Stages at One Washington
Our 9 seat Kitchen Table is a unique and interactive experience, as you can watch and talk with the chefs preparing each course. We offer a constantly changing 8-10 course tasting menu for $110/person, an optional wine pairing for $65/person, as well as a full wine and beer list.
As always everything was outstanding but the highlights of the meal were the braised duck leg lacquered in its own juice followed by Emma’s cookies!
Our second visit to Stages, two years apart and an amazing experience once again.
This is not your typical restaurant experience. It’s as if you’re invited to the home of a friend and you’re sitting around a table in his kitchen while he prepares something you’ve never heard of let alone tried before. Oh, and your friend happens to be a master chef and worked in two of the top fine dining restaurants in NYC (Per Se and Aureole).
There is no menu. It’s whatever Chef Evan happened to dream up along with whatever was available from his forages and his suppliers that day as well as what is in season. Each flight is memorable, impossible to describe and complex on a multitude of layers.
Our only wish is that Stages was closer to home!
The food preparation and presentation was unique...and the flavors were scrumptious! Evan is a true genius and Shara is the perfect hostess/assistant!

The Musée du Jeu de Paume near the Louvre in Paris used to house the world’s greatest collection of impressionist paintings. The colors and vivid images were so intense as to melt the usual boundaries of vision and activate a cascade of sensory experiences, leaving the brain wondering of the taste of love and hope and spirit. I remembered this feeling as we were invited into the kitchen studio, and then drawn in to the works of this extraordinary culinary artist. One’s eyes and nose and mouth are the ephemeral canvas for this artist’s unique creations. Let me write of one example, of many, to illustrate what I mean, “salt.” We are so used to salt in almost all savory dishes that it has become ordinary, expected, and only a component to accent. However, there was a dish at Stages, in which salt, became SALT! to me, a hero unto itself, in juxtaposition to sweet and sour and savory, and it was like, wow, I never fully appreciated SALT, because it had never been painted so uniquely, with such an artistic and sensitive portrait that it could become the crystal jewel of its own true heart. Of course we will return, and we recommend this food experience for those who appreciate culinary art.
A unique dining experience where the eight seats are right in the kitchen so you can watch the chef prepare all the food. There were a dozen or more small courses, most of which were out this world. All four of us agreed there were some flavors we had never tasted. Two of us did the wine paring, which was great, too. Expensive, but worth every penny.
Everything was amazing from the presentation to the food. My only suggestion would be to have a pre-dinner cocktail hour so that the guests can get talk to each other before the meal. It's such an intimate space and it felt a little like we were dining separately from the other couples. We've been to many of these types of dinners before and have had a much more livelier conversation with all the guests after having 20 mins or so before the meal starts to have a drink and chit chat a little
Evan’s creations were literal works of art that tasted equally as delicious as they were beautiful. The atmosphere was relaxed and comfortable and we loved watching the action happen all around us in the kitchen! We will definitely be going back to Stages again!!

Stages and chef Evan not only provide amazing food, and a great atmosphere but a unique and entertaining show where you watch a master chef prepare course after course inches from your seat. His dishes are creative and delicious.

Only gave food 4 stars because I don't have adventurous enough of a palate for this kind of dining experience and not all of the dishes were to my liking. But I suppose the point was to experiment and stretch the boundaries of anything I'd tried before. Regardless, though I didn't like all of the tastes and sensations the quality was top notch and beautifully crafted, the service was great and the atmosphere was very warm and inviting. Would recommend to any "foodie" out there looking to explore (and not afraid of hurting their wallet)

Over the years, we’ve been fortunate enough to enjoy several of the “World’s Top” restaurants. But even in those dining moments that we will never forget, the desire / impulse to book another (actually more than one) reservation at the same restaurant (especially even before the meal had ended) has never struck us... until we experienced Stages and shared an evening with Chef Evan and Shara. It may be an hour away from home and the opposite direction from “the city”, but Stages gets our vote for one of New England’s top... no, the “World’s Top” restaurants. What Chef Evan puts together is an intimate, relaxed, unhurried, and amazing dining experience that takes your palate to new levels. It isn’t just the flavors (which are amazing) but the incorporation of smell, texture, temperature and (if you choose) great wine pairings that make for a truly complete dining experience. If you are considering a night at one of “Boston’s Best” (see the Magazine’s 2018 list - we’ve enjoyed... truly enjoyed... the majority of them), we recommend you skip them and drive north. “The Best” is in Dover, NH. Totally a unique and wonderful dining experience. A bit on the pricey side as we added the wine pairing but definitely worth it. The intimate setting, attention to detail, and amazing flavors make this place a must try.
This is my second time at Stages and it was just as memorable. The food is outstanding, and it is such a great experience watching Evan prepare the food, learning about how the dishes are created, and the provenance of the ingredients. He is a most entertaining host. I strongly recommend this "experience".

It does not get any better than this, food, service and wine along with having a first hand peek at how a master works the kitchen
Intimate dinner setting in the kitchen of one of the area's finest chef's. In our case, dinner was $100/person, with a $65/person add for wine pairings. Portions are on the smaller side, although our menu was 11 courses, and we did not leave hungry. Favorites were the duck dish and the "carrot", which was a carrot, egg yolk, basil and 18 month cured veal prosciutto. Amazing! If your lucky, "Emma's Cookies" will be one of your desert courses.
This was the most amazing dining experience I’ve ever had. Absolutely an incredible treat. Get there on time at 6:30 and prepare to get your socks knocked off!

Dinner at Stages was a real culinary experience!! We enjoyed every course; there were a few items that we might not have been so adventuresome to try, but very happy we did. Chef Evan explained how and why he did some things, and his execution was beautiful to watch! There are only 6 seats so the dining experience was very interactive and the chef spoke to all of us, answered questions, and the evening was a real delight and experience. We are very happy we visited and on our next visit to Portsmouth, we'll plan to make another great night of it!!
The dessert that his daughter made was outstanding!! The woman who helped was attentive with wine and interesting conversation!!

Stages One Washington is a unique dining experience with the highest level of excellence when it comes to food selection, preparation, and presentation. Sitting at the chefs table gives you a chance to learn about Chef Hennessey’s foraging, cooking techniques (there isn’t one traditional oven in the whole restaurant), and his passion for paring unique flavors. I’ve had the pleasure of eating at Stages 3 times and it has never disappointed. I look forward to my next visit!
One of the best din8ng experienc3s I’ve ever had. I’ve been all around the world and enjoyed many wonderful and unique meals. Stages was not only an awesome culinary experience, the conversation and chef engagement added another level of enjoyment. Don’t consider this dinner, consider it dining and entertainment as you watch an award winning chef create your food right before your eyes.

The owner/chef Evan Hennessy recently won an episode of “Chopped” on the food network. I can assure you he is as gracious and genuine in person as he was on Chopped.
What an amazing experience my hubby and I had having dinner here. It was THE most flavorful meal we've even had in our entire lives and we've lived over 50 years including time in San Francisco which is THE ultimate foodie town. We had a great time and now look forward to sharing this unique experience with our daughter and my father-in-law at some point in the near future. Everyone should have this incredible taste experience at least once in their lives.
Stunning meal with 6 strangers at the chefs table; front and center in the kitchen, with the Chef finalizing and plating each and every course an arms length away. We also took advantage of the wine pairings offered. Amazing meal, great conversation, and you get to interact with and speak with the Chef the entire time. Again, a stunner. -t
Everything was just perfect. Food was unbelievable, every bite such a pleasant surprise. Some exciting and wonderful, some quiet and subtle. Excellent construction of courses, each building on the last. Not only could we plainly view our meals being prepared, when we asked, every detail was disclosed with such excitement and passion. Really loved the use of "local". We felt such a welcome, very intimate, like we were at close friends home kitchen. Also, the wine paring could not have been better. Just perfect!
I have followed Chef Evan Hennessey on social media for some time and finally made the trip to his restaurant. The experience was even better than expected. His dedication to New England truly shines through his creative expression of ingredients. While some of the flavors were unexpected, every dish was delicious. The atmosphere is second to none as well. It’s an intimate experience that anyone considering dining here shouldn’t pass up.
Stages is the most interesting restaurant in New Hampshire. It's hidden away on the third floor of an old mill in Dover. Diners sit in the kitchen. There are only eight seats so you get the experience of having a private chef. The menu varies from day to day depending on what's available from local farmers, fisherman and foragers. This is a restaurant for foodies, its highly innovative, you never know what will be on the menu and chances are it won't be familiar to you, but it will be excellent.
We were at Stages again and as usual it was spectacular. The format has changed slightly, now it's a 12 course tasting menu.
We go to Stages several times a year. It's our favorite restaurant, in our opinion it's the best restaurant in New England.
Just a note, Evan won Chopped last year and he's won his round on Chopped champions this year. We are waiting for the finals to see if he wins it all.
