences.

A real find—foodies in seacoast New Hampshire need look no further than the wonderful Stages, an intensely creative restaurant that offers one of the most interesting and marvelous tasting menus I have had in many years. I hope to patronize them on a regular basis.

If I could rate it higher I would. Stages was an experience. Reservations were easily made and we quickly found ourselves spending 3+ hours enjoying dishes made from ingredients foraged by the chefs that morning. I haven't stopped talking about my visit, and I recommend it to anyone looking for a memorable culinary experience hidden in Dover NH.

Stages is not just a restaurant. It is truly a culinary dining experience. If you are fortunate enough to sit at the Chef's table in the kitchen, you can watch the unique and exquisite creations come to life. And, you may just be served by the Chef himself with the ingredients of each course explained to you in detail. Truly a rare blend of efficient yet friendly service, excellent wine pairings, and food prepared by a world-class Chef who is most willing to engage his diners in casual yet personal conversation. The chefs were fabulous. My husband and I really had a private meal with very personalized attention. I loved the ramps! Extremely creative menu.

Super hard to find the restaurant. My GPS had it on the other side of the street. Even more complicated because it is a one-way. I felt bad because we were a half-hour late because we couldn't identify the building. They were all very gracious and made us feel very welcome though.

Overall, it was exactly what I expected for food. Don't expect to get full, but be amazed by the flavor and science of molecular gastronomy. The wine pairing was very good, and food and wine brought out the nuances of each other. Definitely consider tax and tip above the number of courses and wine pairing if you're budget conscious and you'll have zero regrets.

Stages is brilliant!!

A cool setting high and quiet in a great old mill building. It's like visiting your coolest friend's loft apartment (if your friend happens to be an AMAZING chef with a kitchen and roomates to match).

Evan and his crew made an amazing meal and were fantastic company. The wine pairings were fantastic. The food... Don't worry about it, tell them how many courses you want and sit back and enjoy the ride. You will leave stuffed, happy and looking forward to your next visit.

Evan, Justin and the woman working there (I'm sorry, I'm awful with names guys) were so pleasant and engaging but completely unobtrusive so we had plenty of privacy as well to enjoy each others company as we enjoyed this amazing anniversary dinner.

I don't know how to recommend Stages enough. I would say if you are looking for a high end dinner experience, you absolutely must go.

This is a standout in Dover for flavor, texture, and art with food. This was my first experience with a multi-course meal focused on a unique experience with each dish (we did the 12 course). The food was incredible, and beautiful. I plan to go back every season with the changing menu.

The Stages Restaurant is very cool Place in an old fashion Mill Building with lots of character.
My Girl Friend and I dined there for Valentines Day. We had an 8 course preset meal which the chef actually added a few goodies to. The food at the Stages is top notch, taste, variety, and presentation. Our only hang up was we were there for a little more than 3 hours. Tapas style plates would come out roughly every 10 to 15 minutes, but half way through the meal something happened. Not sure if we were forgotten, or the kitchen got super backed up, or there was just not enough wait staff. We waited just shy of 40 min. for a micro salad. The wait staff reluctantly checked in on us telling us food would be out soon but still took another 10 to 15 minutes. we did not make any complaints or ask for comped drinks, although I feel that they should have been offered. Over all the experience was good, with wonderful food and drinks, the length of the dinner was our only issue seeing as how we arrived at 6:50 pm and didn't get back into our car till after 10:10 pm leaving quite tired. I will try the stages again in hopes that the service will be better because the food is pretty amazing.

We had a wonderful dining experience. One aspect of our very cool meal was how ordering is structured. You order 4, 8, or 12 courses and can also order wine pairings to go with your courses. I was surprised that my date and I received different courses and wines each time. We both ordered 4 courses with wine pairings (plenty for regular appetite eaters) and, because we shared, we both got to enjoy 8 wines and 8 different plates.

The staff were wonderful and Evan was a very gracious host. It was fun to watch them work their magic and they are very much in the zone, so it doesn't feel like you're being watched, even when seated in the kitchen. This was easily one of the most unique dining experiences I've ever had and made for a very special night out with my date.

Highly recommended!

We go to Stages several times a year. It's the best restaurant in New Hampshire and one of the two best in New England.
Stages is a unique experience. It's hidden away on the third floor of an old mill. It's very small, usually just eight seats in the kitchen although they have a front room which they use on special occasions suc as New Years. It's a Prix Fixe menu. Each dish is prepared in front of you. The food is highly innovative, it varies day to day depending on what's available from the local farmers and fisherman.

We enjoyed our evening very much. We felt it ran a bit long. 8 courses with wine service took 4 hours.
Next time we would like to be seated at the chef's bar in the kitchen. I enjoyed some conversation with the chef after we were finished.

creative modernist cuisine-well executed.i don t know of any other restaurant in NH or even Boston that is doing much if any molecular gastronomy like this.i saw some reviews whewre the complaint was that the dishes were small--that s the point of the cuisine. its a tasting menue. 4 courses may not be eough if you a hungry looking for a big meal so go for eight which should satisfy anyone. 12 is overdoing it in my experience but I did survive 22 courses in an adria restaurant in spain.

Chef Evan and staff will not let you down if you want a special evening with a loved one, friends or family. There is no other place like this in NH for an incredible foodie delight. We brought friends who appreciate the variety and quality of flavors that each dish brings and for those who like to pair food with wine...you will be incredibly delighted. Stages is not for everyone, but it is a must try. The restaurant is in an old warehouse and a little difficult to find. The restaurant is quiet and small. Reservations required and fixed price menu. My wife and I went there for our anniversary and discovered they were only serving a "Nursery Rhyme" menu. The 8 courses were artistically presented and the preparation was excellent. I discovered I was not a fan of pig jowls. The service was attentive and every dish was explained in detail by the waitress. The portions are small, but unique in taste. Will definitely go back to try their regular menu.

This is a dining experience. The food portions are extremely small - in fact you might want to eat when you get home. The reason to go is to watch the chefs cook, try very unique food, and feel the experience. I would skip the wine pairing. The pours are too small - perhaps a couple of sips. The wine just covered the bottom of the glass. The wine selections are great, so I wold just choose one or two, and have them throughout the courses. This is not a restaurant you go to often, but instead one that you go to for a special meal.

This place is amazing. Chef Evan Hennessey creates magnificent cuisine in a quiet setting that will make you feel like you have discovered a private dining room just for you. Every time I go here I am introduced to an ingredient I have never eaten before or an ingredient prepared in a way I have never eaten before. And the result will always be delicious. The 12 course tasting menu is balanced and progresses perfectly. You should definitely go with the wine pairings for the full effect.
